These are the *best* bars and so easy to make, the trick to these is not to overbake, mine bake out perfectly in a 350 degree oven, second-lowest rack for 22 minutes, servings is only estimated --- add in 1 teaspoon cinnamon also if desired --- this was developed using full-fat peanut butter :)

1 cup butter or 1 cup margarine, softened
1 cup brown sugar, well packed
1 cup white sugar
1 tablespoon vanilla (can use 1 tablespoon maple syrup or 2 teaspoons maple extract)
2 large eggs
1 1/4 cups peanut butter
2 cups all-purpose flour
1 teaspoon baking soda
2 cups oatmeal (I use half quick cooking and regular oats)
2 cups semi-sweet chocolate chips

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking dish.
  • In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
  • Add in the peanut butter and beat until combined.
  • Add in eggs and beat until combined.
  • In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.
  • Mix in chocolate chips.
  • Transfer and spread into prepared baking dish.
  • Bake for 22-25 minutes or until JUST set (do not overbake).
  • Cool then cut into squares.

1-1/2 cups flour
1-1/2 cups old-fashioned or quick-cooking oats, uncooked
1/2 tsp. baking soda
1 cup butter, softened
1 cup packed brown sugar
3 cups JET-PUFFED Miniature Marshmallows
1 cup semi-sweet chocolate chunks

Steps:

  • Heat oven to 375°F.
  • Mix flour, oats and baking soda. Beat butter and sugar in large bowl with mixer until light and fluffy. Add flour mixture; mix well.
  • Press half the crumb mixture onto bottom and slightly up sides of 13x9-inch pan sprayed with cooking spray. Top with marshmallows, chocolate and remaining crumb mixture.
  • Bake 18 to 22 min. or until golden brown. Cool completely before cutting into bars.

This recipe has been around for a long time. It was one of my Mom's special occasion cookies 25 years ago. She made them often for church potlucks and holidays.

1 cup(s) butter, softened
2 cup(s) brown sugar
2 large eggs
4 teaspoon(s) vanilla extract, divided
3 cup(s) quick cooking oats
2 1/2 cup(s) all purpose flour
1 teaspoon(s) baking soda
1 teaspoon(s) salt
1 - (14 ounce) can sweetened condensed milk
1 1/2 cup(s) semisweet chocolate chips
2 tablespoon(s) butter
1/2 teaspoon(s) salt
1/2 cup(s) chopped walnuts

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 9 by 13 inch baking pan. In a large bowl, beat together 1 cup butter and brown sugar until fluffy. Mix in eggs and 2 teaspoons vanilla. In another bowl, combine oats, flour, baking soda, and 1 teaspoon salt. Stir into butter mixture. Set aside.
  • In a medium saucepan, heat sweetened condensed milk, chocolate chips, 2 tablespoons butter, and 1/2 teaspoon salt over low heat, stirring until smooth. Remove from heat. Stir in walnuts and 2 teaspoons vanilla.
  • Pat 2/3 of the oat mixture into the bottom of the prepared pan. Spread chocolate mixture evenly over the top, and dot with remaining oat mixture. Bake for 30 to 35 minutes in preheated oven. Let cool on a wire rack, then cut into bars.
