Chicken, Ham, and Cheese Roll-Ups image

This tasty take on Chicken Cordon Bleu is as delectable as the traditional recipe but less fussy. Round it out with couscous and peas.

8 thin chicken cutlets (about 1 1/2 pounds total)
Coarse salt and ground pepper
2 tablespoons honey mustard
4 slices deli ham (about 4 ounces total), halved lengthwise
12 thin slices Swiss cheese (about 4 ounces total), halved lengthwise into 24 strips
1 package (10 ounces) frozen peas
1 tablespoon butter
3/4 cup couscous

Steps:

  • Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil. Place cutlets on work surface, and season with salt and pepper.
  • Spread cutlets with mustard; layer with 1 slice of ham and 2 strips of cheese. Starting at a short end, roll up cutlets; place, seam side down, on prepared baking sheet. Top each cutlet with 1 piece of remaining cheese; broil until browned and chicken is opaque throughout, 6 to 10 minutes.
  • Meanwhile, in a small saucepan, bring peas, butter, and 1 cup water to a boil. Remove from heat, and stir in couscous. Cover and let stand 5 minutes. Season with salt and pepper; fluff with a fork. Serve couscous with roll-ups.

6 small thick boneless skinless chicken breasts (1-1/2 lb.) pounded to 1/4-inch thick
2 tsp. garlic powder
6 slices OSCAR MAYER Deli Fresh Honey Ham
6 slices OSCAR MAYER Center Cut Bacon
1 tub (8 oz.) PHILADELPHIA Garden Vegetable Cream Cheese Spread
1/2 cup water
4 Tbsp. KRAFT Sweet Balsamic Vinaigrette Dressing
1 can (6 oz.) mushroom pieces & stems, drained
1/2 cup of KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Season 6 chicken breast halves with garlic powder on both sides.
  • Top each chicken breast with a pice of ham;, roll up very tightly. Cover each rolled chicken with bacon and stretch it as much as necessary to coat well; roll up tightly. Secure with wooden toothpicks.
  • Grill every roll-up from 15 to 20 min. or until the chicken is well done (Internal temperature 165°F), turning often.
  • Meanwhile, in a bowl mix the cream cheese, water, mushrooms and 4 tablespoons of balsamic vinaigrette. Put into a skillet and cook for about 8 minutes, add the mozzarella cheese and stir until melted.
  • Remove chicken and discard toothpicks before serving. Serve 1 chicken roll per person over 3 tablespoons of mushroom sauce and steamed vegetables.

3 cups cooked rice
1-1/2 cups chopped cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted, divided
1/4 cup finely chopped celery
1 green onion, thinly sliced
1/4 teaspoon pepper, divided
6 slices fully cooked ham
1/4 cup sour cream or plain yogurt
1/4 cup whole milk
1/4 teaspoon dried thyme
1/2 cup shredded Swiss or part-skim mozzarella cheese
Paprika or additional chopped green onion

Steps:

  • Spread rice in a greased 11x7-in. microwave-safe baking dish; set aside. In a medium bowl, combine chicken, 1/3 cup soup, celery, onion and 1/8 teaspoon pepper. Place 1/4 cup on each ham slice and roll up. Secure with a toothpick if necessary. Place ham rolls, seam side down, on top of rice. , Combine sour cream, milk, thyme and remaining soup and pepper; spoon over rolls. Cover and microwave on high, turning dish halfway through cooking time, for 6-10 minutes or until heated through. Sprinkle with cheese and paprika or onion; cover and let stand 5 minutes. Remove toothpicks before serving.
