"Bistro Cakes" makes these sound upscale, but they are a great way to use up leftover chicken. Vary the herbs or veges to suit what you have or what you like. I like to add a bit of chopped red bell pepper when I have it. I show using fresh herbs - makes these a bit special. But if you don't have them, use about 1/3 the amount dried. Amount of egg will vary depending on the dryness of your bread crumbs.

3 tablespoons butter
1 cup onion, diced
1/2 cup celery, diced
2 cups cooked chicken, chopped
1 1/2 cups fresh breadcrumbs
1/4 cup fresh parsley, chopped
1 tablespoon fresh sage, chopped
1 tablespoon fresh thyme, chopped
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 -3 eggs, beaten
4 tablespoons olive oil, diviided

Steps:

  • Melt the butter is a medium saute pan. Saute onion and celery until tender. Transfer to a large bowl and cool.
  • Add chicken, bread crumbs and seasonings; stir in the eggs. Form cakes, uising a packed 1/3 cup measuring cup, lightly pressing to make a 3" cake. Transfer to cookie sheet or plate. Chill 15 minutes. (Don't skip the chilling - it helps the cake hold together).
  • Heat 2 T. oil in a nonstick pan over medium-high heat. Saute 1/2 the cakes. Add remaining oil and saute remaining cakes.

2 teaspoons vegetable oil
3 cups sliced fresh mushrooms
1 medium onion, chopped
1 (15 ounce) can stewed tomatoes, undrained
1/4 cup kraft zesty Italian dressing
3 tablespoons tomato paste
4 small boneless skinless chicken breast halves
1 cup kraft low-moisture part-skim mozzarella cheese
2 slices cooked bacon, crumbled

Steps:

  • Heat oil in large skillet on med-high heat.
  • Add mushrooms and onions cook 5 minutes stirring occasionally. Stir in tomatoes with their liquid, add dressing and tomato paste.
  • Add chicken, cover. Reduce heat to med-low. Simmer 12 minutes or until chicken is cooked through.
  • Sprinkle with cheese and bacon, simmer uncovered 5 minutes or until cheese is melted. Serve over hot cooked rice if desired,.

Fresh herbs, butter, and Dijon mustard provide big flavor in this simple roast chicken. It first cooks breast side down, then is turned over to finish cooking. This method ensures moist breast meat. 2 tablespoons minced fresh tarragon
1 tablespoon minced fresh thyme
4 teaspoons butter, melted
1 teaspoon salt
1 teaspoon Dijon mustard
1/2 teaspoon fresh ground black pepper
1 (4 1/2 lb) roasting chickens
cooking spray

Steps:

  • Preheat oven to 375°.
  • Combine first 6 ingredients in a small bowl.
  • Remove and discard giblets and neck from chicken. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently pushing between skin and meat. Rub herb mixture under loosened skin and over breast and drumsticks. Tie legs together with kitchen twine. Lift wing tips up and over back; tuck under chicken. Place the chicken, breast side down, on the rack of a broiler pan or shallow roasting pan coated with cooking spray; place rack in pan.
  • Bake chicken at 375° for 40 minutes. Carefully turn chicken over (breast side up). Bake an additional 40 minutes or until a thermometer inserted in the meaty part of thigh registers 165°. Place chicken on a cutting board; let stand 10 minutes before carving.

This chicken can be done in the oven or it is excellent in the slow cooker also. The sauce is so delicious and I suggest serving it over pasta, noodles, baked potatoes or with some good French bread.

1/2 tablespoon butter
1 tablespoon olive oil
6 boneless skinless chicken breast halves
salt and pepper
1 (14 1/2 ounce) can diced tomatoes, with their juice
1 -1 1/2 teaspoon dried thyme
1 can campbell condensed French onion soup

Steps:

  • If cooking on stove top: Preheat oven to 375 degrees.
  • In an ovenproof skillet, melt butter and olive oil over medium-high heat.
  • Sprinkle the chicken breasts with salt and pepper (to taste).
  • Panfry the chicken until both sides are golden but the chicken is not cooked through.
  • Remove the chicken from the skillet, add the tomatoes and thyme to skillet and cook until the sauce has reduced a bit, 4 to 5 minutes.
  • Add the soup and cook another 4 minutes, seasoning with more salt and pepper if desired.
  • Return the chicken to the skillet, and place in oven and cook for about 20 minutes or until chicken is cooked through.
  • If using slow cooker: Saute' the chicken breasts as above, place them in the slow cooker, add the sauce ingredients and cook on high for 3 hours or so.

This is a delicious and quick recipe using pre-cooked chicken. Great for a weeknight dinner. Use your own pre-cooked chicken, or buy a deli-roasted chicken...both yield about 3 cups of cooked chicken. Featured in Southern Living's 40 Years of Our Best Recipes cookbook as a "Quick & Easy" recipe. From some of the reviews, I think it isn't as quick and easy as they would like :).

2 tablespoons butter or 2 tablespoons margarine
1/2 medium red bell pepper, diced
4 green onions, thinly sliced
1 garlic clove, pressed
3 cups chicken, precooked and chopped
1 cup soft breadcrumbs
1 large egg, lightly beaten
2 tablespoons mayonnaise
3 tablespoons creole mustard, divided into 1 tbsp and 2 tbsp portions
2 teaspoons creole seasoning, I prefer Tony Cachere's
1/4 cup vegetable oil
1 cup mayonnaise
3 green onions
2 garlic cloves, pressed
1 tablespoon parsley, fresh, chopped
1/4 teaspoon ground red pepper
green onion, sliced

Steps:

  • Melt butter in a large skillet over medium heat. Add bell pepper, 4 sliced green onions, and 1 pressed garlic clove. Saute 3 to 4 minutes until tender.
  • Stir together bell pepper mixture, chopped chicken, 1 cup soft breadcrumbs, 1 large beaten egg, 2 tbsp mayo, 1 tbsp creole mustard, and 1 tsp creole seasoning. Shape chicken mixture into 8 (3 1/2 inch) patties.
  • Fry 4 patties in 2 tbsp hot oil in a large skillet over medium heat 3 minutes on each side or until golden brown. Drain on paper towels. Repeat process once until patties are done.
  • Remoulade Sauce:.
  • Stir together 1 cup mayo, 3 sliced green onions, 2 tbsp creole mustard, 2 pressed garlic cloves, 1 tbsp chopped fresh parsley, and 1/4 tsp ground red pepper. Cover and chill until ready to serve.
  • Serve chicken patties topped with remoulade sauce. Garnish with sliced green onions. Enjoy!
