Steps:
- Combine the cracker crumbs, bread crumbs and spices in a Ziploc bag. (add any spices you wish).
- Dredge the frozen chicken strips in the egg/milk mixture and then drop into the ziploc with the cracker/spice mixture.
- Shake well to coat the chicken strips.
- Place chicken in a baking dish ( that will fit into the NuWave oven) that has been sprayed with Pam.
- Set NuWave oven to cook for 9 minutes at power 9.
- Turn chicken over and continue cooking for another 9 minutes.
- The chicken will be very moist and tender, and it will also be browned to perfection!

- Brown meat with onion and seasonings. Drain grease.
- Layer each tortilla with beans, meat, spoonful of sauce, a couple olives and cheese.
- Roll tortillas and lay seam side down on liner pan.
- Pour Remaining sauce and olives on top. Bake 25-30 minutes.
- Place remaining cheese on top the last 2 minutes.

- Preheat oven to 375°F. Brush 2 tortillas with oil. Place tortillas, oil side down, on baking sheet. Sprinkle each with 1/4 of cheese, half of chicken, half of cilantro, and 1/4 of cheese, leaving 3/4-inch border. Top each with 1 tortilla, pressing to adhere; brush top with oil.
- Bake quesadillas until filling is heated through and edges begin to crisp, about 10 minutes. Using large metal spatula, turn each over and bake until bottom is crisp, about 5 minutes.
- Transfer quesadillas to plates. Cut into wedges and serve.

- In a large skillet, combine the first 6 ingredients. Steps:
- Stir salsa with parmesan& coriander.
- Place tortillas on a flat surface.
- Spread equal amounts of salsa mixture all over each tortilla, leaving about a 1/2 inch border around the edges.
- Scatter equal amounts of peppers, olives, onions& cheese on HALF of each tortilla.
- Fold in half.
- Lightly brush oil on the outside of each tortilla& place on a baking dish.
- Bake in a preheated 425F oven for 5 minutes per side or until golden brown.
- Slice each tortilla into 2 or 3 wedges& serve with sour cream, guacamole& additional salsa for dipping (optional).

- Place a large nonstick skillet over medium heat. Add the bacon and cook, turning as needed, until crisp, about 8 minutes. Remove to a paper towel-lined plate, reserving a couple of tablespoons of bacon fat.
- While the bacon is frying, mix together the pepper jack, cream cheese, cayenne pepper and cumin in a bowl. Spread onto one of the tortillas and set aside.
- Wipe out the skillet and return it to the heat. Heat the butter and reserved bacon fat until the butter is melted, then place the prepared tortilla in the skillet, cheese-side up. Top with the chicken and jalapenos. Crumble over the bacon and top with the second tortilla. Cook until golden on both sides, 2 to 3 minutes per side. Transfer to a cutting board, slice and sprinkle over the cilantro before serving.

- Whisk eggs, salt & Pepper and milk or water in a small bowl.
- Saute ham, onion and pepper in 10" non-stick baking pan.
- Cook eggs in small circular dish for 10 minutes on Hi on 1" rack stir half way.
- When egg is cooked, place ham, onion and pepper inside of egg mixture, fold egg over omlette style.
