1/4 cup olive oil
2 pounds tilapia, red snapper, or orange roughy fillets
1/2 cup chopped fresh parsley
1/2 teaspoon dried crushed red pepper
4 cups cherry tomatoes, halved
1 cup Kalamata olives or other brine-cured black olives, chopped
6 garlic cloves, minced

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Sprinkle fish with salt and pepper. Add half of fish to skillet and sauté until just opaque in center, about 3 minutes per side. Transfer fish to platter. Repeat with remaining fish. Add parsley and crushed red pepper to same skillet; sauté 1 minute. Add tomatoes, olives, and garlic; sauté until tomatoes are soft and juicy, about 2 minutes. Season sauce with salt and pepper; spoon over fish.

When I was first dating my husband, we went to a small restaurant in Moss Landing and I had this dish. The sweet tomatoes, sour lemon and salty olives and capers are wonderful with the halibut. The chef was kind enough to list the ingredients for me. What I didn't remember exact amounts for, I improvised and it's close enough for me to what I had that day! If you can't get good cherry tomatoes, use any tomato chopped small. I've also subbed half the olive oil for stock when I'm feeling dietetic and that's good too. Not AS good, maybe, but good!

1/3 cup fresh lemon juice
2 teaspoons Dijon mustard
1/2 cup olive oil
1 cup cherry tomatoes, quartered
1/2 cup kalamata olive, pitted, chopped
2 tablespoons capers, rinsed, drained
2 tablespoons flat leaf parsley, chopped
2 lbs halibut steaks (for four pieces) or 2 lbs halibut fillets (for four pieces)

Steps:

  • Preheat oven to 400.
  • Mix lemon and mustard blend in oil 'til emulsified (I love my immersion blender!). Stir in tomatoes, olives, capers, salt & pepper.
  • Put the fish in a baking dish just large enough to hold them in one layer and pour the tomato mixture over it.
  • Cook the fish in middle of oven until just cooked through--depending on the thickness of your fish, it can vary from 10-20 minutes.
  • Stir in parsley, and serve fish with the sauce. Freshly ground black pepper is great, but the capers and olives usually have enough salt to carry the dish.
  • Excellent on angel hair pasta!

14 ounces penne pasta
1/2 cup extra-virgin olive oil, divided
1 1/4 pounds tuna steak, diced
2 cloves garlic, very thinly sliced
2 long red chiles, seeded and finely chopped
4 anchovies, chopped
2 pints cherry tomatoes
1 large handful small black olives, preferably Nicoise
1 handful basil leaves, torn
Sea salt and freshly cracked black pepper

Steps:

  • Cook the pasta according to the package instructions in a large pan of lightly salted boiling water. Once it achieves an al dente consistency, drain the pasta well.
  • Meanwhile, heat 1 tablespoon olive oil in a large frying pan over high heat. Add the tuna and cook, stirring occasionally, for 2 to 3 minutes until seared. Remove the fillets from the pan and set them aside.
  • Return the pan to high heat, and add the remaining oil, garlic, chiles and anchovies. Cook, stirring, for 1 minute.
  • Add in the tomatoes and olives, and cook, stirring occasionally, for an additional 5 minutes or until the tomatoes are slightly softened.
  • Incorporate the hot pasta and tuna to the pan, and gently toss the ingredients. Drop in the basil leaves and season the dish with salt and pepper, to taste. Serve immediately.

  • 1. 1. Heat 1 tablespoon oil and garlic in 12-inch skillet over medium heat. Cook, stirring occasionally, until garlic turns golden around edges but does not darken, 2 to 3 minutes. Add tomatoes and olives; cook until tomatoes begin to break down and release liquid, 1 to 2 minutes. Transfer mixture to bowl and cover with foil. Rinse skillet with water and dry well with paper towels. 2. 2. Add the butter and remaining oil in the skillet. When butter has melted, add half of asparagus to skillet with tips pointed in one direction; add remaining spears with tips pointed in one direction.   • For steak:
  • Mix first 6 ingredients in small bowl. Place steaks in large glass baking dish. Brush steaks with olive oil. Rub with herb mixture. Cover with plastic wrap and refrigerate at least 1 hour and up to 8 hours.
  • For tomatoes:
  • Mix all ingredients in large bowl. Season tomatoes to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature.)
  • Prepare barbecue (medium-high heat). Grill steaks until cooked to desired doneness, about 4 minutes per side for medium. Transfer steaks to cutting board. Cover with foil. Let stand 5 minutes.
  • Cut steaks across grain into 1/2-inch-thick slices. Arrange steak slices on large platter. Spoon tomatoes with juices over steaks and serve.

6 halibut fillets, 5 to 6 ounces each
2 lemons
2 tablespoons plus 1 teaspoon thyme leaves
1/4 cup sliced flat-leaf parsley
3/4 pound tiny fingerlings or other small potatoes
1/4 cup plus 3 tablespoons extra-virgin olive oil
1/3 pound haricots verts, stems removed, tails left on
3 extra-large eggs
6 ounces baby spinach, cleaned and dried
1/2 cup pitted Niçoise olives
1/2 cup thinly sliced shallots
6 tablespoons unsalted butter
1 teaspoon minced anchovy
1 cup small cherry tomatoes, cut in half
2 tablespoons sliced basil, green and opal if possible
Kosher salt and freshly ground black pepper

Steps:

  • Season the halibut with the zest of one lemon, 1 tablespoon thyme, and 2 tablespoons parsley. Cover, and refrigerate at least 4 hours.
  • Preheat the oven to 400°F.
  • Toss the potatoes with 2 tablespoons olive oil, 1 teaspoon thyme, and 1 teaspoon salt. Place the potatoes in a roasting pan, cover with foil, and cook 30 to 40 minutes, until they're tender when pierced. (Depending on their size, age, and variety, the cooking time will vary.)
  • Light the grill 30 to 40 minutes ahead of time. Take the halibut out of the refrigerator 15 minutes before cooking it, so it comes to room temperature.
  • Blanch the haricots verts in heavily salted water 2 to 3 minutes, until they're tender but still al dente. Remove to a baking sheet or platter to cool. Bring the water back to a boil, and carefully lower the eggs into the water. Turn the heat down to a very low simmer, and cook the eggs exactly 9 minutes. Remove the eggs to a bowl of ice water to cool completely. Peel the eggs, and cut them in half. Season with salt and pepper.
  • Place the spinach and olives in a large salad bowl.
  • Heat a large sauté pan over high heat for 1 minute. Pour in 1/4 cup olive oil, and add the sliced shallots and remaining tablespoon thyme to the pan. Cook 1 minute, until the shallots are just wilted. Add the haricots verts and the potatoes, and season with 1/2 teaspoon salt and freshly round pepper.
  • When the vegetables are hot, toss them into the bowl of spinach and olives. Season with another 1/2 teaspoon salt, pepper, and a generous squeeze of lemon juice. Toss well to dress the spinach and wilt it slightly. Taste for seasoning. Arrange the salad on a large platter. Tuck the eggs among the spinach leaves.
  • Meanwhile, when the coals are broken down, red, and glowing, brush the halibut with a little olive oil and season with salt and pepper. Place the fish on the grill, and cook 2 minutes. Give the fish a quarter-turn, and cook a minute or two more. Turn over, and cook until it's just barely cooked through; peek inside to check for doneness. When it's done, the halibut will begin to flake and separate a little, and the center will still be slightly translucent. Remember, the fish will continue to cook a little more once you take it off the grill. Arrange the fish on top of the salad.
  • Return the vegetable pan to the stove, and heat over medium-high. Add the butter, and cook a few minutes, until it starts to brown and smells nutty. Add the anchovy, cherry tomatoes, 3/4 teaspoon salt, and a few grindings of black pepper. Cook for 30 seconds, shaking the pan often, until the tomatoes release some of their juice. Squeeze some lemon juice into the butter, and taste for balance and seasoning. Stir in the basil and remaining 2 tablespoons parsley. Spoon the sauce over the fish and around the salad.
  • Note
  • Season the fish with lemon and herbs early in the day. You can roast the fingerlings, blanch the haricots verts, clean the spinach, cut the cherry tomatoes, clean the anchovies, and cook the eggs ahead of time.

1 teaspoon / 4 grams active dry yeast
1/2 cup / 120 ml lukewarm water
3/4 cup /90 grams unbleached all-purpose flour
1 teaspoon / 4 grams active dry yeast
1 cup / 240 ml lukewarm water
3 tablespoons extra-virgin olive oil
1 1/4 cups / 155 grams unbleached all-purpose flour
2 cups / 250 grams whole wheat flour or durum flour
1 3/4 teaspoons/ 12 grams fine sea salt
2 tablespoons extra-virgin olive oil
2 teaspoons chopped fresh thyme
1/2 pound cherry tomatoes, halved (about 1 1/2 cups)
16 imported black olives, halved lengthwise
Coarse sea salt (optional)
Several fresh basil leaves, cut in slivers or torn

Steps:

  • Make the sponge. Combine yeast and water in a large bowl or the bowl of a stand mixer and stir to dissolve. Whisk in flour. Cover with plastic wrap and let proof in a warm place until bubbly and doubled in volume, about 45 minutes.
  • Make the dough. If using a stand mixer, whisk together yeast and water in a small bowl and let stand until creamy, a few minutes. Add to sponge in the mixer bowl, along with olive oil. Add flours and salt and mix in with the paddle attachment for 1 to 2 minutes, until ingredients are amalgamated. Change to the dough hook and knead on medium speed for 8 to 10 minutes. Dough should come together and slap against the sides of the bowl. It will be slightly tacky. To make the dough by hand, combine yeast and water as directed and whisk into sponge with the olive oil. Whisk in all-purpose flour. Add salt and remaining flour, one cup at a time, folding it in with a spatula or a wooden spoon. When you can scrape out the dough , add flour to the work surface, put the dough on top and knead for 8 to 10 minutes, until soft and velvety. Return to the bowl (coat bowl lightly with olive oil first).
  • Cover bowl tightly with plastic wrap and let dough rise in a warm spot until doubled, about 1 1/2 hours.
  • Shape the focaccia. Coat a 12-x 17-inch sheet pan (sides and bottom) with olive oil. Line with parchment and flip the parchment over so exposed side is oiled. Turn dough onto the baking sheet. Oil or moisten your hands, and press out dough until it just about covers the bottom of the pan. Dough may be sticky. Cover with a towel and allow it to relax for 10 minutes, then continue to press it out until it reaches the edges of the pan. Cover with a damp towel and let rise in a warm spot for 45 minutes to an hour, or until dough is full of air bubbles.
  • Preheat oven to 425 degrees after 30 minutes of rising (30 minutes before you wish to bake), preferably with a baking stone in it. Place thyme and olive oil for the topping in a small saucepan or skillet and heat until thyme begins to sizzle. Count to 30 and remove from heat. Swirl the oil in the pan, then transfer to a measuring cup or ramekin and allow to cool.
  • With lightly oiled fingertips or with your knuckles, dimple the dough, pressing down hard so that you leave indentations. Arrange cherry tomato halves and olives on dough, pressing them into the dimples. Drizzle on olive oil and use your fingers to distribute any thyme that remains in the cup or ramekin over the tomatoes. Sprinkle with a little coarse sea salt if desired.
  • Place pan in oven on baking stone. Spray oven 3 times with water during the first 10 minutes of baking and bake 20 to 25 minutes, until edges are crisp and top is golden. If you wish, remove focaccia from the pan and bake directly on the stone during the last 10 minutes. Remove from oven, remove from pan at once and cool on a rack. If you want a softer focaccia, cover with a towel when you remove it from the oven. Sprinkle torn or slivered basil leaves over the surface of the focaccia. Serve warm or at room temperature.

  • Add the cherry tomatoes and heat till skins begin to pop.

  • Preheat oven to 400. In a large bowl, toss potatoes with 1 tbsp olive oil. Sprinkle generously with s&p. 1/4 cup olive oil
2 lbs tilapia fillets (red snapper or orange roughy)
1/2 cup fresh parsley, chopped
1/2 teaspoon dried red pepper flakes
4 cups cherry tomatoes, halved
1 cup kalamata olive, chopped
6 garlic cloves, minced

Steps:

  • Heat olive oil in heavy non-stick skillet over medium high heat. Sprinkle fish with salt and pepper. Add fish to skillet and saute until just opaque in the center, about 3 minutes on each side. Transfer fish to platter.
  • Add parsley and crushed pepper to same skillet and saute for one minute. Add tomatoes, olives and garlic. Saute about two minutes until tomatoes soften and get juicy. Season sauce with salt and pepper.
  • Spoon over fish and serve hot.

1 quart plus 1/4 cup olive oil
1/2 eggplant, peeled and cubed
Salt and freshly ground pepper
Flour, for dredging
4 ounces spinach pasta
1 teaspoon finely sliced garlic
2 anchovy fillets
1 pint cherry tomatoes, sliced in 1/2
1/4 cup whole black olives
1 tablespoon capers
4 sprigs fresh basil, leaves only
1 red tomato, cut in 1/2

Steps:

  • In a 12-inch skillet, heat 1 quart of olive oil until it reaches 375 degrees F.
  • Season the eggplant cubes with salt and pepper, and then dredge them in flour. When the oil is at the right temperature, add the eggplant and fry until golden brown. Remove with a slotted spoon and set aside to drain on paper towels.
  • Cook the pasta in a large pot of boiling, salted water until al dente.
  • Heat 1/4 cup olive oil in a medium saucepan over medium heat. Add the garlic and suate for 1 minute. Then add the anchovy fillets, cherry tomatoes, black olives, capers, and basil, and saute for 2 minutes.
  • Once the pasta is cooked, immediately drain it, and add it to the saucepan. Toss pasta with tomato mixture, and let flavors combine for 2 minutes.
  • To plate, divide the pasta among 2 plates, and spoon the extra sauce on top. Leave room on the side of each plate for the star-shaped tomatoes, and then spoon the eggplant on top of the tomato stars.

1/4 cup extra-virgin olive oil
4 garlic cloves, thinly sliced
1 pound cherry tomatoes
1/2 cup Gaeta or kalamata olives, pitted and halved
3 tablespoons capers, drained
2 teaspoons finely chopped fresh oregano
Coarse salt and freshly ground pepper
4 fillets (8 ounces each) striped bass, skinned

Steps:

  • Preheat the oven to 400°F. Heat 2 tablespoons oil in a medium skillet over medium heat until hot but not smoking. Add the garlic; cook, stirring, until just golden, about 30 seconds. Add the tomatoes; cook until the skins begin to split, 2 to 3 minutes. Stir in the olives, capers, and oregano; cook 30 seconds more. Season with salt and pepper.
  • Coat both sides of the fish with the remaining 2 tablespoons oil; season with salt and pepper. Transfer to a medium roasting pan, skinned side down. Spoon the tomato mixture over the fish. Cook until opaque, 10 to 15 minutes. Serve topped with sauce from the pan.

4 bone-in, skin-on chicken breasts (each about 3/4 pound)
1 teaspoon kosher salt
1 lemon, halved
1/2 cup Castelvetrano olives, pitted if desired
1/2 cup cherry tomatoes
8 to 10 sprigs fresh thyme

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat the oil in a large ovenproof skillet or shallow Dutch oven over medium-high heat until hot. Thoroughly pat the chicken very dry and sprinkle with the salt. Place skin-side down in the skillet and cook until the skin is crisp and golden brown, about 5 minutes.
  • Flip the chicken over. Add the lemon halves, olives, tomatoes and thyme to the skillet and transfer to the oven. Roast until the chicken is cooked through, about 25 minutes.

4 center-cut salmon filets
1 fennel bulb, thinly sliced (reserve fennel fronds)
2 cups cherry tomatoes
4 garlic cloves, thinly sliced
2 lemons, thinly sliced
1 cup kalamata olives
8 teaspoons dry sherry
4 teaspoons unsalted butter, divided
Parchment paper

Steps:

  • -Preheat oven to 450°F. -Cut out 4 (15-inch) squares of parchment. Fold in half and draw a large half heart, starting at the folded side. Cut out heart, and open up. -Place 1/4 of the sliced fennel on one side of the heart, sprinkle with a bit of salt and pepper. Top with 3 lemon slices. -Place salmon on top of lemon and fennel, season with salt and pepper. -Place 2 more lemon slices on top of salmon and top with 1 teaspoon of butter. -Sprinkle kalamata olives and cherry tomatoes on top of or next to salmon filet. -Pour 2 teaspoons of dry sherry over salmon. -Fold the other half of the heart over the fish and starting from the pointy end, start folding the ends in, overlapping as you go, to create an airtight package. Twist the ends if necessary to keep steam from escaping. (See tutorial here.) -Repeat with remaining hearts. -Place parchment packages on a large baking sheet (you may need 2), and bake for 10 minutes. -Using a knife, cut up the middle of the parchment and let the steam escape. Sprinkle with a little bit of fennel fronds. Transfer to a plate and eat straight from the parchment.

2 medium zucchini, cut in 1-inch pieces
2 tablespoons finely chopped shallots
2 cups cherry tomatoes or 2 cups grape tomatoes, red & yellow
1/3 cup pitted coarsely chopped black olives
1 teaspoon fresh rosemary, chopped
1/2 teaspoon salt
1/2 teaspoon ground pepper
4 chicken breasts, halves skinless pounded
1/2 cup dry white wine or 1/2 cup vermouth

Steps:

  • Heat 1 tablespoon of the oil in a large nonstick skillet over medium heat.
  • Add zucchini and cook, stirring occasionally. 6 minutes or until lightly browned; add shallot; stir 1 minute or until soft.
  • Add tomatoes, olives and rosemary; cook, stirring occasionally, 2 minutes or until tomatoes are hot BUT not collasped; season with 1/4 teaspoon salt and pepper, transfer to plate.
  • Add remaining 1 tablespoon oil to skillet; season chicken breast with remaining 1/4 teaspoon salt & pepper; cook turning once, 8 minutes or until browned on both sides and firm when pressed in center; transfer to a plate; keep warm.
  • Add wine to skillet and bring to a boil, return vegetables; cook 1 minute, stirring once or twice to reheat; transfer to platter; top with chicken breast and serve.

4 chicken breasts, bone in and skin on
1 teaspoon kosher salt
1 lemon cut in half
1/2 cup pitted black olives
1/2 cup cherry tomatoes
handful of thyme (about 8-10 stems)

Steps:

  • 1. Preheat oven to 450°F.
  • Heat the oil in an oven-proof skillet over medium-high heat.
  • Pat the chicken breasts dry, make sure they are very dry, and sprinkle the top with the salt.
  • Place the chicken breasts, skin side down, in the heated oil and sear for 5 minutes, or until skin is crisp and golden brown.
  • Flip the chicken over. Add the lemon, olives, tomatoes and thyme to the skillet and transfer to the oven.
  • Roast for 25 minutes, or until chicken is cooked through.
  • *The chicken breasts I used were 3/4 pound each.
