A very coconutty and chewy rice flour dessert. Traditionally, this is baked in banana leaves, but my family prefers the crispy edges, which is why I use a sheet pan. I have been testing out several types of chewy desserts using rice flour, and this seems to be the favorite.

1 (13.5 ounce) can coconut milk
1 (14 ounce) can sweetened condensed milk
1 stick butter, melted
4 eggs
2 (12 ounce) jars macapuno strings in heavy syrup
2 ½ cups sweet rice flour (mochiko)
1 cup packed brown sugar
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 12x17-inch rimmed baking sheet.
  • Beat condensed milk, coconut milk, and melted butter together in a large mixing bowl until combined. Add eggs, 1 at a time, and beat until combined. Add macapuno, 1 jar at a time, and beat until combined. Gradually beat in mochiko flour. Beat in brown sugar; beat in vanilla extract. Pour batter onto the prepared baking sheet.
  • Bake in the preheated oven until top is golden brown and sides are slightly dark brown, 45 to 50 minutes.
  • Allow to cool, about 20 minutes, before loosening the sides and cutting into squares.

1/4 cup butter, melted
2 cups packed light brown sugar
2 large eggs
1/4 teaspoon salt
2 cups sifted flour (sift before measuring)
1 teaspoon vanilla extract
1 cup pecans

Steps:

  • Combine butter and brown sugar in mixing bowl and beat well.
  • Beat in eggs, one at a time.
  • Add salt and sifted flour, mixing well.
  • Stir in vanilla and pecans.
  • Pour into a greased and floured (or use Bakers' Joy) 9x13-inch cake pan.
  • Bake at 325 degrees for 30 minutes or until cake tests done.
  • Cut into bars.

  • 2. In a large mixing bowl, beat coconut milk, condensed milk, and melted butter until combined. Add eggs, one at a time, and beat until combined. Do the same with both jars of macapuno strings. Gradually beat in mochiko flour. Follow that with the brown sugar and add vanilla extract and beat until combined.
  • 3. Pour batter into lined cookie sheet. Bake until golden brown and sides are slightly dark brown, about 45-50 minutes.
  • 4. Once cooled, loosen the sides, cut into squares and place it in a serving tray. Discard parchment paper.

1/2 c packed brown sugar
1/3 c light corn syrup
2 c quick cooking oatmeal
1/2 c coconut (optional)
1/2 c nuts (optional)
3 Tbsp butter

Steps:

  • 1. Preheat oven to 350° Add carrots and raisins to hot tap water. Allow to hydrate for a minimum of 5 minutes. Drain and squeeze out excess water
  • 2. In small sauce pan, melt brown sugar, corn syrup and butter on medium. Bring to a boil and cook for 3 minutes. Remove from heat
  • 3. To a mixing bowl add the cake mix, drained carrots and raisins(are in the box), coconut, nuts, oatmeal and egg. Mix by hand until blended
  • 4. Pour in the melted brown sugar, butter mixture and stir until well mixed
  • 5. Spread evenly into a 9x13 inch, lightly greased baking pan
  • 6. Bake for 30-35mins.
  • 7. Remove from oven and immediately press down on surface of hot cooked bars with spatula.

I mixed butterscotch, bourdeaux syrup and caramel sauce for mine, however, one of the three would work as well. **NOTE: Be sure the caramel or butterscotch you use is the thickest one you can find. If you use a thin one, it will cause problems when setting.

I found this recipe when we were first married 48 yrs ago. My family had always loved it. I hadn't made it now for several years but came across it again a couple of months ago and we still love it just as much!

1/2 c dates, chopped
1/2 c dried apricots, chopped
1 c hot water
2 1/2 Tbsp butter, cold
1 1/2 c all purpose flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves or allspice
1/4 tsp salt
3/4 c white sugar

Steps:

  • 1. In a large saucepan combine dried fruits, sugar, hot water, and butter. Bring to a boil and simmer for 5 minutes. Cool.
  • 2. Combine flour, baking soda, cinnamon, cloves or allspice, salt. Stir into cooled boiled mixture.
  • 3. Bake in 8X8 greased pan at 350 degrees for 35-40 minutes. Cool before cutting.
  • 4. You could frost it, but we've always liked it just plain.

1 box german chocolate cake mix
3/4 c butter, melted
1 c evaporated milk
1 pkg caramels (14 oz)
1 c walnuts, chopped
1 c ghirardelli chocolate chips
4 square semi-sweet baking chocolate
1/4 c half and half

Steps:

  • 1. Mix cake as directed on box. Add melted butter and only 2/3 cup of the milk.
  • 2. Pour half the batter into a greased and floured 13x9 dish.
  • 3. Bake at 350 degrees for 10-15 minutes.
  • 4. While cake is baking, melt caramels with the remaining milk.
  • 5. Remove cake from oven and pour caramel mixture over the cake. Sprinkle with 3/4 cup of nuts and all the chocolate chips.
  • 6. Add remaining half of batter on top. Return to oven and bake 20 minutes.
  • 7. Meanwhile, for the frosting, melt the semi-sweet squares of chocolate with the half n' half.
  • 8. When cake is done, remove from oven. Spread the frosting atop the cake. Sprinkle with remaining walnuts.
  • 9. Cover with plastic wrap and set in refrigerator overnight. Remove from frig and let it sit out to warm up a bit. Cut into one inch squares, and serve.

Number Of Ingredients 7

1-16 oz box(es) light brown sugar
3 large eggs
2 cup(s) self rising flour
1- 7oz can(s) coconut
2 cup(s) pecans, in pieces
1 stick(s) butter, melted
1 teaspoon(s) pure vanilla extract

Steps:

  • Mix brown sugar and eggs together.
  • Stir flour and coconut into brown sugar mixture.
  • Sprinkle pecans into the batter, drizzle the melted butter and vanilla over batter. Fold ingredients together. Mix well.
  • Bake in 9x13 pan sprayed with cooking spray (Baker's Joy, or Pam) Bake at 350 degrees for 25-30 minutes.
