A light but super-tasty pasta dish, with fresh asparagus cooked in broth with sauteed garlic and seasoned chicken.

1 (16 ounce) package dried penne pasta
5 tablespoons olive oil, divided
2 skinless, boneless chicken breast halves - cut into cubes
salt and pepper to taste
garlic powder to taste
½ cup low-sodium chicken broth
1 bunch slender asparagus spears, trimmed, cut on diagonal into 1-inch pieces
1 clove garlic, thinly sliced
¼ cup Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and set aside.
  • Warm 3 tablespoons olive oil in a large skillet over medium-high heat. Stir in chicken, and season with salt, pepper, and garlic powder. Cook until chicken is cooked through and browned, about 5 minutes. Remove chicken to paper towels.
  • Pour chicken broth into the skillet. Then stir in asparagus, garlic, and a pinch more garlic powder, salt, and pepper. Cover, and steam until the asparagus is just tender, about 5 to 10 minutes. Return chicken to the skillet, and warm through.
  • Stir chicken mixture into pasta, and mix well. Let sit about 5 minutes. Drizzle with 2 tablespoons olive oil, stir again, then sprinkle with Parmesan cheese.

1 pound chicken breast tenderloins
1 pinch garlic salt, or to taste
1 pinch seasoned salt, or to taste
1 pound uncooked penne pasta
2 tablespoons butter
¼ cup grated Parmesan cheese
2 tablespoons olive oil
1 pound fresh asparagus, trimmed and cut crosswise into thirds
1 pinch garlic salt, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cover a baking sheet with aluminum foil.
  • Spread the chicken breast tenderloins on the baking sheet and sprinkle with garlic salt and seasoned salt.
  • Bake chicken in the preheated oven until no longer pink in the center and the juices run clear, about 15 minutes. Set aside; when cool enough to handle, cut tenderloins into bite-size pieces.
  • Fill a large pot with lightly salted water, bring to a boil, and stir in penne. Cook pasta at a boil, stirring occasionally, until penne are cooked through but still slightly firm, about 11 minutes; drain.
  • Transfer penne back to cooking pot and stir in butter and Parmesan cheese until pasta is coated.
  • Heat olive oil in a skillet over medium heat; place asparagus into the hot oil and sprinkle with garlic salt. Cook and stir until asparagus are tender, about 7 minutes.
  • Transfer penne pasta into a large serving bowl and top with asparagus and chicken tenderloin pieces. Lightly mix asparagus and chicken into the pasta to serve.

1 (12 ounce) package uncooked penne pasta
2 tablespoons olive oil
2 cups cooked, shredded chicken
salt and black pepper to taste
1 pinch garlic salt, or to taste
2 tablespoons minced garlic
1 small onion, diced
1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
3 ounces chopped sun-dried tomatoes (not oil-packed)
⅔ cup reduced-sodium beef broth
1 (14 ounce) can artichoke hearts, drained and quartered
2 tablespoons butter
1 tablespoon grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the penne pasta uncovered in the boiling water, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain, set aside, and keep warm.
  • Heat the olive oil in a large skillet over medium-high heat; add the chicken to the skillet and season with salt, pepper, and garlic salt. Cook and stir for about 2 minutes; remove the chicken and set aside. Cook and the garlic and onion in the oil remaining in the skillet until the onion becomes translucent, about 3 minutes. Stir in the asparagus, sun-dried tomatoes, and beef broth; reduce heat to medium-low. Cook until the asparagus is bright green and starting to become tender, about 5 minutes. 1/2 cup balsamic vinegar
2 tablespoons balsamic vinegar
1/2 teaspoon brown sugar
1/2 teaspoon ground black pepper
1 lb asparagus
1 1/2 tablespoons olive oil
1 1/2 teaspoons salt
4 -5 sprigs rosemary
2 boneless skinless chicken breasts, cut into bite size pieces
1/2 cup butter
1/2 tablespoon butter
1 lb penne pasta
1/3 cup grated parmesan cheese (plus more for serving)

Steps:

  • Put vinegar into a small saucepan and simmer until reduced to 3 tablespoons.
  • Remove from heat and stir in brown sugar and 1/4 teaspoon pepper; set aside.
  • (Mixture will be thick like syrup).
  • Meanwhile, snap tough ends off the asparagus and discard.
  • Cut spears into 1-inch pieces.
  • Put asparagus on baking sheet with sprigs of rosemary and toss with olive oil,1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Roast in 400°F oven until tender, approximately 10 minutes.
  • Melt 1/2 tablespoon butter with 1/2 tablespoon olive oil in medium saute pan over medium-high heat.
  • Add chicken and saute until cooked through.
  • Cook pasta in a large pot of boiling water until just done.
  • Drain pasta and immediately toss with the butter, (cut butter into pieces first) vinegar-sugar mixture, asparagus, chicken, parmesan cheese and remaining 1 teaspoon of salt.
  • Serve with additional parmesan cheese.

3 c uncooked penne pasta
2 c asparagus, diagonally chopped into 1.5 inch pieces
2 Tbsp olive oil
12 oz boneless, skinless chicken breast
4 clove garlic, minced
2 tsp cornstarch
2 can(s) (15 oz.) diced tomatoes, italian style with basil and garlic
4 oz crumbled feta cheese
1/3 c fresh, grated parmesan cheese

Steps:

  • 1. Fill a large pot 3/4 c. Full with water and bring to a boil. Add the pasta and cook 12-15 minutes or until tender. Drain pasta thoroughly and set aside.
  • 2. Diagonally slice the asparagus in the same shape and size as the penne pasta. Steam asparagus until crisp-tender, about 4 minutes.
  • 3. Add olive oil to a hot pan. Add garlic. Saute over medium-high heat for 30 seconds. Add chicken. Sautée until chicken is browned but not completely cooked.
  • 4. Add cornstarch to tomatoes and pour into the pan with chicken and garlic. Simmer 10 minutes or so, while pasta finishes cooking.
  • 5. To serve, toss pasta and asparagus. Divide between 4 plates. Spoon chicken & sauce over the pasta and asparagus. Sprinkle each serving with a bit of feta and parmesan cheese. Serve immediately.

1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 lb. thin fresh asparagus spears, trimmed, cut into 1-inch lengths
1/2 cup chopped onions
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
2 tsp. dried Italian seasoning
1 cup cherry tomatoes, cut in half
1 Tbsp. KRAFT Shredded Parmesan Cheese

Steps:

  • Cook penne as directed on package, omitting salt.
  • Meanwhile, cook and stir chicken, asparagus and onions in large nonstick skillet on medium heat 7 to 8 min. or until chicken is done and asparagus is crisp-tender.

1/2 lb. thin fresh asparagus spears, trimmed, cut into 1-inch lengths
1/2 cup chopped onions
1 tub (10 oz.) PHILADELPHIA Reduced Fat Italian Cheese & Herb Cooking Creme
2 cups hot cooked whole wheat penne pasta
1 cup cherry tomatoes, halved
2 Tbsp. KRAFT Shredded Parmesan Cheese

Steps:

  • COOK and stir chicken, asparagus and onions in large nonstick skillet on medium heat 7 to 8 min. or until chicken is done and asparagus is crisp-tender.
  • ADD cooking creme and pasta; cook and stir 3 min.
  • STIR in tomatoes; top with Parmesan.
  • Prefer a Thinner Consistency?
  • Add broth or milk, 1 Tbsp. at a time up to 4 Tbsp., until desired thickness is achieved.

This is a recipe we created one night starting with a basic pasta dish. My wife and I both rated this a 4 star. Hope you enjoy.

4 slice thick slice bacon, cubed
1/2 lb fresh asparagus, cut 1" pieces
1/4 c olive oil, extra virgin
1 lb chicken breast cubed
1/2 c onion, julienned
2 clove garlic sliced thin
1/2 c heavy cream
1/4 c chicken stock
1/2 c dry white wine
3/4 c shredded parmesan cheese
1/2 c grated parmesan or manchango cheese
8 oz penne cooked

Steps:

  • 1. Render the bacon reserve fat and bacon bits. De glaze pan with white wine. Add onion and cook til starting to brown add garlic cook another minute, remove from pan.
  • 2. Add EVOO and stock. cook asparagus and braise until tender crisp.
  • 3. In small sauce pan combine cream and 3/4 cup cheese, heating until cheese melts. Add cooked pasta chicken and asparagus, mix together. In a 8X8 greased baking pan, add mixed ingredients, top with bacon bits and grated cheese. Bake in 350 deg. oven until cheese begins to brown. let rest 10 min. Serve with fresh salad and bread. Enjoy.

  • Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and set aside.
  • Warm 3 tablespoons olive oil in a large skillet over medium-high heat. Stir in chicken, and season with salt, pepper, and garlic powder. Cook until chicken is cooked through and browned, about 5 minutes. Remove chicken to paper towels.
  • Pour chicken broth into the skillet. Then stir in asparagus, garlic, and a pinch more garlic powder, salt, and pepper. Cover, and steam until the asparagus is just tender, about 5 to 10 minutes. Return chicken to the skillet, and warm through.
  • Stir chicken mixture into pasta, and mix well. Let sit about 5 minutes. Drizzle with 2 tablespoons olive oil, stir again, then sprinkle with Parmesan cheese.

Number Of Ingredients 18

1 (12oz) package penne pasta, uncooked
1 lb. boneless, skinless chicken thighs, cut into bite-size pieces
salt and pepper
1 tsp sweet paprika
1 tsp garlic powder
3 tbsp olive oil, divided
4 oz. cremini mushrooms, sliced
1 lb. asparagus, trimmed and cut into 2 inch pieces
1/2 large red bell pepper, diced
1/2 onion, diced
4 tbsp butter
1 tsp minced garlic
1/2 tsp crushed red pepper flakes
2 tbsp flour
1 cup milk
1 cup chicken broth
1 1/2 cups shredded parmesan
chopped parsley for garnish

Steps:

  • Cook the pasta according to package instructions.
  • Meanwhile season the diced chicken thighs with salt, pepper, paprika and garlic powder. Heat 1 tbsp olive oil in a large skillet or dutch oven over medium high heat. Cook chicken in skillet, until browned and cooked through, transfer chicken to a plate to keep warm.
  • To the same skillet add 1 tbsp olive oil and heat over medium heat. Add the veggies and cook, stirring occasionally, until crisp tender (about 3 to 5 minutes). Remove veggies from skillet to the plate with the chicken and keep warm.
  • Add the last tbsp of olive oil to the skillet along with 4 tbsp of butter, over medium heat. Use a spoon or whisk to scrap up any browned bits on the bottom of the skillet (that's extra flavor!). Add the garlic, red pepper flakes and flour, whisk until mixture is thickened and smooth. Slowly pour in the milk and chicken broth, whisking continuously until the liquid is added. Finally add in the parmesan cheese and whisk until smooth and creamy.
  • Add the chicken and veggies back to the pan as well as the cooked pasta. Stir to combine and coat evenly with sauce. Garnish with chopped parsley. Enjoy!
