nonstick cooking spray
4 tablespoons butter
2 stalks celery, or more to taste, diced
1 carrot, or more to taste, diced
1 small onion, diced
3 cups cooked, cubed chicken breast meat
1 pinch salt and ground black pepper to taste
1 cup all-purpose flour
1 cup milk
1 ½ teaspoons baking powder
½ teaspoon salt
2 cups chicken broth
1 (10.75 ounce) can condensed cream of chicken soup
1 teaspoon poultry seasoning
½ teaspoon dried parsley, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Melt butter in a skillet over medium-high heat. Add celery, carrot, and onion and cook until veggies begin to soften, about 5 minutes. Transfer to the prepared casserole dish. Add cooked chicken. Distribute chicken and veggies evenly across the bottom of the dish. Season with salt and pepper.
  • Whisk together flour, milk, baking powder, and 1/2 teaspoon salt in a small bowl until fully combined and no lumps remain. Pour flour mixture evenly over chicken mixture; do not mix.
  • Whisk together chicken broth, cream of chicken soup, and poultry seasoning in a bowl until well combined. Season with salt and pepper and pour into the casserole dish; do not mix.
  • Bake in the preheated oven until casserole has set and dumplings are cooked, 40 to 50 minutes. Remove from the oven and sprinkle with dried parsley. Let cool for 10 minutes before serving.

When I made this dish, I was trying to figure out how to use my leftover roasted chicken. I was thinking on the lines of pot pie but instead using dumplings for the top. This casserole turned out delicious and makes a hearty meal. If you love dumplings like my family does, you'll love this dish. It's actually easy to make, and you can make it from scratch using ingredients you already have on hand.

2 tablespoons butter
1 tablespoon olive oil
1 cup chopped carrots
3 stalks celery, chopped
¾ cup chopped onion
1 teaspoon garlic powder, or to taste, divided
salt and ground black pepper to taste
1 cup frozen peas
2 ½ cups chopped cooked chicken
¼ cup butter
¼ cup all-purpose flour
3 tablespoons all-purpose flour
4 cups chicken broth
1 pinch onion powder, or to taste
3 cups flour
1 ½ cups milk
½ cup mayonnaise
1 tablespoon mayonnaise

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat 2 tablespoons butter and olive oil in a skillet over medium heat. Add carrots, celery, and onion. Add 1/2 teaspoon garlic powder; season with salt and pepper. Cook and stir until starting to soften, about 3 minutes. Add chicken; cook until heated through, about 3 minutes more. Add frozen peas; cook until turning bright green, about 1 minute. Stir and remove from heat.
  • Melt 1/4 cup butter in a saucepan over medium-high heat until bubbling, about 2 minutes. Reduce heat to medium and add 1/4 cup plus 3 tablespoons flour. Whisk quickly to remove all lumps, about 1 minute. Cook, whisking slowly, until gravy is thickened, about 2 minutes more.
  • Whisk chicken broth into the gravy thoroughly. Bring to a boil, stirring occasionally until thickened, about 5 minutes. Add the remaining garlic powder and onion powder. Season with salt and pepper. Add the vegetable-chicken mixture; stir and pour into a 9x13-inch glass baking dish.
  • Combine 3 cups flour, 1 cup milk, and 1/2 cup plus 1 tablespoon mayonnaise in a bowl. Add remaining milk gradually until mixture is sticky; you may have leftover milk. Drop spoonfuls of dumpling batter to cover the top of the filled baking dish.
  • Bake in the preheated oven until dumplings are light golden brown, about 25 minutes.

1/2 teaspoon of salt or more to taste

Steps:

  • Preheat oven to 350°F. Layer 1: In a 9x13-inch casserole dish, melt 1/2 stick of butter. Spread shredded chicken over butter. Sprinkle black pepper and dried sage over this layer. Do not stir. Layer 2: In a small bowl, mix milk and Bisquick. Slowly pour all over chicken. Do not stir. Layer 3: In a medium bowl, whisk together 2 cups of chicken broth, chicken granules and soup. Once blended, slowly pour over the Bisquick layer. Do not stir. Bake casserole for 30 to 40 minutes, or until the top is golden brown NOTE There have been at least 2 people that have made this and said it was too salty. I got this recipe off the 'Taste of Home' web site. I haven't tried it yet, but wanted to post it here for safe keeping, because it looks relatively easy to do, and I love chicken and dumplings. This is an easier version of what my mother used to make. I will update after I make it.

1/4 cup butter, cubed

  • In large saucepan, saute onions and celery in butter until tender, add garlic and cook 1 minute.

  • Reduce heat, and add peas / vegetables, and cook for 5 minutes (this time will depend on what veggies you're using), stirring constantly.

  • Drop by tablesoonfuls into 12 mounds over chicken mixture.

This sounds like it a lot of work, but it really is so easy and taste so mouth watering good! My family loves this better than the old fashion chicken and dumplings. The secret is not to stir the ingredients as you layer them.

6 chicken thighs (boil until done, remove from bone and shred )
2 c chicken broth
1/2 stick butter, melted
2 c Bisquick
2 c milk
1 can(s) cream of chicken soup
1 pkg chicken bouillon (I use 1 cube of Wylers )
1/2 tsp dried sage
1 tsp black pepper
1/2 tsp salt (adjust to your taste)
1 Tbsp parsley
1/2 tsp garlic powder

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Layer 1: In a 9x13 casserole dish pour melted butter on to the bottom of the dish. Spread the shredded chicken on top of the butter, then sprinkle with the black pepper, dried sage and salt. Do Not Stir.
  • 3. Layer 2: In a small bowl mix the milk and Bisquick, stirring until well blended. Slowly pour over chicken, then sprinkle with parsley and garlic. Do Not Stir.

1/2 tsp black pepper
1/4 Tbsp salt
2 c chicken broth (i used the water my chicken cooked in)
1 can(s) cream of chicken soup
1 c all purpose flour
1 c 1 c. milk
2 Tbsp unsalted butter, melted
1 1/2 tsp baking powder suggested by other readers but it makes sense

Steps:

  • 1. Place the chicken in a pot and cover with water. Cover and cook over medium heat for 1 hour. Remove chicken from pot, save the water, and let cool. Shred the chicken and place in the bottom of a 11x7 baking dish. Whisk together the flour, milk and butter, pour over the chicken. Whisk together the broth, soup, salt and pepper, pour over the casserole, DO NOT STIR. Bake at 350 degrees for 45-50 minutes. Let sit for a few minutes before serving.

3 boneless chicken breasts (i used 8 chicken thighs) boiled and shredded
2 c bisquick, or self rising flour
2 c chicken broth, from chicken above
1 stick unsalted butter
2 c 2% milk, or whatever you prefer
1 15 - 20 ounces cream of chicken soup
3 tsp chicken bouillon granules or cubes
1/2 tsp ground sage
salt and pepper to taste
1 1/2 c any vegetables you like, or none at all

Steps:

  • 1. Preheat oven to 350 degrees. Place boneless, skinless chicken breasts in sauce pan with enough water to cover the chicken. Bring to a boil, then turn off the heat; place a lid on your pot and allow to sit for 10-15 minutes to finish cooking. Remove chicken from stock (reserve the stock) and allow to cool, then shred the chicken. When building the layered casserole, do not mix the layers.
  • 2. Layer 1 - In 9x13 casserole dish, melt 1 stick of butter. Spread shredded chicken over butter. Sprinkle black pepper and dried sage over this layer. Note: If you want to serve this as a pot pie, add a layer of vegetables now. I used fresh corn from my freezer( thawed) and 1/2 cup diced sweet onion
  • 3. Layer 2 - In small bowl, mix milk and Bisquick. Slowly pour over chicken.
  • 4. Layer 3 - In medium bowl, whisk together 2 cups of the chicken stock (strained, if needed), chicken granules and soup. Once blended, slowly pour over the Bisquick layer.
  • 5. I added some shredded parmesan cheese, and panko bread crumbs on top, for some crunch. Bake for 60 min,or till golden brown, remove from oven, and let stand for 5 min before cutting..ENJOY! This casserole is so tasty, and such a nice comfort food...

1 can(s) mixed vegetables
4 can(s) (5 oz) chicken
1 can(s) chicken broth
2 1/2 c biscuit mix
2 c milk
1/2 Tbsp poultry seasoning

  • 1. Pre-heat oven to 350 degrees. Melt butter and pour in the bottom of a 9"x13" cake pan, swirl around to evenly cover all of the bottom of the pan.
  • 2. Layer canned (drained) chicken on top of melted butter. (NO STIRRING)
  • 3. Evenly layer mixed vegetables on top of chicken. (NO STIRRING)
  • 4. In a separate bowl, mix together cream of chicken soup and chicken broth. Drizzle 1/2 cup of this mixture over chicken/vegetable layers. Set the rest aside.
  • 5. In a separate bowl, mix together biscuit mix and milk, should form a runny batter.
  • 6. Evenly sprinkle poultry seasoning over the layers in the cake pan. (NO STIRRING)
  • 7. Pour biscuit/milk mixture over the top of all, as evenly as possible.
  • 8. Pour remaining chicken soup/broth mix over biscuit layer.
  • 9. Salt and pepper to taste.
  • 10. Bake for 50 minutes.

This is an easy, quick way to make chicken and dumplings. It is not traditional, but it is delicious. IMPORTANT NOTE: this recipe requires self-rising flour. If you do not use self rising flour, it will not work, and you will not get dumplings, just soup. Also, self-rising flour loses its leavening power after 6 months, and it won't work then, either. So when making this recipe, please use freshly bought self-rising flour. For the chicken, I buy a rotisserie chicken, remove the skin, legs and wings, and chop up the breast and thigh meat. This should give you about 2 to 3 cups of chopped chicken. Reserve the wings and legs for another use.

  • Bake, uncovered, on the middle rack of the oven at 400ºF for 40 minutes, or until the top is beginning to brown.
  • Let sit for 5 to 10 minutes before serving - this allows the sauce to set up. You can serve it right out of the oven, but the sauce will be thin.

2 chicken breasts, cooked and shredded ( I use a store bought rotisserie chicken)
2 cups chicken broth
1/2 stick of butter
2 cups Bisquick
2 cups whole milk
1 can cream of chicken soup (the herbed cream of chicken soup if you can find it)
3 teaspoons of chicken granules (I use Wylers)
1/2 teaspoon dried sage
1 teaspoon black pepper
1/2 teaspoon of salt or more to taste

Steps:

  • Preheat oven to 350 degrees. Layer 1 - In 9 x 13 casserole dish, melt 1/2 stick of butter. Spread shredded chicken over butter. Sprinkle black pepper and dried sage over this layer. Do not stir. Layer 2 - In small bowl, mix milk and Bisquick. Slowly pour all over chicken. Do not stir. Layer 3 - In medium bowl, whisk together 2 cups of chicken broth, chicken granules and soup. Once blended, slowly pour over the Bisquick layer. Do not Stir. Bake casserole for 30-40 minutes, or until the top is golden brown

Ingredients
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup butter, cubed
2 garlic cloves, minced
1/2 cup all-purpose flour
2 teaspoons sugar
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon pepper
4 cups chicken broth
1 package (10 ounces) frozen green peas
4 cups cubed cooked chicken
DUMPLINGS:
2 cups biscuit/baking mix
2 teaspoons dried basil
2/3 cup 2% milk

Steps:

  • In a large saucepan, saute onion and celery in butter until tender. Add garlic; cook 1 minute longer. Stir in the flour, sugar, salt, basil and pepper until blended. Gradually add broth; bring to a boil. Cook and stir for 1 minute or until thickened; reduce heat. Add peas and cook for 5 minutes, stirring constantly. Stir in chicken. Pour into a greased 13-in. x 9-in. baking dish.
  • For dumplings, in a small bowl, combine baking mix and basil. Stir in milk with a fork until moistened. Drop by tablespoonfuls into 12 mounds over chicken mixture.
  • Bake, uncovered, at 350° for 30 minutes. Cover and bake 10 minutes longer or until a toothpick inserted in a dumpling comes out clean. Yield: 6-8 servings.
