4 oz boneless skinless chicken breast, cut into thin bite-size strips
1/2 cup chopped onion (1 medium)
1 can (18.5 oz) Progresso™ Light vegetable and noodle soup
2 tablespoons Dijon mustard
1/8 teaspoon dried dill weed
1/2 cup uncooked wide egg noodles (1 1/2 oz)
2 cups fresh broccoli florets
1 oz fat-free cream cheese

Steps:

  • In 12-inch nonstick skillet, cook chicken and onion over medium-high heat, stirring constantly, until onion is tender and chicken just begins to brown.
  • Stir in soup, mustard and dill weed. Heat to boiling. Stir in noodles; return to boiling. Reduce heat to medium; cover and cook 6 minutes, stirring occasionally.
  • Add broccoli; cook uncovered 3 to 4 minutes longer, stirring frequently, until broccoli is crisp-tender. Stir in cream cheese until well blended.

If you forget to marinate this overnight, don't worry; it's still great if you cook the chicken in the sauce as soon as you make it. It's just better when it marinates.

10 to 12 boneless skinless chicken thighs (about 1 3/4 pounds)
1 tablespoon curry powder
3 tablespoons frozen chopped onions
1/2 teaspoon crushed red pepper flakes
1/2 cup honey
1/2 cup Dijon mustard
2 tablespoons soy sauce
1 teaspoon Asian-style hot chili sauce (can be chili-garlic sauce)
1 1/2 cups basmati or white rice
3 cups water
5 cups frozen broccoli florets
1/8 teaspoon your favorite supermarket-style seasoning mix

Steps:

  • The night before: Unravel thighs to flatten and scrunch together in a large shallow oven-safe pan. Combine the following in a small mixing bowl in this order: spices, honey, Dijon mustard, soy sauce, and hot chili sauce. Stir. Pour evenly over chicken. Flip the chicken around with a fork until each piece is well coated. End by making sure the rough side of the thigh is down. Cover with plastic wrap and refrigerate overnight.
  • The next day: Preheat oven to 350 degrees F.
  • Combine rice and water in a larger oven-safe pot. Stir. Cover and place in preheated oven.
  • Turn chicken over with a fork. Place in preheated oven, beside rice. Set timer for 50 minutes. About halfway through the cooking time for chicken, I like to flip the chicken over again. When the timer rings for chicken, turn off heat but leave it in the oven.
  • Rinse broccoli in colander. Place in a microwave-safe pot or casserole dish with lid. Cover, then microwave at high for 5 minutes. When timer rings, add seasoning mix to broccoli.

1/2 cup chicken broth
1 Tbsp. soy sauce
4 cups broccoli florets
1 clove garlic, crushed
1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into thin strips
3 Tbsp. GREY POUPON Dijon Mustard

Steps:

  • Mix chicken broth and soy sauce; set aside.
  • Cook and stir broccoli and garlic in hot oil in large skillet on medium-high heat until crisp-tender. Remove from skillet; keep warm.
  • Add chicken to skillet; cook and stir 3 to 4 minutes or until cooked through. Add broth mixture; mix well. Bring to boil. Reduce heat to medium-low. Add mustard; mix well. Return broccoli mixture to skillet; mix lightly. Cook until heated through, stirring occasionally.

1 pound chopped fresh broccoli
1 ½ cups cubed, cooked chicken meat
1 (10.75 ounce) can condensed cream of broccoli soup
⅓ cup milk
½ cup shredded Cheddar cheese
1 tablespoon butter, melted
2 tablespoons dried bread crumbs

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place the broccoli in a saucepan with enough water to cover. Bring to a boil, and cook 5 minutes, or until tender. Drain.
  • Place the cooked broccoli in a 9 inch pie plate. Top with the chicken. In a bowl, mix the soup and milk, and pour over the chicken. Sprinkle with Cheddar cheese. Mix the melted butter with the bread crumbs, and sprinkle over the cheese.
  • Bake in the preheated oven for 15 minutes, or until bubbly and lightly brown.

8 ounces homestyle egg noodles, dry (or extra-wide noodles)
1 (16 ounce) package frozen broccoli cuts
1/2 lb boneless chicken breast, cut into strips
1 cup water
2 tablespoons Dijon mustard
1 tablespoon flour
1 tablespoon lemon juice
2 teaspoons chicken bouillon granules (or 2 cubes)
1/2 cup light sour cream

Steps:

  • In a large pot, cook noodles as directed, adding broccoli to water during last 4 minutes of cook time.
  • Drain noodles and broccoli.
  • Coat large skillet with cooking spray.
  • Over med-high heat, cook and stir chicken 5 minutes or until browned.
  • In a small bowl, combine water, mustard, flour, lemon juice and bouillon; mix well.
  • Add to skillet; cook and stir until thick and bubbly.
  • Stir in sour cream, noodles and broccoli; heat through, do not boil!

1 tablespoon ground cumin
2 teaspoons ground coriander
2 teaspoons smoked paprika
1 teaspoon ground turmeric
1 teaspoon freshly ground black pepper
2 teaspoons kosher salt
⅛ teaspoon cayenne pepper
1 pound skinless, boneless chicken breasts
1 pound fresh broccoli
2 tablespoons unsalted butter
1 tablespoon olive oil
2 cloves garlic, crushed
1 (14 ounce) can full-fat coconut milk
2 tablespoons ketchup
½ cup chicken broth
¼ cup thinly sliced green onion

Steps:

  • Mix cumin, coriander, paprika, turmeric, black pepper, salt, and cayenne together in a small bowl for the spice blend.
  • Coat chicken breasts generously on both sides with about 1/2 of the spice blend and refrigerate, 2 to 12 hours. Reserve remaining spice blend until needed.
  • Cut broccoli florets off the stems. Slice the stems into strips, and then into 1/4-inch cubes, and reserve. Cut the florets into 1-inch pieces and set aside.
  • Heat butter and olive oil in a deep skillet or saucepan over medium-high heat. Add the chicken breasts and brown well, about 3 minutes on each side. Transfer onto a plate and let cool enough to handle, about 10 minutes.
  • While chicken cools, add garlic to the pan drippings. Cook and stir over medium-high heat for 30 seconds. Stir in the remaining spice blend and toast for 30 seconds. Pour in coconut milk and stir in ketchup, making sure to scrape up any bits from the bottom of the pan. Bring to a simmer; reduce heat to medium, stir in chicken broth, and let simmer until reduced, about 10 minutes.
  • Stir cubed broccoli stems into the sauce and cook until almost tender, 5 to 7 minutes.
  • Meanwhile, cut chicken breasts into 1/2-inch strips, and then into 1/2-inch cubes.
  • Increase skillet heat to medium-high and add broccoli florets. Cover and cook until almost tender, 3 to 4 minutes. Add chicken, and cook, stirring, until chicken is no longer pink in the center, and the broccoli is just fully tender, about 3 minutes. Taste and adjust seasoning. Serve immediately. Top with thinly sliced green onions.

Steps:

  • Cook the noodles according to package directions.
