2 sticks unsalted butter or nondairy margarine, room temperature, plus more for pan
1/2 cup unsweetened Dutch-process cocoa powder
1/2 cup boiling water
1 tablespoon kirsch or other cherry-flavored liqueur (optional)
1 cup plus 2 tablespoons sugar
6 large eggs, separated (whites kept at room temperature)
1 2/3 cups finely ground almonds
Coarse salt
1/4 cup cherry preserves
6 large egg whites, room temperature
1 1/2 cups sugar
1 tablespoon kirsch or other cherry-flavored liqueur (optional)

Steps:

  • Preheat oven to 350 degrees. Make the cake: Butter a 9-inch springform pan. Whisk together cocoa and boiling water until cocoa dissolves and mixture is smooth. Stir in kirsch.
  • Beat butter and 1 cup sugar with a mixer on medium speed until pale and fluffy. Beat in egg yolks, 1 at a time, scraping down sides of bowl between additions. Add cocoa mixture and almonds, and beat until combined. Transfer to a large bowl.
  • Whisk egg whites and 1/2 teaspoon salt in the clean bowl of a mixer on medium-high speed until soft peaks form. With machine running, add remaining 2 tablespoons sugar, and whisk until stiff peaks form. Fold one-quarter of the whites into batter, then fold in remaining whites.
  • Pour batter into pan, and transfer to a baking sheet. Bake for 30 minutes. Remove from oven, and cover cake with parchment-lined foil. Bake until a toothpick inserted into the center comes out clean, about 30 minutes more. Transfer to a wire rack, and let cool for 45 minutes. Run a knife or an offset spatula around edge of cake to loosen, and release sides of pan to remove.
  • Make the meringue: Whisk egg whites and sugar in a clean heatproof bowl of a mixer set over a pan of simmering water until sugar dissolves and mixture is hot to the touch, about 3 minutes. Whisk on medium speed until soft peaks form. Whisk in kirsch. Whisk until stiff peaks form.
  • Spread cherry preserves on top of cake. Spread meringue over preserves using an offset spatula, making decorative swirls. Caramelize peaks of meringue using a handheld kitchen torch or under the broiler.

1 cup butter, melted
2 envelopes whipped topping mix (Dream Whip)
1 cup cold milk
1 teaspoon vanilla extract
1 package (8 ounces) cream cheese, softened
2 cans (21 ounces each) cherry pie filling

Steps:

  • Set aside 1/4 cup crushed cookies for topping. In a large bowl, combine remaining cookies and butter; spread into a 13-in. x 9-in. dish. Set aside. , In a large bowl, combine the whipped topping mixes, milk and vanilla; beat on low speed until blended. Beat on high for 4 minutes or until thickened and stiff peaks form. Add cream cheese; beat until smooth. , Spread over crust; top with pie filling. Sprinkle with reserved cookies. Cover and refrigerate for 12-24 hours before serving.

3 large eggs
1/4 teaspoon cream of tartar
3/4 cup granulated sugar
1 package (3 oz) cream cheese
1/2 cup granulated sugar
1/2 teaspoon vanilla
1 cup whipping cream
1 cup miniature marshmallows
1 1/2 cups fresh strawberries
1 can (21 oz) cherry pie filling
1 teaspoon lemon juice

Steps:

  • About 30 minutes before making the meringue shell, place an egg separator over a small bowl. Crack open each egg over the egg separator to separate the white from the yolk. (Save egg yolks for another recipe.)
  • Place the egg whites in a clean medium bowl, and let stand at room temperature up to 30 minutes.*
  • Heat the oven to 275°F. Line a cookie sheet with a piece of foil or cooking parchment paper.
  • Add the cream of tartar to the egg whites; beat with an electric mixer on high speed until mixture looks foamy. Beat in 3/4 cup sugar, 1 tablespoon at a time; continue beating about 5 minutes, stopping occasionally to scrape mixture from side and bottom of bowl with a rubber spatula, until mixture is glossy and forms stiff peaks when beaters are lifted. (Do not underbeat because the meringue shell won't hold its shape.) On the cookie sheet, shape the meringue into a 9-inch round with the back of a spoon, building up about a 1-inch side.
  • Bake 1 hour 30 minutes. Turn off oven; leave meringue in oven with door closed 1 hour. Remove from oven and cool on a cooling rack 2 hours longer.
  • Place a medium bowl and the beaters of electric mixer in refrigerator to chill. These will be used to beat the whipping cream, which beats better in a cold bowl.
  • Place block of cream cheese on a plate, and let stand at room temperature about 30 minutes to soften slightly. Or to soften cream cheese in the microwave, remove foil wrapper and place in microwavable bowl; microwave on Medium (50%) 45 to 60 seconds.
  • In a large bowl, stir together the softened cream cheese, 1/2 cup sugar and the vanilla until mixed; set aside.
  • Pour the whipping cream into the chilled bowl. Insert the chilled beaters in the electric mixer. Beat on high speed until whipped cream forms soft peaks when beaters are lifted. Gently fold the whipped cream and marshmallows into the cream cheese mixture.
  • Place the meringue on a serving plate, and spoon the filling onto the meringue. Cover; refrigerate at least 12 hours to blend the flavors but no longer than 24 hours.
  • Rinse the strawberries with cool water, and dry on paper towels. Cut out the hull, or "cap," from each strawberry with the point of a paring knife. Cut the strawberries lengthwise into slices to measure 1 cup. In a medium bowl, stir together the pie filling, strawberries and lemon juice.
  • To serve, spoon the berry mixture onto the filling. Or cut the meringue shell into serving pieces, and top each serving with the berry mixture.

2 packages (8 oz each) semisweet baking chocolate, coarsely chopped
1 cup butter or margarine
6 eggs
8 oz white chocolate baking squares, coarsely chopped (about 1 1/2 cups)
1 1/2 cups whipping cream
4 oz cream cheese (from 8-oz package), softened
1 can (21 oz) cherry pie filling
1/4 teaspoon almond extract
2 tablespoons amaretto

Steps:

  • Heat oven to 400°F. Spray 9-inch springform pan with cooking spray. In 3-quart saucepan, melt semisweet chocolate and butter over medium-low heat, stirring constantly, until smooth. Cool 30 minutes.
  • In medium bowl, beat eggs with electric mixer on high speed about 5 minutes or until about triple in volume. Using rubber spatula, fold eggs into cooled chocolate mixture. Pour into springform pan.
  • Bake 15 to 20 minutes or until edge is set but center is still soft and jiggles slightly when moved. Cool completely in pan, about 1 hour 30 minutes. Then cover and refrigerate 1 hour 30 minutes.
  • In medium microwavable bowl, place white chocolate and 2 tablespoons of the whipping cream. Microwave uncovered on High 20 to 40 seconds, stirring after 20 seconds, until chocolate is melted. Stir until well blended. In medium bowl, beat cream cheese on medium speed until smooth. Gradually beat in white chocolate mixture until smooth. Add 1 cup of the pie filling; beat on medium speed until well blended and cherries are broken up.
  • In chilled medium bowl, beat remaining whipping cream and almond extract on high speed until stiff peaks form. Fold in cherry-chocolate mixture until well blended. Spread over semisweet chocolate layer. Refrigerate at least 2 hours but no longer than 48 hours.
  • In small bowl, stir remaining pie filling and liqueur until well blended. Remove side of pan. Cut torte into wedges; place on individual dessert plates. Top individual servings with cherry sauce.

1 teaspoon vanilla
1 cup blanched whole almonds (about 4 ounces)
1/2 cup all-purpose flour
1 cup sugar
3/4 teaspoon salt
6 large egg whites
1/3 cup sliced almonds
Accompaniment: sour cherry sauce:
3 cups sour cherries (about 1 1/2 pounds)
1/2 cup sugar
1/2 cup water
1 teaspoon cornstarch mixed with 1 tablespoon water

Steps:

  • To make the torte:
  • In a small saucepan melt butter over moderately low heat and continue to heat until golden brown with nutlike fragrance. (Bottom of pan will be covered with brown specks.) Cool butter to warm and stir in vanilla.
  • Preheat oven to 375°F. Butter and flour a 9-inch round cake pan, knocking out excess flour.
  • In a food processor finely grind whole almonds with flour, 2/3 cup sugar, and 1/2 teaspoon salt.
  • In a large bowl with an electric mixer beat whites with remaining 1/4 teaspoon salt until they hold soft peaks. Add remaining 1/3 cup sugar gradually, beating until meringue just holds stiff peaks. Fold in nut mixture gently but thoroughly. Fold in butter gently but thoroughly (batter will deflate) and spread in pan.
  • Sprinkle top of batter evenly with sliced almonds and bake torte in middle of oven 35 to 40 minutes, or until it begins to pull away from side of pan and a tester comes out clean.
  • Cool torte in pan on a rack 15 minutes and invert onto rack. Flip torte right side up and cool completely. (Torte may be made 1 day ahead and kept in an airtight container at room temperature.)
  • Serve cake with sauce.
  • To make the sauce:
  • Working over a heavy saucepan pit cherries. In pan bring cherries, sugar, and water to a boil. Stir cornstarch mixture and add to sauce, stirring. Simmer sauce 2 minutes and cool to room temperature. (Sauce may be made 2 days ahead and chilled, covered. Bring sauce to room temperature before serving.) Makes about 3 cups.

Sour Cherry Chocolate Torte image

This is a simple, elegant chocolate dessert, with a slightly rustic look; it's perfect for dinner parties or any night. It has a wonderful combination of textures from the crust of the torte the moistness of the cake and cherries and the slight crunch from the almonds. We've been known to devour one with another couple as we played pinochle; a slice between hands and soon it would be gone! You can serve it warm (my favorite way) or at room temp. Always serve with real whipped cream.

1 (16 ounce) can tart red cherries, packed in water
6 ounces semisweet chocolate
1/2 cup almonds, ground very fine, plus
1/8 cup almonds, extra for the pan (see note)
6 ounces butter
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2/3 cup sugar
3 eggs
2/3 cup flour

Steps:

  • Pre heat oven to 350 degrees, butter a 9" spring-form pan dust with ground almonds (or fine, dry unseasoned bread crumbs), shake out extra, set aside.
  • Drain cherries, then spread in a single layer on several thicknesses of paper towel, while you continue to prepare the torte.
  • Melt chocolate in double boiler or microwave, watch carefully, don't allow any water to get in the chocolate or it will seize.
  • Cream the butter, add extracts and sugar, beat well; add eggs one at a time beating after each until mixed.
  • On low add chocolate, beat until mixed, add almonds, then flour mixing just until incorporated.
  • Spread about half or a little more of the batter into the pan (it is thick, using an offset spatula helps) place cherries one at a time over batter in a single layer, they can touch the sides, spoon and spread the remaining batter over the cherries, going slow helps prevent pull up.
  • Bake 45 -50 minutes, the cake will be dry and crusty on top and a toothpick will come out clean. Cool for 15 minutes on a rack, then remove sides of the pan, let stand until almost cool ( to serve warm this is about 30 minutes).
  • To remove bottom of the pan - cover cake with a rack and flip over, remove pan bottom - you may need to slip a thin spatula between the torte and pan bottom to loosen, cover cake with serving plate and flip back over ( I've been know to serve from the pan bottom, just keep your thin spatula handy).
  • Note: Almonds should be finely ground in a blender or food processor, they should be almost powdery). Almond meal or almond flour (fancy names for ground almonds) can be found in some health food stores or at Trader Joes, though it can be very pricey under some labels. I prefer the freshness of grinding the almonds myself.
  • Use real whipping cream unless you have dairy issues; a little kirsch added as you whip it is a nice touch.

DATE, DRIED-CHERRY AND CHOCOLATE TORTE

1/2 cup Black Sphinx or Medjool dates (3 oz), pitted and each cut into 6 pieces
1 cup dried cherries (preferably tart; 6 oz)
1 teaspoon baking soda
1 cup boiling water
1/4 cup brandy
1 1/3 cups all-purpose flour
1/4 cup unsweetened cocoa powder (not Dutch-process)
1/2 teaspoon salt
1 1/2 sticks (3/4 cup) unsalted butter, softened
3/4 cup sugar
2 large eggs at room temperature
1 teaspoon vanilla
3/4 teaspoon finely grated fresh orange zest
6 oz fine-quality bittersweet chocolate (not unsweetened), coarsely chopped
3/4 cup pecans (4 1/2 oz), finely chopped
Garnish: confectioners sugar
Accompaniment: brandied whipped cream

Steps:

  • Preheat oven to 375°F.
  • Combine dates, cherries, and baking soda in a heatproof bowl, then stir in boiling water and brandy.
  • Whisk together flour, cocoa, and salt.
  • Beat together butter and sugar until pale and fluffy. Add eggs 1 at a time, beating until just combined. Beat in vanilla and zest. Add half of flour mixture and beat at low speed until just combined. Add date mixture with liquid and beat at low speed until just combined. Add remaining flour mixture and beat until just combined. Stir in chocolate and pecans.
  • Pour batter into a generously buttered 24-cm (9-inch) springform pan, smoothing top. Bake in middle of oven until center is slightly rounded and top of torte is cracked (edges will be dark brown), about 55 minutes. Let torte stand 5 minutes in pan on a rack. Run a sharp small knife around side of pan to loosen, then remove side. Cool torte on rack.

This is my dad's favorite dessert. My grandma used to make it for her family. Whenever we'd have it at their house my grandpa would eat the cherries for me. Now dad does. Lately though I've split the recipe into two dishes and made one with the cherries and one with just a little of the filling for my nephew and I.

3/4 stick (6 tablespoons) unsalted butter

6 ounces fine-quality bittersweet chocolate (not unsweetened)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 cup semisweet chocolate chips
Accompaniment: lightly sweetened whipped cream

Steps:

  • Preheat oven to 325° F. and butter and flour a 9-inch springform pan, knocking out excess flour.
  • In a bowl stir together cherries, 1/4 cup sugar, and kirsch and macerate 15 minutes.
  • Cut butter into pieces and separate eggs. Coarsely chop bittersweet chocolate and in a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring occasionally. Remove top of double boiler or bowl from heat and cool mixture slightly. Stir in yolks, flour, and salt until combined well. Gently stir in cherries and chocolate chips until just combined.
  • In a bowl with an electric mixer beat whites until they hold soft peaks and gradually add remaining 1/2 cup sugar, beating until whites just hold stiff glossy peaks. Stir half of whites into chocolate mixture to lighten and fold in remaining whites gently but thoroughly. Pour batter into pan and smooth top. Bake torte in middle of oven 50 minutes to 1 hour, or until a tester comes out with crumbs adhering.
  • Cool torte in pan on a rack (top will fall slightly and crack). Run a thin knife around edge of torte and remove side of pan. Torte may be made 1 day ahead and kept, loosely covered with plastic wrap, at cool room temperature.
  • Serve torte with whipped cream.

  • Bake 25-30 minutes or until cake is set. (Cake will be fudgey; wooden pick inserted in center will not come out clean.) Cool completely in pan on wire rack.
  • Prepare cream layer as follows: In small mixer bowl, beat cream cheese and confectioners' sugar until well-blended. Fold in whipped topping and spread mixture over top of torte. Spread 1 cup cherry pie filling over cream layer; refrigerate 3 hours. With knife, loosen cake from side of pan; remove side of pan. As a pastor's wife, I am invited to many good dinners and get the chance to collect lots of recipes. This dessert comes from a cookbook put together years ago by my home church in Arkansas.

1-1/2 cups all-purpose flour
1/4 teaspoon salt
3/4 cup butter-flavored shortening
1 to 2 tablespoons cold water
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 cans (21 ounces each) cherry pie filling
3/4 teaspoon almond extract
1 carton (8 ounces) frozen whipped topping, thawed
1/2 cup chopped pecans

Steps:

  • In a small bowl, combine flour and salt; cut in shortening until the mixture resembles coarse crumbs. Add enough water to shape dough into a ball. , On a lightly floured surface, roll dough to fit a 12-in. pizza pan. Flute edges; prick bottom and sides with a fork. Bake at 425° for 10-12 minutes or until lightly browned; remove from the oven. Reduce heat to 350°. , In a small bowl, beat the cream cheese, sugar, eggs and vanilla until smooth; spread over crust. Bake for 10-12 minutes or until center is set. Cool completely on a wire rack. , Combine pie filling and almond extract; spoon over the cream cheese layer. Spread whipped topping over filling. Chill until ready to serve. Sprinkle with pecans.

This is a delicious cake, that is very moist and is perfect for any occasion. My mom often brings this when she's invited to a party. It's also a great cake for a brunch as it looks similar to a coffee cake.

1 cup vegetable oil
1 cup sugar
4 eggs
1 teaspoon vanilla
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 pinch cream of tartar
1 (20 ounce) can cherry pie filling

Steps:

  • Mix oil and sugar together with mixer.
  • Beat in 1 egg at a time until light and fluffy.
  • Add remaining ingredients and mix well.
  • Grease jelly roll pan (10 1/2 x 15 1/2).
  • Pour 2/3 of the batter in pan.
  • Spoon entire can of cherry pie filling over the batter in pan, then gently swirl through with a knife.
  • Pour remaining batter over and gently swirl through with a knife.
  • Bake 35-45 minutes at 350 degrees.
  • Cool until warm, and then drizzle with a powdered sugar glaze (1 cup powdered sugar and a tbl. or so of milk, blended well with fork).

2 packages (3 ounces each) ladyfingers
1 package (8 ounces) cream cheese, softened
1 cup plus 1 teaspoon sugar, divided
2 teaspoon vanilla extract, divided
2 teaspoons lemon juice
1 teaspoon grated lemon zest
2 cups heavy whipping cream
1 can (21 ounces) cherry or blueberry pie filling

Steps:

  • Place a layer of ladyfingers on the bottom and around the sides of an ungreased 9-in. springform pan. In a large bowl, beat the cream cheese, 1 cup sugar and 1 teaspoon vanilla until smooth. Beat in lemon juice and zest. In a small bowl, beat cream until it begins to thicken. Add remaining sugar and vanilla; beat until stiff peaks form. Fold into cream cheese mixture. Spread half over crust. , Arrange remaining ladyfingers in a spoke pattern over top. Evenly spread with the remaining cream cheese mixture. Top with pie filling. Refrigerate overnight.

This is my husband's grandmother's recipe. If you love cherries, you should love this. Prep time does not include cooling and chilling time.

6 egg whites
3/4 teaspoon cream of tartar
2 cups granulated sugar
1 cup walnuts, chopped
2 teaspoons vanilla
2 cups saltines or 2 cups Ritz crackers, crushed
1 pint whipping cream
4 tablespoons sugar
1 teaspoon vanilla (optional)
2 (21 ounce) cans cherry pie filling

Steps:

  • Beat egg whites and cream of tartar until stiff peaks form.
  • Add 2 cups sugar, nuts, vanilla and crushed cracker crumbs.; mix well.
  • Pour into a greased 9x13 baking dish.
  • Bake at 350 degrees for about 25 minutes.
  • Let crust cool completely.
  • Beat whipping cream until it thickens.
  • Add sugar and, if using, vanilla.
  • Beat well.
  • Cover crust with whipped cream mixture.
  • Add cherry pie filling on top of whipped cream mixture.
  • Refrigerate 2-3 hours.
  • Note: In place of the whipping cream, 4 T sugar and vanilla, I sometimes use 1 container (16 ounces) of Cool Whip.

1/4 cup cornstarch
1 1/4 cups sugar
1 1/3 cups cranberries (frozen whole unsweetened)
2 tablespoons kirsch (cherry brandy)
1 cup butter (European Style Unsalted Butter)
2 cups sugar
2 large eggs
2 1/2 cups cake flour
1 cup unsweetened cocoa
2 teaspoons baking soda
3/4 teaspoon salt
2 1/4 cups buttermilk
1 (1/4 ounce) envelope unflavored gelatin
3 tablespoons kirsch (cherry brandy)
2 cups heavy whipping cream
1 cup powdered sugar
1/4 cup butter (European Style Unsalted)
1/4 cup unsweetened cocoa
1 cup powdered sugar
1 tablespoon kirsch (cherry brandy)
1 -1 1/2 tablespoon milk

Steps:

  • Preparation of Cherry/ Cranberry filling: (Can be made a day ahead of time and refrigerated.)
  • Drain cherries reserving cherry juice. Combine sugar, cornstarch and (2/3 cup) cherry juice in a 2-quart saucepan.
  • Heat mixture until it comes to a full boil. Add cranberries. Let mixture simmer for 5 to 7 minutes until cranberries spilt open.
  • Add cherries and Kirsch and heat just until mixture returns to a boil. Pour mixture into a covered bowl and refrigerate until completely cooled.
  • Preparation of Cake:
  • Let butter and eggs come to room temperature (20-30 minutes). Preheat oven to 350°F
  • Prepare three round 9" x 1½" cake pans; lightly butter the sides and line bottoms with parchment paper.
  • Cream butter. Add sugar and cream together until light and fluffy. Add eggs one at a time, beating after each addition.
  • In a separate bowl, whisk together flour, cocoa, baking soda and salt. Add dry ingredients to butter mixture alternating with buttermilk.
  • Mix until well blended but do not over mix.
  • Divide batter evenly between 3 prepared pans. Bake 30 minutes or until top springs back when gently pressed and a wooden skewer inserted into the center comes out clean.
  • Cool 10 minutes, then remove from pans to a wire rack, peel off parchment paper and cool completely before assembling cake.
  • Preparation of the Whipped Cream filling: (prepare just before the cake is to be assembled.)
  • Combine gelatin and Kirsch in a small custard cup and let stand about 5 minutes to soften the gelatin.
  • Place the custard cup in a small pan of warm water and gently heat mixture over low heat, stirring until the gelatin has completely dissolved.
  • Remove from heat. Beat the cream in a chilled bowl until it holds soft peaks. Add powdered sugar and beat until it holds stiff peaks. Add in the gelatin mixture gradually beating until the mixture holds stiff peaks.
  • Preparation of Chocolate Icing: (Prepare after the rest of the cake is assembled and use immediately.)
  • Cream butter. Whisk together sugar and cocoa. Add sugar mixture alternating with Kirsch.
  • Beat mixture until fluffy adding only enough milk to make a thick spread-able icing.
  • Assembling the cake:
  • Place one layer, bottom side up, on a platter.
  • Spoon half the cherry/berry mixture onto the layer and allow the layer to absorb the syrup. Then cover with half the whipped cream mixture.
  • Place the second layer, also bottom side up, on top of the first layer. Cover with remaining cherry/ berry mixture (reserving about 5 cherries for garnishing the top of the cake.)
  • Top with the remaining whipped cream mixture.
  • Add third cake layer. Spread chocolate butter icing in the top of the third layer. Garnish with reserved cherries.
  • Refrigerate until ready to serve.

2 tablespoons white grape or apple juice
1 package (8 ounces) cream cheese, softened
2/3 cup sugar
1 teaspoon almond extract, divided
2 cups heavy whipping cream, whipped
1 can (21 ounces) cherry pie filling
Toasted sliced almonds and additional whipped cream, optional

Steps:

  • Split ladyfingers lengthwise; brush with juice. Place a layer of ladyfingers around the sides and over the bottom of a lightly greased 9-in. springform pan. , In a large bowl, beat cream cheese until smooth; add sugar and 1/2 teaspoon extract. 1 c margarine
3/4 c sugar
3 c crushed thin pretzels
18 oz softened cream cheese
1 tsp vanilla extract
2 c (one pint) cool whip
1 can(s) (21oz.) cherry pie filling
1/2 c confectioners sugar

Steps:

  • 1. Melt the margarine ,stir in the sugar and remove from heat.
  • 2. Add pretzels,mix and save 3/4 c. of the mixture for the top. Put the rest of the pretzel mixture in the bottom of a 9x13 pan.
  • 3. Beat the cream cheese,confectioners sugar,and vanilla till fluffy. Fold in the cool whip then spread half the mixture ontop of he pretzels in your pan. top with the pie fillingand add remaining half of cream cheese mixture on top of the cherry pie filling. Top with thr reserved 3/4 c.of pretzel mixture.
  • 4. chill 3 ta 4 hours and serve...You could use your favorite pie filling in place of the cherry pie filling.
