Cevapi or Cevapcici Recipe - Croatian Food image

Cevapcici or cevapi, delicious grilled Croatian sausages with lots of garlic and paprika.

1.1 lbs ground beef
8.8 oz ground pork
1 larger onion (about 150 g/ 5.3 oz)
4 large garlic cloves
3 tablespoons chopped parsley
1 tablespoon sweet paprika
½ tablespoon hot paprika
½ teaspoon sweet smoked paprika
¾ teaspoon baking soda
2 tablespoons dried breadcrumbs
2-3 tablespoons water
¾ tablespoon vegeta or another vegetable stock powder
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Combine: Place the ground meat in a bowl. Chop the onion very finely and grate the garlic cloves. Add to the bowl. Add the chopped parsley, all sorts of paprika, baking soda, dried breadcrumbs, water, Vegeta, salt, and pepper. Mix well with the hand mixer fitted with the dough hooks.
  • Refrigerate: Cover the bowl with cling film/ plastic foil and leave to rest for 1 or 2 hours in the refrigerator.
  • Shape sausages: Take portions of the meat mixture, about 50-55 g/ 1.7-1.9 oz/ ¼ cup portions, and form the cevapi. The rolls should be about as thick as your thumb and about 7-10 cm/ 3-4 inches long. I had 18 sausages. You can easily double the recipe.
  • Grill the cevapcici on the hot grill pan or the barbecue for about 12-14 minutes, turning them several times in between, or until brown and cooked through. I checked by cutting one in the middle and then grilling the subsequent batches for the same time.
  • Serve hot as suggested above. The cevapcici can be reheated in the oven at 180 degrees Celsius/ 350 degrees Fahrenheit for about 10 minutes or until heated through. Check one; if it is not hot enough, give the sausages a few more minutes.

1 ½ pounds ground pork
1 pound lean ground beef
½ pound ground lamb
1 egg white
4 cloves garlic, minced
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground black pepper
1 teaspoon cayenne pepper
½ teaspoon paprika

Steps:

  • Preheat a grill for medium-low heat.
  • In a large bowl, combine the ground pork, ground beef, ground lamb and egg white. Add the garlic, salt, baking soda, black pepper, cayenne pepper and paprika. Mix well using your hands, and form into finger length sausages about 3/4 inch thick.
  • Lightly oil the grilling surface. Grill sausages until cooked through, turning as needed, about 30 minutes.

OH my, this brings back yummy memories. I dated a Cerb, way back when, and we ate these allot at festivals. I never got a recipe but found this one and put it in my "gotta try" file. I have used other recipes for the Frugal Gourmet and they were very good. I have yet to try these but in any case, let me know what you think. 1 lb ground lamb
1 lb ground veal
1 lb ground pork
1 large yellow onion, peeled and grated
3 garlic cloves, peeled and crushed
3 tablespoons Hungarian paprika, hot or
sweet paprika
1 pinch cayenne
2 tablespoons black pepper, freshly ground
salt
1 pinch nutmeg, freshly grated
olive oil, for basting
1 pint yogurt
1/2 cucumber, peeled, grated and drained for 1 hour
2 garlic cloves, peeled and crushed
1/2 lemon, juice of
salt, to taste
white pepper, ground, to taste
1 pinch cayenne pepper

Steps:

  • Meat:.
  • Mix all the ingredients thoroughly, except the oil.
  • Roll the mixture into little "cigars" about 1 inch by 3 inches. Rub lightly with olive oil.
  • Grill or broil until done, turning while grilling. Approximately 3 -5 minutes per batch.
  • Serve with yogurt sauce (recipe follows).
  • Yogurt Sauce for dipping:.
  • Mix all the ingredients together and serve with Cevapcici as a dip.

1 lb lean ground beef
1/2 lb ground lamb
1 egg white
4 garlic cloves, minced
1 teaspoon salt
