4 cooked chicken breasts, shredded
2 Granny Smith apples, cut into small chunks
2 cups chopped walnuts, or to taste
½ red onion, chopped
3 stalks celery, chopped
3 tablespoons lemon juice
½ cup vanilla yogurt
5 tablespoons creamy salad dressing (such as Miracle Whip®)
5 tablespoons mayonnaise
25 seedless red grapes, halved

Steps:

  • Toss shredded chicken, apple chunks, walnuts, red onion, celery, and lemon juice together in a large bowl.
  • Whisk vanilla yogurt, salad dressing, and mayonnaise together in a separate bowl; pour over the chicken mixture and stir to coat. Gently fold the grapes into the salad.

1/2 cup reduced-fat mayonnaise
3 tablespoons fresh lemon juice
1/2 teaspoon coarse salt

Half of a leftover chicken from Easy Thyme-Roasted Chicken with Potatoes
2 peeled and thinly sliced Golden Delicious apples
3 to 4 thinly sliced celery stalks
1/2 cup coarsely chopped toasted walnuts

Steps:

  • In a large bowl, whisk together mayonnaise, lemon juice, salt and pepper.
  • Remove skin from half of a leftover thyme-roasted chicken.
  • Shred meat, and add to dressing. Add apples, celery stalks and walnuts. Serve over a bed of lettuce.

A pile of this chicken salad plopped on top of a bed of greens or tucked between two slices of good bread would make a most excellent lunch or light supper. It starts with a quick dressing made of mayonnaise, chopped chives, parsley and tarragon and the juice and zest of a lemon. Combine the dressing with chopped, cooked chicken (for ease, use supermarket rotisserie chicken or Thanksgiving turkey leftovers), red grapes, red onion, celery and walnuts. It's a delightful and deeply satisfying combination of flavors (sweet, salty, tangy) and textures (cold, crunchy, juicy) that's almost impossible to stop eating.

KHORESH-E FESENJOON (PERSIAN CHICKEN STEW WITH POMEGRANATE AND WALNUTS)



Khoresh-e Fesenjoon (Persian Chicken Stew With Pomegranate and Walnuts) image

Fesenjoon hails from the verdant northern Iranian hills and coast, where pomegranate and walnut trees grow. Taking its flavor cues from the land, this stew braises bone-in chicken thighs in a blend of toasted walnuts, pomegranate juice and pomegranate molasses. As the sauce cooks, it thickens and deepens to a shade of dark brown similar to that of mole poblano. You'll need to thin it out with water to prevent it from becoming overly sticky and syrupy. The sweet and sour flavors of the pomegranate, along with the silky texture the walnuts bring to the stew, make it one of the most elegant dishes in Persian cuisine.

1 pound walnut pieces (about 4 cups)
6 to 8 bone-in chicken thighs (about 2 1/4 pounds)
1 teaspoon ground turmeric
Fine sea salt and freshly ground black pepper
3 tablespoons olive oil
1 yellow onion, thinly sliced
4 cups cold-pressed pomegranate juice
1/4 cup good-quality pomegranate molasses, plus more as needed
1/4 teaspoon crumbled saffron threads
1 to 2 teaspoons granulated sugar (optional)
Pomegranate seeds, for garnish
Polo Ba Tahdig (Persian Rice With Bread Crust), for serving
Mast-o Khiar or plain yogurt, for serving
Salad-e Shirazi, for serving

Steps:

  • Heat oven to 350 degrees. Spread walnuts out on a baking sheet and toast until golden brown inside, about 12 minutes. Set aside to cool to room temperature.
  • Remove chicken skin and discard or save for another use. In a large bowl, season the chicken with turmeric, 2 teaspoons salt and 1/2 teaspoon pepper. Set aside.
  • Set a large Dutch oven or similar pot over medium-high heat. When the pot is hot, add oil and carefully lay chicken thighs into the pot in a single layer. It is crucial to leave space between the pieces to allow steam to escape, so brown chicken in batches if necessary. Cook until browned on both sides, flipping halfway through, 3 to 4 minutes per side. Remove chicken from pot and set aside. Add onion to pot with a pinch of salt and cook, stirring regularly, until soft and golden brown, 16 to 18 minutes.
  • In a food processor, grind the cooled walnuts as finely as possible without turning them into a paste. (Alternatively, you can chop the walnuts as finely as possible by hand.) Add 2 cups pomegranate juice and 1/4 cup molasses to the walnuts and continue blending until you have a very smooth paste.
  • Add the walnut paste and remaining pomegranate juice to the pot. Season with salt and partly cover with a lid. Cook over low heat, stirring frequently, for about 2 hours. If the sauce begins to stick, stir in 1/4 cup water. The sauce will thicken and change color as it cooks, turning a deep, dark brown, similar to mole poblano.
  • Add the saffron, and taste the sauce. Adjust seasoning with salt, pepper and pomegranate molasses as needed. The sauce should be delightfully sweet and sour, so add up to 2 teaspoons sugar, if needed, if it's too tart.
  • Add the chicken to the sauce and simmer, uncovered, for 45 minutes, or until chicken is falling off the bone. Keep stirring regularly - the sauce should be thick, but not so thick that it sticks to the bottom of the pot, so add a splash of water as needed to prevent burning. Use a large spoon to skim away any walnut oil that has pooled on top of the stew. Taste and adjust seasoning, transfer to a serving dish and garnish with a sprinkling of fresh pomegranate seeds. Serve hot, with Persian rice, mast-o khiar and salad-e Shirazi if you like.

This is one of my all-time favorite foods. I first had it at my best friends house in high school over 20 years ago. Her mother gave me the recipe and I have been making it ever since. I don't even like green peppers and I love them in this recipe. It is easy and the sauce is divine! For non-soy sauce/salt lovers--don't even try this recipe. The sauce is wonderful if you like the salty flavor of soy sauce, which obviously I do. For those that want a bland, non-salty light sauce, this is NOT the recipe for you! Look elsewhere! Enjoy!

1 1/2 lbs chicken, cut into 1 inch pieces
4 tablespoons soy sauce
4 teaspoons cornstarch
2 tablespoons dry sherry
2 teaspoons ginger, if you like more ginger (or more, I use fresh but dry works in a pinch but fresh is better)
1 teaspoon sugar
1 teaspoon crushed red pepper flakes
2 tablespoons cooking oil (or more)
2 green peppers
8 green onions

Steps:

  • In small bowl blend soy sauce into cornstarch; stir in dry sherry, ginger, sugar, & red pepper Preheat wok (or large skillet) add cooking oil.
  • stir-fry green pepper& green onions in hot
  • Remove.oil for 2 minutes or till crisp& tender.
  • Stir-fry walnuts for 2 minutes (you may need to add more oil at this point).
  • Remove.
  • Add half the chicken to hot wok; stir-fry 2 minutes.
  • Remove.
  • Stir-fry remaining chicken 2 minutes.
  • Return all chicken to wok.
  • Stir in soy mixture into chicken.
  • Cook& stir till thickened and bubbly.
  • Stir in veggies.
  • Cover and cook 1 minute more.
  • Serve with rice.

2 cups dried cooked chicken
1/2 cup thinly sliced red onion
1/3 to 1/2 cup (about) purchased poppy seed salad dressing
6 cups mixed baby lettuces

3 garlic cloves, minced
1 1/2 cups short-grain brown rice, cooked according to package directions, cooled

*Tamari soy sauce is available at specialty and natural foods stores and some supermarkets nationwide.

Steps:

  • Stir walnuts in medium nonstick skillet over medium heat until lightly toasted, about 3 minutes. Drizzle 2 tablespoons tamari over walnuts; stir until tamari coats walnuts, about 45 seconds. Cool. (Can be made 3 days ahead. Store at room temperature in airtight container.)
  • Combine chicken, 2 tablespoons tamari and honey in medium bowl; toss to coat. Let stand 15 minutes.

1/4 cup balsamic vinegar, eyeball it
1/4 cup water, eyeball it

1/4 cup, 1 (2-ounce) package chopped walnuts, available on baking aisle, toasted

Steps:

  • Cook rice according to package directions.
  • Preheat extra-virgin olive oil in a skillet over medium high heat. Season the chicken with salt and pepper. Brown and cook chicken, 5 minutes on each side. Remove chicken to a plate and cover. Twenty-plus years ago, a sister introduced me to this recipe -- from a 1977 Better Homes and Gardens Oriental Cookbook. The original version (which my sister follows faithfully) is very similar to Kimke's Recipe #31632. Here is my version, which I think is different enough to be sent in and enjoyed. It is saucier. Also, our past exchange students want to refer to my version.

2 1/4 lbs chicken breasts, diced into one-inch pieces (I have made this with chicken thigh meat and it works fine)
2 large green bell peppers, diced into one-inch pieces (red peppers are okay if that is what you have)
10 green onions, chopped into one-inch slices (use white and green bits)
1 1/4 cups walnuts, halves broken in half again (or more)
9 tablespoons soy sauce
6 tablespoons dry sherry or 6 tablespoons water
5 teaspoons cornstarch (cornflour)
2 tablespoons water
1 tablespoon fresh ginger, chopped finely
1/4 teaspoon red chili pepper flakes
1 teaspoon sugar (use more if you like sweet)
2 -4 tablespoons vegetable oil

Steps:

  • Chop chicken, walnuts, bell peppers, green onions and ginger. I sometimes do this in the morning (or the night before), and put the components in the refrigerator, in covered containers.
  • If you chop ahead of time, store chicken on its own, store onions and peppers together, store walnuts on their own, and store ginger on its own. If you chop ahead of time, take all items out of fridge at least two hours before final cooking.
  • For sauce, put cornstarch into bowl. Stir in soy sauce. Stir in Chinese cooking wine (or substitutes), ginger, chilli and sugar. Don't add water yet. Set aside.
  • Do all cooking in a wok if you can.
  • Saute bell peppers and onions in two tablespoons oil for two minutes. Stir frequently. Remove from heat, and set aside.
  • Saute walnuts in same pan for one minute (don't add more oil yet). Stir frequently. Remove from heat, and set aside.
  • Saute half the chicken pieces in same pan until cooked (first add two tablespoons of oil). Stir frequently. Remove from heat, and set aside.
  • Saute other half of chicken pieces until cooked (probably don't add more oil). Stir frequently.
  • Add first set of chicken pieces to second set of pieces.
  • When chicken is hot, add soy sauce mixture.
  • Pour water into pan used for soy sauce mixture. Swirl in pan and add to chicken.
  • Stir well.
  • When mixture thickens (just a bit) add vegetables.
  • Stir thoroughly and warm through. Might take a minute, covered.
  • Serve over rice.

  • Toss chicken with 2 teaspoons salt.

3/4 pound fusilli lunghi pasta
1/4 cup vegetable oil
1 onion, chopped
3/4 pound ground chicken
1 cup shelled walnuts
1/3 cup minced fresh parsley
1 tablespoon paprika
1/2 cup plain, non-fat yogurt
Salt and freshly ground pepper to taste

Steps:

  • Bring a large pot of salted water to a boil, add pasta, and bring the water back to a boil and cook for 8 to 10 minutes until tender, but still firm to the bite. In a skillet heat oil, add onions and cook for 2 minutes. Stir in chicken, walnuts, parsley and paprika and cook until heated through and chicken is cooked. Now remove skillet from heat and stir in yogurt. Season to taste with salt and freshly ground pepper. Drain, pat dry and transfer pasta to a serving dish. Add sauce and toss to combine. Serve immediately.

For the Vinaigrette:
2 tablespoons apple cider vinegar
1 tablespoon honey
1 tablespoon finely chopped shallot
11/2 teaspoons Dijon mustard
3 tablespoons olive oil
Kosher salt and freshly ground pepper
For the Salad:
2 heads butter lettuce
1/2 cup candied walnuts*
1 Honeycrisp or Fuji apple (quartered and cored and then thinly sliced)
1/2 cup pomegranate seeds
2 cups poached chicken breast, diced
1/4 crumbled blue cheese

Steps:

  • For the Vinaigrette: Place all ingredients in a mini food processor to combine and then keep in a mason jar or any container with a tight fitting lid so that you can shake it before serving. Tip on extracting pomegranate seeds: Cut pomegranate into quarters, and hold each quarter over a large bowl of cold water while you extract the seeds from it into the bowl with your thumb and fingers. Seeds will sink to the bottom. Use a fine sieve to skim the white pith and any other unwanted debris off of the surface of the water, and then pour the seeds and the water through a fine colander. For the Salad: Tear the lettuce into a large bowl, along with the chicken, apples and walnuts. Season with salt and pepper, and toss with the vinaigrette, only using as needed. Do not overdress the salad. Garnish with the blue cheese crumbles and the pomegranate seeds. *To Make Candied Walnuts: 11/2 cups raw walnut halves 1/2 cup brown sugar, loose Line a baking sheet with parchment paper. Mix walnuts and brown sugar together in a large saucepan and set on the stove over medium to medium-high heat. As the brown sugar melts, us a wooden spoon to move the mixture around in the saucepan, making sure that all of the nuts get coated and none of the sugar stays in one place long enough to burn. Cook for about 5 minutes at the most, until all of the sugar has melted and all of the nuts are coated (or immediately if you smell them burning). Then, remove from heat and quickly spread the nuts out on the lined baking sheet to prevent them from drying in clumps. Allow nuts to cool for about a minute before eating or storing in an air-tight container.

Ten 6-ounce chicken breasts, boneless and skinless
2 1/2 tablespoons dry vermouth
2 1/2 eggs
2 1/2 tablespoons cornstarch
2 1/2 teaspoons salt and pepper
2 1/2 tablespoons vegetable oil, plus 2 1/2 tablespoons
1 1/4 cup Spanish onion, diced
2 1/2 teaspoons garlic
1 1/4 cup white wine
2 1/2 tablespoons soy sauce
5 tablespoons oyster sauce
1 1/4 pints chicken stock
2 1/2 teaspoon cornstarch, mixed with 2 1/2 tablespoons water
5 tablespoons ginger, minced
5 red bell peppers, julienne
1 1/4 mango, julienne
45 asparagus sprigs, cut into 1-inch pieces
1 1/4 cups honeyed walnuts, recipe above

Steps:

  • Clean chicken of all visible fat and cartilage. Cut each breast in half and pound slightly. Marinate the chicken with the vermouth, eggs, cornstarch, salt and pepper for 30 minutes. Sear in a hot non-stick pan on both sides in 2 1/2 tablespoons vegetable oil. Let cool. Saute onions and garlic in 2 1/2 tablespoons vegetable oil for 3 minutes until translucent. Deglaze with white wine and reduce by half. Add the soy sauce and oyster sauce along with chicken stock. Allow to reduce by 1/3 of the original volume. Thicken with cornstarch and water, mix just to nape. Cool completely. Saute ginger in oil, add red peppers and saute slightly. Add the mango to warm. Add the sauce and warm, saute asparagus until al dente. Pour sauce over chicken, top with sauteed asparagus and serve with honeyed walnuts.

Nonstick vegetable oil spray
1 pound chicken livers, trimmed
1 cup canned low-salt chicken broth
1 small onion, thinly sliced
cup (2 sticks) unsalted butter, room temperature
1 tablespoon Cognac
1 1/4 teaspoons salt
1 cup dry red wine
3/4 cup dried black Mission figs
1/2 cup chopped toasted walnuts
Fresh chives (for garnish)
Red leaf lettuce (for garnish)
1 French-bread baguette, sliced, toasted

Steps:

  • Spray 3-cup soufflé dish or terrine with vegetable oil spray. Line dish with plastic wrap; spray plastic. Combine chicken livers, broth and onion in medium saucepan. Bring to boil. Cover and simmer until livers are cooked through, stirring occasionally, about 12 minutes. Drain cooking liquid; transfer chicken livers and onion to processor. Add butter, Cognac and salt to processor. Puree until smooth. Transfer to prepared dish. Cover and refrigerate until firm, at least 4 hours.
  • Bring wine to simmer in small saucepan. Remove from heat. Add figs. Let stand until figs soften, about 15 minutes. Drain wine. Quarter figs. (Pâté and figs can be prepared 1 day ahead. Keep pâté refrigerated. Transfer figs to small bowl; cover and refrigerate.)
  • Unmold pâté onto platter. Press walnuts onto sides of pâté. Garnish top with chives and some figs. Arrange lettuce on platter with pâté. Place remaining figs atop lettuce. Serve with toasts.

  • Season the chicken with salt; place the broth (or water) and chicken in a small stockpot. Bring to a simmer over medium heat, cover, and cook until chicken is just done, about 10 minutes. Remove breasts; cool, shred, and set aside. Reserve broth for future use.
  • Place basil, vinegar, garlic, oil, and salt to taste in blender. Blend until smooth and set aside.
  • In a large bowl, toss arugula, radicchio, lettuce, fennel, red pepper, onion, walnuts, 1/2 cup salad dressing, and salt and pepper to taste.
