OATMEAL CINNAMON CHIPS COOKIES

I made these for the first time and they are real tasty so I thought I would share them. I got this recipe from the bag of Hersheys cinnamon chips. Times are approximate.

Number Of Ingredients 10

1 cup butter, softened
1 cup packed brown sugar
1/3 cup granulated sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
2 1/2 cups quick-cooking oats
1 2/3 cups cinnamon baking chips
3/4 cup raisins

Steps:

  • Heat oven to 350°F
  • Beat butter, brown sugar and granulated sugar until creamy.
  • Add eggs and vanilla; beat well.
  • Combine flour and baking soda; add to butter mixture, beat well.
  • Stir in oats, cinnamon chips and raisins (batter will be stiff).
  • Drop by heaping teaspoons onto ungreased cookie sheet.
  • Bake 10-12 minutes or until lightly browned.
  • Cool 1 minute; remove from cookie sheet and place on rack to cool compleetly makes about 4 dozen.

These are yummy cinnamon cookies made with graham cracker crumbs. If you want a little variation, throw in a bag of butterscotch chips. My kids love them plain. I find it easiest to freeze the dough in logs, then slice and cook them as I want them. Enjoy!

2 cups graham cracker crumbs
1 ½ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
¼ cup white sugar
1 ¼ cups packed brown sugar
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Stir together graham cracker crumbs, flour, cinnamon, baking soda, and salt in a mixing bowl; set aside.
  • Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Beat in the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in vanilla. Mix in the flour mixture. Scoop the dough out onto ungreased baking sheets by rounded spoonfuls.
  • Bake in the preheated oven until slightly browned at the edges, 9 to 11 minutes.

Number Of Ingredients 11

3/4 cup butter, softened
1 cup packed brown sugar
1/4 cup light corn syrup
1 large egg
1 cup cinnamon baking chips
2 1/2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup finely ground walnuts or 1 cup pecans
2/3 cup cinnamon baking chips
1 1/2 teaspoons shortening (not butter or margarine)

Steps:

  • Beat butter and brown sugar in a large bowl until fluffy.
  • Add egg and corn syrup; mix well.
  • Place 1 cup cinnamon chips in a microwave safe bowl. Microwave for 1 minute at 50% power; stir. If necessary, microwave at 50% power in 15 second increments, stirring after each heating, until chips are melted when stirred.
  • Stir melted chips into butter mixture.
  • Stir together flour, baking soda and salt; add to cinnamon chip mixture, beating just until blended.
  • Cover and refrigerate for 1 hour or until firm enough to handle.
  • Heat oven to 350* (300* convection oven).
  • Shape dough into 1 inch balls (or #60 scoop); roll each ball into nuts, lightly pressing nuts into dough.
  • Place dough 2 inches apart on ungreased cookie sheets. (Flatten cookies slightly if using convection oven.).
  • Bake 8 minutes (5 minutes convection) or until edges are firm. Cool slightly; remove from sheets to wire rack. Cool completely.
  • Prepare drizzle: Heat cinnamon chips and shortening in a medium microwave safe bowl. (Use same timing and heating method as above.).
  • Drizzle evenly over cooled cookies.
