¼ cup KRAFT Sun-Dried Tomato Vinaigrette Dressing
4 (4 ounce) boneless, skinless chicken breasts
1 cup fat-free, reduced-sodium chicken broth
½ teaspoon garlic powder
½ teaspoon black pepper
4 ounces PHILADELPHIA Neufchatel cheese, cubed
2 cups grape tomatoes
½ cup KRAFT Shredded Parmesan Cheese
8 fresh basil leaves, cut into strips

Steps:

  • Cook pasta as directed on package. Meanwhile, heat 2 Tbsp. dressing in large skillet on medium heat. Add chicken; cover. Cook 5 to 6 min. on each side or until done (165 degrees F). Remove chicken from skillet; cover to keep warm. Carefully wipe out skillet with paper towel.
  • Add remaining dressing, broth and seasonings to skillet; cook 3 to 4 min. or until heated through. Add Neufchatel; cook and stir 2 to 3 min. or until Neufchatel is melted. Stir in tomatoes; cook 3 min.
  • Drain pasta. Add to ingredients in skillet with Parmesan and basil; mix well. Serve topped with chicken.

2 lbs boneless skinless chicken breasts
4 tablespoons olive oil
1 tablespoon white vinegar
splash dry white wine
1/4 cup chopped basil (can use thyme)
1/4 cup chives
5 tablespoons minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1.5 (16 ounce) jars alfredo sauce
1 (12 ounce) box gluten free stir fry noodles (but you can use any kind)

Steps:

  • Cut fat off of chicken. Cut chicken into bite sized pieces and set aside.
  • In a small bowl, combine olive oil, wine vinegar, basil, chives, garlic, salt, & pepper.
  • Sautee chicken in large skillet until no longer pink and nicely seared on both sides. This will take approximately 30 minutes on med-high heat with an electric stove.
  • While chicken is sauteeing, cook pasta according to package instructions. Spoon mixture from step 2 over chicken about 2 minutes before it is done cooking.
  • When pasta is done, drain in colander and place in a large (very large) bowl. Add chicken and alfredo sauce to the noodles. Use a scooper to incorporate well.
  • Serve and enjoy!

1/2 teaspoon salt (for cooking pasta), if desired
2 cups uncooked rotini or rotelle (spiral) pasta (6 oz)
10 asparagus stalks (about 8 oz)
1 clove garlic or 1/8 teaspoon garlic powder
5 oz cooked chicken or turkey
1/2 cup fresh basil leaves
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup olive or vegetable oil
1 tablespoon grated lemon peel

Steps:

  • Fill a 4-quart Dutch oven about half full of water. Add 1/2 teaspoon salt if desired. Cover with lid; heat over high heat until water is boiling rapidly. Add the pasta. Heat to boiling again. Boil uncovered 9 to 11 minutes, stirring frequently, until tender but not mushy. While water is heating and pasta is cooking, continue with recipe.
  • Break off and discard the tough ends of the asparagus stalks where they snap easily; wash asparagus. Cut asparagus into 1-inch pieces to measure 2 cups. Add asparagus to the pasta during the last 2 to 3 minutes of cooking.
  • Peel and finely chop the garlic. Cut the chicken into 1/2-inch cubes to measure about 2 cups. Tear the basil leaves lengthwise into narrow strips.
  • Place strainer or colander in the sink. Pour pasta and asparagus in the strainer to drain. Rinse with cold water; drain.
  • In a large glass or plastic bowl, toss pasta, asparagus and chicken. Stir in garlic, basil, cheese, oil and lemon peel. Cover with plastic wrap; refrigerate 1 to 2 hours or until chilled.

1 lb boneless skinless chicken breast
sea salt
pepper
3 teaspoons extra virgin olive oil
1 tablespoon butter
4 garlic cloves, minced
1 small onion, thinly sliced
1/2 cup sun-dried tomato, chopped
1 cup chicken broth or 1 cup white wine
1 cup heavy cream or 1 cup half-and-half
3/4 cup parmesan cheese, shredded
2 tablespoons canola oil
6 leaves fresh basil, finely chopped

Steps:

  • Preheat oven to 350. Boil pasta according to package directions. Drain and place in baking dish.
  • Rinse and pat chicken dry. Season both sides with salt and pepper.
  • Heat large saute pan over medium heat. Add 1 teaspoon olive oil. Place chicken in pan, and cook 2 to 3 minutes per side, or until the chicken is browned. Remove from pan and place on a cutting board.
  • In the same pan, melt butter, and add the rest of the olive oil. Add the garlic and onions. Cook for about 2 minutes, until the onions are soft.
  • Stir in the tomatoes and 3/4 cup of the chicken broth or wine. Bring to a boil. Turn down and let simmer for about 10 minutes.
  • Meanwhile, slice the chicken into 1/4-inch thick slices and place over pasta (the chicken will finish cooking in the oven).
  • Stir in cream and 1/2 cup cheese into the tomatoes. Simmer over medium heat until the sauce thickens.
  • Add the rest of the broth or wine if the sauce gets too thick. Stir in basil. Add salt and pepper to tast.
  • Pour sauce over chicken and pasta. Sprinkle with remaining cheese.
  • Bake uncovered for about 20 minutes, or until bubbling and golden brown.

1 tablespoon Dijon mustard
1/4 cup balsamic vinegar
1/4 cup rice vinegar
1/2 cup Basil Oil, recipe follows
1/4 cup extra virgin olive oil
1 cooked chicken, picked off of the bone, skin and all, shredded
4 cups blanched fusilli pasta
2 large ripe tomatoes, medium dice
1/2 bunch Thai basil, picked, reserve a few tops, for garnish
3 cloves garlic
1 tablespoon minced ginger
2 limes, juiced
1/2 tablespoon salt
1/2 tablespoon sugar
1 cup canola oil
2 cups Thai basil leaves

Steps:

  • In a blender, add the Dijon and vinegars and blend. Drizzle in the oils to emulsify. In a large salad bowl, toss the chicken, pasta, tomatoes and basil. Season with salt and black pepper. Check for flavor.

2 cups rotini pasta (I used Muellers whole grain)
3/4 lb chicken tenderloins, cut into bite-sized chunks (I used 6 frozen tenderloins, which was about 12 oz)
1 small yellow onion, chopped
3 garlic cloves, chopped
1 cup fresh basil, torn & packed
1 (14 1/2 ounce) can diced tomatoes (garlic & onion)
2 tablespoons sun-dried tomatoes (dry in package, not packed in oil. If you do use the kind in oil, I suggest rinsing them first)

Steps:

  • Heat skillet on medium. Spray with nonstick spray.
  • Cook pasta according to directions. (I put the water on to boil while I'm cooking the garlic/onions/chicken, so the pasta is finished about the same time as the rest.).
  • Toss in onion and garlic. Stir 1 minute.
  • Add chicken. Stir and cook 3-5 minutes, until chicken is mostly cooked through. At this point, I sprinkled with some ground pepper.
  • Add can of diced tomatoes and half of basil.
  • Simmer 3-5 minutes, until basil is wilted.
  • Add sun-dried tomatoes and rest of basil.
  • Simmer another 2 minutes or so, to let the sun-dried tomatoes soften.
  • Spoon on top of pasta. Sprinkle with parmesan cheese & enjoy!

This comes from a Pam Anderson recipe. I love creamy pastas like alfredos, etc... but don't like all the fat. This recipe is a great solution. By using 2 percent evaporated milk, instead of heavy cream, the fat content is cut considerably. The flavor and consistency is still wonderful, in my opinion. I love this recipe because: it's lower in fat; you can use left-over chicken (or cooked rotisserie chicken); cooking the broccoli in the same pot as the pasta saves an extra pot to wash, it's an easy one-dish meal! There are many variations you could try with this recipe, too. Notes: 1.this recipe calls for diced tomatoes - if you'd prefer a more traditional alfredo-type sauce, I think you could probably omit the tomatoes and it would be just fine. 2. Also, if you like your pasta spicier you could add more red pepper flakes than the amount called for. 3. I find it very helpful to have all my ingredients prepped/chopped and ready before I start cooking - especially for this recipe. 4. Make sure you reserve about a cup of the pasta cooking water - it helps to thin out the finished product, if necessary. Have fun and enjoy!

1 lb dry pasta (I prefer fettucine or spaghetti noodles)
1 tablespoon salt
3 cups broccoli florets
1 cup chicken broth
1 cup 2% evaporated milk
2 large garlic cloves, minced
1 1/2 tablespoons butter (I use unsalted)
3 tablespoons all-purpose flour
1/4 cup parmesan cheese, grated, plus extra for sprinkling
2 cups shredded cooked chicken breasts (I usually add even more)
1/2 cup drained petite diced tomato
1/4 cup chopped fresh basil
1/2 teaspoon hot red pepper flakes (or to taste)

Steps:

  • Bring about 2 quarts of water to a boil - add a tablespoon of salt to the boiling water.
  • Add pasta and use the cooking time given on the package to cook your pasta al dente. Stir frequently at first to prevent pasta from sticking.
  • Add the broccoli to the boiling pasta water during the last 5 minutes of cooking.
  • Meanwhile, microwave broth, milk and garlic in a microwave-safe bowl until steamy hot (approx. 3 to 4 minutes). Then let it stand for a few minutes.
  • Put butter in a saucepan over low heat.
  • After butter melts, whisk in flour, then hot milk mixture. Whisk constantly over medium-low to medium heat until sauce thickens. This should take about 1 to 2 minutes. You judge as to when the sauce thickens up.
  • Stir in parmesan, cooked chicken, tomatoes, basil and red pepper flakes.
  • Salt and pepper to taste and let simmer for about 5 minutes to blend flavors.
  • Drain pasta and broccoli, *reserving 1 cup pasta cooking liquid* and return to pasta pot.
  • Pour cream sauce over pasta, adding enough reserved cooking liquid to moisten.
  • Toss and serve immediately with a light sprinkling of parmesan.

  • Cook pasta, reserving 1 cup of hot pasta water when you drain. Set pasta aside in a colander. In the same pot, melt butter over medium heat. Squeeze in the juice of 3 to 4 lemons. Whisk together. Pour in cream and half-and-heat. Whisk until hot. Dump in cheese and whisk until melted. Add salt and pepper. Check consistency, adding some of the hot pasta water to loosen the sauce if needed. Pour pasta and sauce into a large serving bowl. Sprinkle remaining basil all over the top, then add sliced chicken breasts. Serve immediately!

1 onion, chopped
2 cloves garlic, minced
1/2 cup chopped red pepper
1-1/2 lb. boneless skinless chicken breasts, cut into strips
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
1 chicken bouillon cube
zest and juice from 1 large lemon, divided
1/4 cup chopped fresh basil
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium-high heat. Add onions, garlic and pepper; cook 1 min. Add half the chicken; cook 2 min. or until lightly browned, stirring frequently. Remove from skillet; cover to keep warm. Repeat with remaining chicken; return all chicken to skillet.
  • Drain pasta, reserving 1/2 cup of the cooking water. Mix reserved water with Neufchatel and bouillon until blended. Add to chicken with lemon zest; mix well. Cover; cook on low heat 5 min. or until chicken is done. Stir in pasta, lemon juice and basil; cook; uncovered, 1 min. or until heated through, stirring frequently. 1 c basil leaves,or more depending on what you like
2 clove garlic
1/4 c virgin olive oil
1/4 c parmesan cheese
2-3 slices of bread
1/2 c walnuts
1/2-3/4 c sour cream
1 pinch garlic salt
1 pinch black pepper

Steps:

  • 1. Put basil.walnuts,and parmesan cheese in food processor. Blend well. add remaining ingredients starting with olive oil,and sour cream. You can adapt ingredients to get the flavor you are looking for.
  • 2. Chill
  • 3. Keep in fridge and stir in to warm pasta before serving. I do a serving at a time.
  • 4. Cut chicken breast up. I use chicken tenders. cook in olive oil add a clove of garlic minced when chicken is almost done. Don't want to burn garlic. add garlic salt and pepper to taste. I transfer my chicken to grill to give it that grilled flavor.
  • 5. steam broccoli.Serve brocooli and chicken on top of pasta with sauce
  • 6. note: you may use lite sour cream and reduced calorie bread in this recipe. Originally I came up with this to reduce the calories.The bread gives it a texture as if there is more cheese in it than there really is.

PERUVIAN CHICKEN & BASIL PASTA (SOPA SECA)



Peruvian Chicken & Basil Pasta (Sopa Seca) image

4 cups basil leaves, packed
4 cups chicken stock
1 1/2 pounds chicken cubed
1/2 teaspoon cumin
1/4 cup vegetable oil
2 teaspoons annatto seeds
1 medium red onion, chopped
2 tablespoons aji panca paste
1 cup diced tomato (about 1 large tomato or 3 plum tomatoes)
1 pound spaghetti, broken in half
1 cup parsley, chopped

Steps:

  • Add all of the basil leaves and 1 cup of chicken stock to a blender. Puree until smooth. Set aside.
  • In a medium bowl, combine chicken with ground cumin and salt and pepper to taste. Set aside.
  • In a large pot, heat vegetable oil over medium heat. Add annatto seeds and fry for about 6 minutes, stirring often. When the oil is dark orange and the seeds lose their red color, remove pot from the heat. Strain the oil to remove the seeds. Add the strained annatto oil back into the pot. Place the pot back on the burner over medium-high heat.
  • Add the chicken, browning on all sides, then transfer to a clean bowl and set aside.
  • Reduce heat to medium. Add onions and fry until softened. Make sure to scrape up the browned bits from the bottom of the pan. When the onions have softened, add the garlic and fry for one minute, stirring constantly. Add ají panca paste (if using) and stir to combine with the garlic and onions. Fry for one minute, stirring often. Add carrots and fry for one minute.
  • Add the tomatoes to the pot and cook for about 5 minutes, stirring often, or until the tomatoes cook down and the oil separates from the mixture.
  • Add basil puree and stir to combine. Wait for the mixture to come to a simmer. Add salt to taste. (You'll want this a little on the saltier side since you'll be adding pasta to this.)
  • Add the pasta to the pot so they're evenly spread out. Add the rest of the broth and raise the heat to high. Gently nudge the pasta with a wooden spoon around the edges of the pot. Be careful not to break the pasta. You just want to move the pasta around slightly in the sauce. Repeat this every 30 seconds or so until the pasta is pliable, which should take about 5 minutes. Gently stir to coat the pasta with the sauce. Add the chicken to the pot and stir to combine.
  • If the pot has not come to a simmer yet, bring to a simmer. Make sure the pasta is mostly submerged in the liquid.
  • After 5 minutes, uncover the pot and stir, making sure to scrape up any pasta that may have stuck to the bottom of the pot. Reduce the heat to medium-low and cover the pot again. After 5 minutes, uncover the pot and stir again.
  • Continue to cook uncovered over medium-low heat until the pasta is cooked through and has soaked up the liquid, about 5 to 10 minutes. You can opt to have a wetter sopa seca or a dryer sopa seca. It's a matter of personal preference, and one way is not considered more authentic than the other. When the sopa seca has reached the desired consistency, remove from the heat and stir in the parsley. Garnish with the optional avocado cubes.

1/2 lb boneless skinless chicken breast
nonstick cooking spray
1/8 teaspoon salt
1/8 teaspoon pepper
4 plum tomatoes, halved lengthwise and sliced
1 small zucchini or 1 small summer squash, halved lengthwise and sliced
1/4 cup sliced green onion
2/3 cup reduced-calorie Italian dressing or 2/3 cup clear fat-free Italian salad dressing
1/4 cup snipped fresh basil

Steps:

  • Cook macaroni according to package directions, except omit any oil and use 1/4 teaspoon salt.
  • Drain pasta.
  • Rinse with cold water.
  • Drain pasta again.
  • Meanwhile, cut chicken into 1” pieces.
  • Coat an unheated large skillet with nonstick cooking spray.
  • Preheat over medium-high heat.
  • Add the chicken and stir-fry for 3-4 minutes or until chicken is no longer pink.
  • Sprinkle with the salt and pepper.
  • Remove chicken from heat.
  • In a large mixing bowl, toss together cooked macaroni, chicken, tomatoes, zucchini or summer squash, and green onions.
  • Sprinkle with basil.
  • Toss to coat.
  • Cover and refrigerate at last 2 hours or up to 6 hours.
  • Toss salad before serving.
