Minted Cucumber Raita image

Yield makes about 2 cups

Number Of Ingredients 4

1 cucumber, well chilled
1 cup plain nonfat yogurt
2 tablespoons minced fresh mint
1 jalapeño chili, seeded, minced

Steps:

  • Peel cucumber. Cut in half lengthwise. Using spoon, remove seeds and pulp. Thinly slice cucumber. Combine cucumber with remaining ingredients. Season to taste with salt and pepper; serve.
