CHICKEN ALFREDO WITH CRISPY BACON (PAULA DEEN)
A recipe that I thought sounded delicious from Paula Deen's Comfort Food Magazine. Posting for safe keeping. Update 10/17/2013: Made this for DH and myself, so I made 1/3 of the recipe, but still made 2 pieces of bacon (will even make more next time) and I added some additional heavy cream as we like it creamy. We loved the addition of the bacon, onion and garlic to the normal Chicken Alfredo, DH even went back for seconds.

Steps:
- Heat a large skillet over medium heat. Add bacon; cook until crisp. Remove bacon to paper towels to drain, reserving drippings in skillet. Crumble bacon and set aside.
- Sprinkle chicken with salt and pepper. Brown chicken in drippings; add chicken broth. Cover and cook for 15 to 20 minutes or until cooked through. Remove chicken; shred meat.
- Add onion and garlic to skillet; cook for 7 minutes over medium-high heat or until onion is tender. Add shredded chicken to skillet, and stir in cream; cook for 5 minutes or until thickened slightly. Remove from heat; add cheese and parsley, stirring until cheese melts.
- Tossed cooked fettuccini with chicken mixture. Add enough reserved cooking liquid to reach desired consistency. Sprinkle with crumbled bacon and enjoy!
CHICKEN ALFREDO (W/CREAM CHEESE SAUCE)
This is a recipe I found a while back and have made a few embellishments on. Caution!!! Very rich!!! I use garden gourmet basil paste in all my recipes requiring basil. This stuff is amazing. If you can't find it sub fresh or dried basil. Just don't overdo it on the dried basil. I am not sure on the cook times yet and will edit that once I find out. The sauce can take some time to turn creamy

- Alfredo Sauce: 1) Melt butter and cream cheese together over med heat until creamy.
- Add heavy cream, parmesan cheese, garlic powder, basil paste, and salt and pepper to taste.
- Add chicken, zucchini, peppers, and broccoli. All of these indredients are optional except for the chicken. Unless you are doing some type of vegan thing.
- Once sauce is mixed, take it off the burner and set aside or put it on very low heat so it can thicken up. Use this sauce with any food that you want to use Alfredo sauce with.
- Serve fettucine, Spoon sauce/chicken mixture over noodles and put your garlic bread on the side.
- Enjoy.

CHICKEN BACON ALFREDO SAUCE
I was searching for a recipe that used chicken and bacon and was saucy. I couldn't find anything on Zaar, but a couple of the recipes that I found gave me ideas and this recipe is the result. I used a larger dish than a 9 x 13, but I am sure it would fit. This would the perfect meal for entertaining or as a comfort food. I hope you enjoy it!

- Fry bacon in a skillet on medium heat until done then drain, reserving bacon grease. Set aside in a 9 x 13 baking dish.
- Using some of the bacon grease, cook the chicken until it is no longer pink and the juices run clear. Drain and add to bacon in the baking dish.
- Saute shallots in 2 teaspoons bacon grease until transparent, then add to bacon and chicken mixture.
- Mix well and set aside.
- In a large mixing bowl, combine all cans of soup, evaporated milk, and sour cream.
- Whisk until it has a smooth texture and no lumps of soup.
- Stir in garlic powder, pepper, basil, and Parmesan cheese and mix until well blended.
- Pour the soup mixture over the meat and shallot mixture.
- Stir until well blended then evenly spread in the baking dish.
- Bake at 350 degrees for 20-30 minutes or until bubbly and brown around the edges.
- Stir and serve over fettuccine noodles.

BACON CHICKEN ALFREDO FETTUCCINE
Very rich and tasty meal, but also easy because it uses ready-made ingredients. It's not a fussy meal for busy night. My favorite Alfredo sauce has also added mushrooms in it for extra flavor that goes great together with bacon. Time for prep and cooking is quesstimated.

- Cook fettuccine according to package directions. Meanwhile, in a large skillet cook bacon over medium heat until crisp. Remove from pan using a slotted spoon. Set in on paper towels to soak up the grease and drain the skillet reserving 3 tablespoons of drippings.
- Season the chicken with salt and pepper. Cook chicken in the bacon drippings over medium high heat until juices run clear.
- Drain fettuccine, stir into skillet with the chicken. Add the Alfredo sauce, spinach, Italian seasoning, and bacon.
- Cook and stir occasionally until heated through.
- Sprinkle with Parmesan cheese.

EVERYTHING CHICKEN ALFREDO

- To make Everything Bagel seasoning, in a medium bowl, stir to combine toasted sesame seeds, poppy seeds, onion flakes, garlic flakes and salt.
- In a large skillet over medium heat, melt butter. Stir in the garlic and cook until fragrant, about 1 minute, then stir in the heavy cream. Bring to a simmer and stir in the chicken and 2 teaspoons everything bagel seasoning. Simmer for about 6-8 minutes until chicken is just cooked through, then stir in 1/2 cup grated parmesan cheese.
- Continue to cook at a simmer for 3-4 minutes, then stir in the cream cheese, fettuccini and broccoli. Stir to coat and top pasta with 1 tablespoon Everything Bagel Seasoning, 1/4 cup grated parmesan cheese, salt and pepper.

- Cook your pasta, while your chicken sautes, then add a little olive oil or butter to pasta to prevent sticking, lay on large platter or casserole dish; set aside.
- Coat the bottom of a skillet w/olive oil,and heat on med-high heat.
- Add chicken strips or chunks, lower heat to med.
- Sprinkle seasonings over meat to your liking.
- Saute meat until chicken is no longer pink.
- Pour chicken and pan drippings over pasta.
- In a heavy sauce pan, begin to heat cream cheese and butter on medium heat; slowly add milk.
- Stir until all clumps are out, add cheese, continue to stir, then add pepper.
- Once all is melted and hot, pour over pasta and chicken.
CHICKEN ALFREDO WITH MUSHROOMS AND ASPARAGUS
Adapted from a Sara Moulton episode on foodnetwork.com. This very much reminds me of my favorite meal at a locally well known Italian restaurant. For the Alfredo sauce, I use recipe #64196. (Since trying this, I can't stand the store bought stuff!) I also serve with a side of recipe #251337 and garlic bread.

- Heat oil in large, heavy skillet over moderate heat 2 minutes. Add mushrooms, onion, garlic, marjoram, thyme, and pepper and cook, stirring often, until the juice released from the mushrooms evaporates, about 5 minutes.
- Add chicken, alfredo sauce, and wine; adjust heat so mixture bubbles gently, then cook, stirring frequently, about 3 minutes.
- Add asparagus, cover and cook just until crisp-tender, 2-3 minutes; no longer or asparagus will become mushy.
