CHICKEN CACCIATORE

Many cooks overload Italian-American-style red sauce with olive oil. While it is a healthy fat, it's still a fat. At 120 calories per tablespoon, that's a lot of leeway in the hands of a liberal cook. In this version, the olive oil has been reduced to 1/2 tablespoon for all 4 portions and it still tastes great. If you use chicken thighs, you'll end up with a little more cholesterol but a lot more flavor. (If your diet requires very small amounts of cholesterol, use boneless, skinless chicken breast instead of the chicken thighs, and simmer them for only 10 to 12 minutes to prevent their drying out.

4 boneless, skinless chicken thighs (about 4 ounces each)
Salt and freshly ground black pepper
1/2 tablespoon extra-virgin olive oil
One 8-ounce package sliced button mushrooms
1 large green bell pepper, seeded and cut into large dice
1/2 cup dry red wine
1 3/4 cups Rocco's How Low Can You Go Low-Fat Marinara Sauce (page 206) or store-bought low-fat marinara sauce
1/2 cup fresh basil, roughly chopped

Steps:

  • Heat a Dutch oven over medium heat. Season the chicken with salt and pepper to taste. When the pot is hot, add the olive oil. Add the chicken and sear it on both sides until it is golden brown, about 4 minutes. Transfer the chicken to a plate and set it aside.
  • Add the mushrooms and bell peppers to the Dutch oven. Season the vegetables with salt and pepper, and cook until they have softened a little bit, about 8 minutes.
  • Add the wine and cook until it has reduced by half. Add the marinara sauce and the basil, and bring the sauce to a simmer. Add the browned chicken, pushing each piece down in order to submerge it as much as possible in the sauce. Cover the pot and bring the stew to a simmer. Then reduce the heat to medium-low and simmer, covered, until the chicken is cooked through and tender, about 15 minutes. Season with salt and pepper to taste, if desired, and serve.

1 large green pepper, sliced into 1-inch strips
1 cup sliced mushrooms
1 medium onion, sliced into rings
1 lb boneless chicken breast, browned
1 lb Italian turkey sausage, browned
1/2 teaspoon oregano
1/2 teaspoon basil
2 tablespoons italian seasoning
1 1/2 cups tomato sauce

Steps:

  • Layer vegetables in a slow cooker. Top with meat.
  • Sprinkle with oregano, basil and Italian seasoning. Top with tomato sauce.
  • Cover. Cook on low 8 hours.
  • Remove cover during last 30 minutes of cooking to reduce and thicken the sauce.
  • Serve over cooked spiral pasta.

1/4 medium green or sweet yellow pepper, julienned
3 tablespoons chopped onion
1 garlic clove, minced
1-1/2 teaspoons olive oil
1 Italian sausage link (about 1/4 pound), casing removed
1 cup canned diced tomatoes, undrained
2/3 cup tomato juice
15 slices pepperoni, halved
1/4 teaspoon dried oregano
1/8 teaspoon dried basil
Pepper to taste
1/3 cup sliced fresh mushrooms
1 tablespoon sliced ripe olives
2 tablespoons Romano or Parmesan cheese
Hot cooked linguine orfettuccine

Steps:

  • In a skillet, saute the green pepper, onion and garlic in oil until crisp-tender. Crumble sausage into skillet; cook over medium heat until meat is no longer pink. Drain. Add the tomatoes, tomato juice, pepperoni, oregano, basil and pepper. Reduce heat; cover and simmer for 10 minutes. Add mushrooms and olives. Simmer, uncovered, for 10-15 minutes or until slightly thickened. Stir in cheese. Serve over pasta.

4 tablespoons olive oil, divided
1 lb chicken sausage, cut into 1-inch pieces
1 teaspoon chopped fresh garlic
1 large green bell pepper, cut into 1/2-inch chunks
1/2 onion, chopped
1/2 lb fresh mushrooms, cut into quarters
10 plum tomatoes, cut into 1-inch chunks

Steps:

  • 1. Cook pasta according to package directions; drain and set aside.
  • 2. Meanwhile, in a large skillet, heat 2 tablespoons oil over medium-high heat then add sausage, and cook 8 to 10 minutes, or until no longer pink in center. Remove to a bowl and cover with plastic wrap.

1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
1/4 cup all-purpose flour
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons butter
1 large onion, chopped
2 celery ribs, sliced
1 large green pepper, cut into strips
1/2 pound sliced fresh mushrooms
1 can (28 ounces) tomatoes, drained and chopped
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 cup dry red wine or water
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1 teaspoon dried oregano

  • Dust chicken with flour. Season with salt and pepper. In a large skillet, brown chicken on all sides in oil and butter over medium-high heat. 1 cup low-salt chicken broth
1/3 cup thinly sliced basil, divided

Steps:

  • Preheat oven to 400°F. Combine plum tomatoes, mushrooms, and onion in large bowl. Add 3 tablespoons oil and vinegar; toss to blend. Sprinkle generously with salt and pepper. Spread vegetable mixture in single layer on large rimmed baking sheet. Roast until onion slices are golden brown and all vegetables are tender, stirring frequently, about 50 minutes. Remove from oven and set aside. Reduce oven temperature to 350°F.
  • Sprinkle chicken with salt, pepper, and 1 tablespoon rosemary. Heat remaining 2 tablespoons oil in heavy large deep ovenproof skillet over medium-high heat. 1/4 cup dried porcini mushrooms, soaked in hot water, then finely chopped, liquid reserved
One 4 1/2-to-5-pound chicken, cut into 14 pieces (see note)
2 1/2 teaspoons kosher salt
Vegetable oil, for browning the chicken
2 tablespoons extra-virgin olive oil
2 medium onions, cut in eighths, attached at the root end
3 stalks celery, sliced into 1/2-inch pieces on the bias
1 cup dry white wine
1 sprig fresh rosemary
28-ounce can Italian plum tomatoes, preferably San Marzano, crushed by hand
4 cups sliced mixed mushrooms (cremini, button, shiitake)
3 red, yellow, or orange bell peppers, cut into 1/2-inch strips
2 teaspoons dried oregano

Steps:

  • Season the chicken all over with 1/2 teaspoon salt. Pour enough vegetable oil into a large Dutch oven to cover the bottom of the pan, over medium heat. When the oil is hot, brown the chicken all over in batches, about 2 to 3 minutes per side. Remove the chicken to a plate. Discard the vegetable oil.
  • Add the olive oil to the pot, and bring to medium-high heat. When the oil is hot, add the vegetables. Cook, stirring occasionally, until the onions and celery are caramelized on the edges, about 5 minutes. Put the chicken back in the pot, and pour in the white wine. Drop in the rosemary. Boil until the wine is reduced by half, then add the chopped porcini and the soaking liquid, omitting any gritty residue in the soaking liquid. Once the liquid returns to a boil, add the tomatoes. Rinse out the can with 1 cup hot water and add that as well. Bring to a boil, and simmer to let the sauce come together, about 5 minutes.
  • Pour in the sliced mushrooms, bell peppers, oregano, and the remaining 2 teaspoons salt. Cover, bring to a simmer, and cook until the vegetables have begun to soften, about 10 minutes. Uncover, and cook until the sauce has reduced and the chicken is tender, about 15 to 20 minutes more.
  • NOTE
  • The chicken gets cut up as follows: two wings, two thighs, two drumsticks, back in two pieces, breast halves in three pieces each.

1 3/4 teaspoons table salt
3/4 teaspoon black pepper
2 tablespoons olive oil
1 large onion, chopped
1 green bell pepper, chopped
4 garlic cloves, chopped
1/2 cup dry red wine
1 (28-oz) can whole tomatoes in juice
1/2 cup chicken stock or reduced-sodium chicken broth
Accompaniment: cooked white rice or buttered noodles

Steps:

  • Pat chicken dry and sprinkle on all sides with 1 1/4 teaspoons salt and pepper. Heat oil in a deep 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken in 2 batches, turning over once, about 10 minutes per batch. Transfer chicken to a plate.
  • Reduce heat to moderate and add onion, bell pepper, and garlic to skillet. Cook, stirring occasionally and scraping up any brown bits, until onion and garlic are golden, 8 to 10 minutes. Add wine and simmer, scraping up brown bits, until liquid is reduced by half, 1 to 2 minutes. Add tomatoes with their juice and simmer, breaking up tomatoes with a wooden spoon, 5 minutes. Add chicken stock and nestle chicken pieces in sauce.
  • Simmer, loosely covered with foil, until chicken is cooked through, 35 to 45 minutes. Season with remaining 1/2 teaspoon salt. For a thicker sauce, transfer cooked chicken to a platter and keep warm, covered, then boil sauce until it reaches desired consistency.
