CHICKEN BREAST WITH HORSERADISH CREAM

When you feel like some home-style comfort, there's nothing better than the creamy warmth of a rich sauce. This dish is great served with boiled, pan-fried potatoes and a simple green salad.

4 x 180g chicken breasts, skin on
sea salt
extra virgin olive oil
horseradish cream sauce
100ml dry vermouth
sea salt and freshly ground pepper
200ml pure whipping cream
3 tbsp unsalted butter, cold and chopped
2 tbsp parsley, chopped
5 tbsp fresh horseradish, grated
1 lemon

Steps:

  • Remove the chicken from the fridge about 1 hour before cooking and season liberally with sea salt. Meanwhile, warm the oven to around 70C. Place a heavy-based frying pan large enough to fit 4 chicken breasts over a medium-high heat until hot. Brush the chicken with extra virgin olive oil and put in the pan, skin side down. Cook for 5 minutes until the skin is crisp, then turn over and cook for a further 4 minutes. Put on a plate and rest in the warm oven. To make the sauce, pour the vermouth in the same pan and scrape well. Add a good pinch of sea salt and the cream and cook for 2 minutes at a rapid boil. Turn the heat down to medium, slowly add the butter and whisk to incorporate. Remove frying pan from heat, add the parsley and horseradish, then season with freshly ground pepper and a squeeze of fresh lemon juice. Place one chicken breast on each plate and pour a generous amount of sauce over each. Serve immediately. HOT TIPS You can also make the sauce with roast chicken - just deglaze the roasting pan with the vermouth, then follow the rest of the recipe. I like to serve boiled potatoes that have been pan fried with this dish, along with a simple green salad or boiled beans. SOMETHING TO DRINK Marsanne Marsanne is a textural white wine, predominately grown in the south of France. This 2012 Paul Mas ($8) has flavours of white peach and stone fruit, with hints of honeysuckle that will provide balance and sweetness to the peppery horseradish. A very Quick easy recipe to throw together and it tastes great. I usually serve the chicken breast over spinach, but as I have only just got back into town and all the shops were closed for Easter Monday, I had to use what I had on hand. It worked out well as I had some carrots and broccoli I wanted to use up, so I served them as the vegetable and served the chicken over rice. The cooking time is a little longer if you choose to serve over rice.

1 -2 tablespoon olive oil
4 chicken breasts
2 garlic cloves
3 green onions, sliced thinly
2 tablespoons dry white wine
160 ml cream
2 tablespoons prepared horseradish
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1 tablespoon fresh dill, finley chopped or 1 teaspoon dried dill

Steps:

  • Heat oil in a pan, add chicken breasts brown on both sides and cook until almost cooked through, leave over low heat to finish cooking while you make the sauce, turn the breasts occasionally.
  • Heat a small amount of oil in a saucepan. Add onion and garlic cook until onion is soft and garlic has browned slightly (do not burn).
  • De glaze pan with wine, add cream bring to the boil, turn heat down and simmer for a couple of minutes, add horseradish, juice, mustard and dill, stir over heat until well combined and heated through.
  • Arrange chicken on plate and pour sauce over.
  • It is lovely served over spinach as I mentioned earlier, or serve with your favourite vegetable and rice or potato.

4 boneless skinless chicken breast halves
2 tablespoons butter
2 tablespoons flour
1 cup half-and-half
3 tablespoons horseradish
2 tablespoons sour cream
1 tablespoon sugar
1 teaspoon Dijon mustard
1 teaspoon white wine vinegar
2 -3 tablespoons chopped fresh parsley

Steps:

  • Lightly brown chicken breast in a little olive oil and set aside.
  • In medium saucepan melt butter, add flour and stir 1 minute.
  • stir in 1/2& 1/2, horseradish, sour cream, sugar, dijon mustard and vinegar and 1/2 the parsley.
  • Place chicken in sprayed baking dish and top with half the horseradish sauce.
  • Bake in pre-heated 350 degree oven for 40 minutes.
  • Re-heat the remaining sauce with parsley added and serve with chicken.

1 1/2 teaspoons Dijon mustard
1/4 cup mayonnaise
1 whole boneless chicken breast with skin (about 1 pound), halved
1 tablespoon olive oil
2 tablespoons chopped scallion
1/2 teaspoon minced garlic
1/2 cup fine fresh bread crumbs
2 tablespoons drained bottled horseradish
1/2 teaspoon chopped fresh tarragon or a pinch dried, crumbled

Steps:

  • Preheat oven to 425°F.
  • In a small bowl whisk together mustard and mayonnaise until combined well.
  • Pat chicken dry and season with salt and pepper. Heat oil in a 10-inch non-stick skillet over moderately high heat until hot but not smoking and brown chicken, about 5 minutes on each side. Transfer chicken to a shallow baking dish and pour off all but about 2 teaspoons oil from skillet.
  • Add scallion to skillet and cook over moderate heat, stirring, until softened. Stir in garlic and cook 30 seconds.
  • Remove skillet from heat and stir in bread crumbs, horseradish, tarragon, and salt and pepper to taste. Spread mayonnaise mixture on skin side of each chicken breast and top evenly with bread crumb mixture. Bake chicken in middle of oven 10 minutes, or until cooked through, and let stand 5 minutes.

CHICKEN AND POTATO GRATIN WITH BROWN BUTTER CREAM



Chicken and Potato Gratin With Brown Butter Cream image

This gratin is decidedly autumnal, inspired by a recipe from one of my favorite food writers, Richard Olney. Olney's chicken gratin calls for making a savory custard, but here you'll combine brown butter and heavy cream with aromatics for a flavorful and easy sauce instead. It's still a luxurious dish. The breadcrumbs for the topping get toasted separately, so they stay crisp and the chicken (ideally seasoned a day in advance so the salt has time to work its way into the meat) and vegetables can get nicely browned and crisp too. I love that this gratin can reinvent itself based on what's available at the market (or in my fridge). In the spring, you might make it with asparagus and young onions; in summer, with tomato wedges, swapping in olive oil for the cream. I recommend serving this fall version with lemon wedges for squeezing over to cut the richness of the dish. A brightly dressed arugula salad would also do the trick.

3 lb. skin-on, bone-in chicken thighs and drumsticks
7½ tsp. kosher salt, divided
1 lb. small potatoes (such as fingerling or baby Yukon Gold), halved lengthwise
8 oz. small or medium shallots, halved through root ends
5 Tbsp. unsalted butter, divided
¾ cup heavy cream
2 garlic cloves, finely grated
½ tsp. freshly ground black pepper
¼ tsp. freshly grated or ground nutmeg
8 sprigs thyme
8 sage leaves
3½ oz. country-style bread, preferably day-old, torn into large pieces
1 lemon, cut into wedges (optional)

Steps:

  • Season chicken all over with 4 tsp. salt. Place in an airtight container and cover. Chill at least 1 hour and up to 1 day.
  • Place a rack in middle of oven; preheat to 425°F. Toss potatoes, shallots, and 2 tsp. salt in a large bowl.
  • Melt 4 Tbsp. butter in a small saucepan over medium heat and cook, stirring often, until butter foams, then browns, 5-8 minutes. Immediately remove from heat (it will continue to darken) and stir in cream, garlic, pepper, nutmeg, and remaining 1½ tsp. salt. Set saucepan over medium-low heat and cook, stirring, until salt is dissolved and mixture is warm to the touch. Stir in thyme and sage; remove from heat.
  • Heat remaining 1 Tbsp. butter in a large stainless-steel skillet over medium-high until melted and bubbling. Working in 2 batches, cook chicken, skin side down, until golden underneath, about 5 minutes. Transfer chicken to a 13x9" or 3-qt. baking dish and arrange skin side up. Set skillet with pan drippings aside. Nestle potatoes and shallots around chicken (don't place on top). Pour brown butter cream over chicken and vegetables, making sure herbs and spices are evenly dispersed and tucking herbs into vegetables so they don't get too crispy when they bake.
  • Bake gratin until cream is mostly reduced and chicken and vegetables are dark golden brown, about 40 minutes. Let gratin cool 5-10 minutes.
  • Meanwhile, pulse bread in a food processor until pieces are about oat-size (you should have about 1¼ cups). Toss breadcrumbs in pan drippings in reserved skillet to coat. Cook over medium heat, scraping up browned bits with a spatula, until deep golden brown, 5-7 minutes. Let cool.
  • To serve, top gratin with breadcrumbs. Serve lemon wedges alongside for squeezing over if desired.

1 teaspoon lemon pepper
1 teaspoon salt

½ cup whipping cream

  • Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder.

1/2 cup chopped onion
1 clove garlic, minced
1 cup heavy cream
1 cup chicken broth
2 teaspoons salt
1 teaspoon white pepper
1 tablespoon Worcestershire sauce

1/2 cup water
parsley (to garnish)

Steps:

  • Brown chicken breast.
  • Place breasts in oven dish.
  • Mix together the onion, garlic, cream, broth, salt, white pepper and worcestershire and mix well.
  • Pour over the chicken and bake 2 hours at 300 degrees.
  • After baking, remove breasts; strain juices into saucepan.
  • Add 2 tablespoons flour and 1/2 cup water.
  • Mix with whisk until thickened.
  • Add milk if too thick.
