CHERYL'S BREAKFAST CASSEROLE

Prepare overnight, bake in the morning. This is a favorite of my family for Christmas Breakfast and they keep coming back for more!

2 1/2 c galic salad croutons
3 c cheddar cheese - grated
1 1/2 c canned mushrooms - optional
2 lb italian sausage - cooked, drained, crumbled
8 large eggs
2 1/2 c milk
2 can(s) cream of mushroom soup
3/4 tsp ground prepared yellow mustard

Steps:

  • 1. Make the night before: Place croutons in bottom of a greased 9 x 13 pan. Mix 2 cups cheese, mushrooms and crumbled sausage in a bowl. Mix well. spread over croutons.
  • 2. Combine eggs, milk, soup and mustard in a bowl. Mix well. Pour egg mixture over ingredients in pan, DO NOT STIR. Cover with foil, regrigerate, overnight.
  • 3. Bake uncovered at 350 degrees for 1 hour 15 minutes or until set. Cheese will make it oist. Take out of oven, sprinkle with 1 cup remaining grated cheese. Let sit for at least 15 to 20 minutes until cheese on top melts. Serve.

Get 'em out of bed on nippy fall mornings with this savory, Southwest-flavored breakfast casserole from Kathy Mead in Surprise, Arizona.

6 slices whole wheat bread, cubed
1/2 cup shredded reduced-fat Mexican cheese blend
1 can (4 ounces) chopped green chilies
4 eggs, lightly beaten
4 egg whites
2 cups fat-free milk
1 teaspoon ground mustard
1/2 teaspoon salt
Dash pepper

Steps:

  • In a 1-1/2-qt. baking dish coated with cooking spray, layer half of the bread cubes, cheese and chilies. Repeat layers. , In a large bowl, whisk the eggs, egg whites, milk, mustard, salt and pepper; pour over top. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 60-70 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.
