1 ¼ pounds skinless, boneless chicken breast halves
2 cloves garlic, minced
1 ¾ cups Swanson® Chicken Broth or Swanson® Chicken Stock
¾ cup uncooked white rice
1 (16 ounce) package frozen vegetable combination (broccoli, cauliflower, carrots)
⅓ cup grated Parmesan cheese

Steps:

  • Spray a 12-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the chicken and garlic and cook for 10 minutes or until the chicken is well browned on both sides. Remove the chicken from the skillet.
  • Stir the broth, rice and vegetables in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes. Stir in the cheese.
  • Return the chicken to the skillet. Sprinkle the chicken with the paprika. Cover and cook for 10 minutes or until the chicken is cooked through and the rice is tender.

As the chicken thighs roast, the cumin-scented rice soaks up all of the delicious juices. When the timer chimes, the rice and chicken emerge from the oven perfectly cooked. Be sure to use a 12-inch skillet here; a smaller or larger pan might result in under- or overcooked chicken or rice. Leftovers, if you have any, are great in tacos or enchiladas.

8 bone-in, skin-on chicken thighs
Flaky sea salt and black pepper
2 tablespoons extra-virgin olive oil or peanut oil
1 large yellow or white onion, chopped
2 green or red bell peppers, halved, seeded and sliced
2 1/2 cups chicken stock
2 red Fresno chiles or jalapeños, halved, seeded and chopped
1 (3-inch) cinnamon stick, broken in half
3 garlic cloves, finely grated
1 teaspoon ground cumin
1 (15-ounce) can black beans, rinsed
1/3 pound cherry tomatoes, halved
1 cup basmati rice, rinsed in a sieve until the water runs clear
3 tablespoons chopped cilantro leaves
Lime wedges, pickled chiles, sliced fresh chiles, sour cream and sliced avocado, for serving

Steps:

  • Heat the oven to 375 degrees. Season the chicken with salt and pepper on both sides. Heat the oil in a 12-inch ovenproof skillet (the pan size is very important) over medium-high. Brown the chicken on both sides to give it good color, 3 to 5 minutes per side. Transfer to a plate. Add the onion and bell peppers to the pan and sauté until just starting to soften, about 5 minutes. Season with salt and pepper.
  • In a small saucepan, bring the chicken stock to a boil. Meanwhile, add the Fresno chiles or jalapeños, cinnamon, garlic and cumin to the skillet and cook for about 2 minutes, then add the black beans and cherry tomatoes. Season generously with salt and pepper. Sprinkle the rice on top in an even layer. (It's important that the black beans are beneath the rice and chicken. The rice will burn otherwise.) Add the stock and return the chicken to the pan, skin-side up.
  • Bake, uncovered, for 40 minutes. The chicken should be lovely and golden, the stock should be absorbed and the rice should be tender. Sprinkle with the cilantro. Serve with lime wedges, pickled chiles, sliced fresh chiles, sour cream and avocado (squeeze some lime juice over the avocados in a bowl and sprinkle with salt and pepper).

  • Heat the olive oil in a large ovenproof nonstick skillet over medium-high heat. Add the broccoli, bell pepper, scallion whites and garlic; season with salt and pepper. Cook, stirring, until softened, about 6 minutes. Add the cumin and stir until toasted, 30 seconds.
  • Stir in the chicken, rice, salsa mixture and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium and simmer until heated through and saucy, 1 to 3 minutes. Fold in half of the cheese; top with the rest. Broil until the cheese melts, 2 to 4 minutes. Top with the scallion greens.

1 yellow onion, chopped
1 1/2 cups (275 g) long-grain white rice, rinsed
1 bay leaf
3 cups (720 ml) low-sodium chicken broth or water
1 cup (135 g) frozen peas (optional)
Handful of fresh flat-leaf parsley, roughly chopped (optional)
For the dirty version:
1 tablespoon olive oil
1 tablespoon unsalted butter
1 [3-4-pound (1.6-1.8-kg)] chicken, cut into 8 pieces, or 2-3 pounds (1.2-1.4 kg) chicken parts, patted dry

1/2 pound (225 g) mild pork sausages, casings removed or 1/4 pound (115 g) mild pork sausages, casings removed, plus 1/4 pound (115 g) chicken livers, roughly chopped

Steps:

  • In a large skillet or high-sided sauté pan with a lid, heat the oil and butter over medium-high heat until the foam from the butter begins to subside. Season the chicken generously with salt and pepper, then put it in the pan skin-side down. Cook-resisting the urge to repeatedly poke, prod, and look underneath-until it doesn't stick to the pan and is golden brown, about 6 minutes.
  • Flip the chicken over and cook for 5 minutes more. Transfer to a platter, then pour off all but about 2 tablespoons of the fat from the pan. Add the sausages and livers (if using) and cook over medium-high heat, stirring often and breaking up the meat, until browned, about 3 minutes. Reduce the heat to medium and add the onions and, if using, the peppers, celery, garlic, and cayenne. Cook, stirring occasionally, until the onions are softened, about 8 minutes. Add the rice and bay leaf and cook, stirring often, until the rice is lightly toasted, about 2 minutes.*
  • Add the broth, stir to combine, then add the reserved chicken, skin-side up, and any accumulated juices. Bring to a boil, then reduce the heat and simmer, covered, until the chicken is just cooked through and the rice is tender, about 20 minutes (see Tip). Let the pan sit, covered, for 5 to 10 minutes after taking it off the heat. Taste the rice and stir in a little more salt and/or pepper, if needed, then sprinkle with parsley or scallions, if you like.

2 pounds bone-in, skin-on chicken thighs (4 to 6 thighs)

1 medium fennel bulb, trimmed, cored and diced, plus more fennel fronds, for serving
1 medium yellow onion, diced
1 teaspoon dried oregano
1/4 cup roughly chopped anchovy fillets
5 garlic cloves, minced
1/4 teaspoon red-pepper flakes, plus more to taste
1 tablespoon tomato paste
3/4 cup dry white wine, such as pinot grigio
1 cup long-grain white rice
3/4 cup pitted Castelvetrano or other green olives, halved lengthwise
1/3 cup raisins, preferably golden
2 cups low-sodium chicken broth
1 medium navel orange, 1/2 juiced and 1/2 thinly sliced

Steps:

  • Heat the oven to 325 degrees. In a 12-inch skillet with a lid, heat the 2 tablespoons olive oil over medium. Pat the chicken thighs dry with a paper towel and season them with salt and pepper. When the oil is hot, place the thighs in the skillet, skin-side down. Cook, undisturbed, for 8 to 10 minutes, or until the skin is golden brown and the chicken releases easily from the pan. You may need to raise the heat slightly during the last few minutes if the skin isn't browned enough.
  • Flip the chicken thighs and cook for 3 minutes on the other side, then transfer to a plate and set aside.
  • Discard all but about 3 tablespoons fat from the skillet. Add the diced fennel, onion and oregano, and cook over medium for 6 to 8 minutes, stirring occasionally, until the vegetables are tender. Add the anchovies, garlic and red-pepper flakes and cook for 1 to 2 minutes, until the garlic is fragrant.
  • Add the tomato paste and cook, stirring often, until it begins to caramelize and turn rusty brown in color. Add the wine and cook, scraping up any brown bits from the bottom of the pan, until the liquid has almost completely evaporated.
  • Add the rice, olives and raisins to the skillet and cook, stirring, for 1 minute. Add the chicken broth, orange juice and a few grinds of black pepper, and bring to a simmer.
  • Place the chicken thighs on top, skin-side up, nestling them into the liquid so only the skin is above the surface. Cut the orange slices into half-moons and arrange them around the chicken. Drizzle the orange slices with olive oil.
  • Cover and bake for 30 minutes, or until the rice is tender and the liquid has been absorbed. (If you'd like to crisp the chicken skin, pop the pan under the broiler for 2 to 3 minutes.)
  • Top with fennel fronds, more red-pepper flakes and a sprinkle of salt. Serve hot.

Her little boy, Damian was quite the picky tyke and we knew that feeding him would be what we based our meal on. Well, this was something we'd been meaning to try, so we gave it a go. 1 lb boneless chicken meat
1 (10 ounce) can cream of mushroom soup, undiluted
2 cups frozen broccoli, floweretts thawed
1/4 teaspoon paprika
1/4 teaspoon black pepper
2 cups Minute Rice, uncooked
1 (4 ounce) can mushroom pieces, chopped very fine and drained
1 1/2 cups water

Steps:

  • Heat a bit of oil in a large and fry the chicken until done. Shred or cut into bite-sized pieces, if desired. Remove from skillet and set aside.
  • Add the can of soup, water, paprika, and pepper. Bring to a boil. Add the broccoli, mushrooms, and rice inches Reduce heat to low and add chicken back in the skillet.
  • Cover and cook until the rice is done, anywhere from 5-10 minutes. Let rest a few minutes.

1/2 cup KRAFT Zesty Italian Dressing
4 boneless skinless chicken breasts, cut in pieces
2 cups white rice, uncooked or 2 cups instant brown rice
1 1/4 cups chicken broth
2 cups small broccoli florets
1 1/2 cups chopped tomatoes
1 cup shredded mild cheddar cheese
salt
pepper, and
garlic powder, to taste

Steps:

  • Heat italian dressing in large skillet over med high heat.
  • Add the chicken and sprinkle with salt, pepper and garlic to taste and cook for 2 minutes.
  • Stir in the rice, chicken broth and broccoli.
  • Bring to a boil, cover, reduce heat to low and simmer 5 minutes.
  • Let stand covered for 5 minutes or until liquid is absorbed.

1 onion, chopped

Steps:

  • In a large saute pan (large enough to hold the chicken and rice), saute the chicken breasts in oil, about 3 minutes on each side to brown.

2 uncooked chicken breasts
1 tablespoon olive oil
2 garlic cloves, crushed
1 tablespoon water
1 cup canned black beans, drained and rinsed
1/2 cup salsa
1/2 cup frozen corn, thawed
2 cups precooked brown rice, preheated
1/8 teaspoon table salt, to taste
1/8 teaspoon ground black pepper, to taste

Steps:

  • Slice the chicken breasts at an angle to make 1/2-3/4 inch thick slices.
  • Preaheat olive oil on skillet to medium high.
  • Just as the olive oil starts to 'smoke' reduce heat to medium and add the garlic.
  • Quickly stir until the garlic is just aromatic (15-20 seconds) and add chicken.
  • Continue to cook on medium heat until the chicken is cooked through and slightly browned.
  • Remove the chicken from skillet and set aside.
  • Add 1 tbsp water to the skillet and scrap until the drippings are glazed.

1 lb boneless skinless chicken breast, cut into 1-inch pieces
1 medium red bell pepper, cut into 20 1-inch pieces
2 tablespoons olive oil
1/2 teaspoon grated lemon zest
1/2 teaspoon dried oregano
salt
1/2 teaspoon fresh coarse ground black pepper
1 (7 1/4 ounce) package rice pilaf mix
2 garlic cloves, minced
2 cups fresh spinach leaves, torn into pieces
2 roma tomatoes, cut into wedges
1/4 cup crumbled feta cheese

Steps:

  • Thread chicken and bell pepper on four 8-inch skewers. (Wooden skewers can be trimmed back with kitchen shears.) Place kebabs in a baking dish. Combine oil, lemon zest, oregano, salt and pepper. Pour over kebabs; marinate in refrigerator for 15 minutes.
  • Heat 10-inch skillet over medium heat for 1 minute. Add chicken kebabs and marinade; cook 3 minutes on each side. Remove kebabs from skillet, reserving drippings.
  • In same skillet over medium heat, saute rice-pasta packet (hold the seasoning packet for the next step) with garlic in reserved drippings until pasta is golden brown. Add 2 cups water and the special seasonings packet; bring to a boil. Reduce heat to low. Cover; simmer 10 minutes.
  • Stir in spinach; place kebabs over rice. Cover, simmer 10 minutes or until rice is tender and chicken is no longer pink inside. Remove kebabs. Stir in tomatoes. Sprinkle with cheese and replace kebabs.

3 tablespoons butter
1 lb boneless skinless chicken breast, cut into 1-2-inch pieces
1/2 medium yellow onion
2 garlic cloves, chopped
1 1/2 cups white rice
1 cup mild enchilada sauce
2 cups chicken stock
1 tablespoon cumin
1/2 teaspoon salt
1 pinch red pepper flakes (more if you like hotter foods)
1 1/2 cups cheddar cheese
sour cream (optional)
chopped cilantro (optional)

Steps:

  • Melt butter in a large skillet over medium heat.
  • Add onions, garlic and chicken. Stir occasionally. Cook for 4-5 minutes until chicken cooked almost all the way through.
  • Add rice and toast for 3-4 minutes.
  • Add chicken stock, enchilada sauce, cumin, red pepper flakes and salt.
  • Bring to boil, reduce heat to low and cover with a tight fitting lid.

1 tablespoon oil
4 boneless skinless chicken breasts
1 (10 1/2 ounce) can cream of chicken soup
10 1/2 ounces milk
1 1/2 cups instant rice
2 cups frozen peas
3/4 cup mozzarella cheese

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat.
  • Season the chicken breasts with salt and pepper and add them to the hot oil.
  • Cook the chicken breasts for 5 minutes on each side or until nicely browned and mostly cooked through.
  • Remove the chicken from the skillet and tent with foil to keep warm.
  • Add the soup and one soup can full of milk to the skillet and mix well, stir in peas.
  • Bring to a boil, then stir in rice and top with the browned chicken.
