2 tablespoons olive oil, divided
2 cups quinoa
4 cloves garlic, minced, divided
4 cups chicken broth
1 pound skinless, boneless chicken breasts, cubed
1 tablespoon chicken base (such as Better Than Bouillon® Roasted Chicken Base)
1 tablespoon vegetable base (such as Better Than Bouillon® Seasoned Vegetable Base)
1 head broccoli, chopped
2 tablespoons butter
3 tablespoons water, or as needed

Steps:

  • Heat 1 tablespoon oil in a pot over medium heat. Add quinoa and 2 cloves of garlic; cook and stir until toasted, 2 to 3 minutes. Pour in chicken broth.
  • Reduce heat to low, cover, and let quinoa cook until no liquid remains, about 20 minutes.
  • Meanwhile, heat remaining oil in a skillet over medium heat. Mix chicken, remaining garlic, chicken base, and vegetable base together in a bowl. Add mixture to the hot oil in the skillet and cook until golden brown, 7 to 10 minutes.
  • Place broccoli and butter into a microwave-safe bowl; add just enough water to cover the bottom of the bowl. Cover and steam in the microwave until tender, about 8 minutes. Combine chicken mixture and broccoli with the quinoa until well mixed.

The original recipe calls for tofu, but I prefer chicken. Beef or pork would also work nicely here. If you don't have peanut oil, vegetable or canola can also be used. If you don't have rice noodles you can use cooked thin spaghetti or vermicelli.

1 lb chicken, cooked, cut into cubes
8 ounces wide rice noodles
2 tablespoons peanut oil
3 medium shallots, sliced
6 garlic cloves, minced
1 jalapeno pepper, minced
2 teaspoons ginger, minced
3 cups broccoli florets
2 tablespoons soy sauce
1 tablespoon sweet soy sauce (sub regular)
1 tablespoon fish sauce
basil (to garnish)

Steps:

  • Soak rice noodles in warm water for about 30 minutes or until soft.
  • Heat oil in a wok or large skillet. Stir fry chicken about 5 minutes. Remove.
  • Add shallots, garlic, jalapeno and ginger to skillet or wok. Stir fry over medium heat 2 to 3 minutes. Add broccoli and stir to mix. Cover and cook 3 minutes until broccoli is crisp tender.
  • Meanwhile, drain noodles and add to skillet or wok. Stir to combine. Return chicken, stir. Add soy sauces and fish sauce. Stir fry 8 minutes. Garnish with basil and serve.

1 (13.5 oz) bag frozen broccoli
1 cup water
1 cup quinoa
¼ teaspoon black pepper, divided
2 tablespoons olive oil
1 lb boneless, skinless chicken breast, thinly sliced

Steps:

  • Heat the broccoli in the microwave according to the package directions. Stir in cooked quinoa and ⠛ teaspoon black pepper. Heat the oil in a large (preferably nonstick) skillet over medium heat. Spread the chicken out evenly in the hot pan and cook until done, about 4 to 6 minutes. Get out 4 bowls; spread the quinoa on the bottom of each bowl, then add the broccoli and top with the chicken. Serve hot or cool to room temperature and refrigerate to enjoy as lunches throughout the week (they reheat well in the microwave).

1 lb cooked chicken or turkey meatballs (storebought or your homemade)
2 Tbsp olive oil
4 clove minced garlic
1 c chicken broth
8 oz dry macaroni
3 c fresh broccoli florets
2 Tbsp butter
salt and pepper to taste
1/2 c grated parmesan for garnishing
1/4 c fresh chopped parsley for garnishing

Steps:

  • 1. Cook the macaroni according to package directions. Towards the end of cooking time on the pasta, add the broccoli florets to the pasta pot and cook about 3-5 minutes more. While the pasta is cooking, start heating the meatballs and garlic as follows.
  • 2. Add the 2 tablespoons of oil to a deep, nonstick skillet over medium and cook the meatballs until browned. Add in the garlic and saute for 30 seconds or so.
  • 3. Add the one cup of the chicken broth and bring to a simmer. Continue to simmer and allow to reduce while you while you finish preparing the pasta and broccoli.
  • 4. Drain the macaroni and broccoli.
  • 5. Turn off the heat and stir the macaroni mixture into the skillet of meatballs along with the butter and 1/2 cup of parmesan. Stir until well combined and cheese melts.
  • 6. Season to taste with salt and pepper. Spoon into a bowl and garnish with more parmesan and fresh chopped parsley.

4 cups chicken broth
1/2 cup chopped red onion
1/2 cup chopped carrot
1/2 cup chopped celery
1 tablespoon parsley or 1 tablespoon cilantro
1 teaspoon minced garlic
1/2 cup brown rice
1 lb boneless chicken breast, chopped into 2-inch pieces
4 cups broccoli florets
1 tablespoon lime juice
1/2 teaspoon minced parsley
1/2 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • Preheat oven 375 degrees.
  • Mix broth, vegetables 1 teaspoon parsley and garlic in a large pot. Add 1 cup of water and bring to a boil. Add rice and bring back to a boil. Cover and simmer for 25 minutes. Uncover and simmer for 5 more minutes. Set aside.
  • While rice cooks, put chicken and broccoli in a mixing bowl. Add the lime juice, parsley, salt, and pepper. Mix well until chicken and broccoli are coated with seasonings. Transfer the chicken and broccoli to a baking pan, spreading it evenly in the bottom with a spatula. Bake for 30-35 minutes.
  • Remove chicken and broccoli from oven and allow to cool.divide rice into 4 1/2 cup servings. Divide chicken and broccoli into equal portions and place on top of rice.
