This cherry tomato-corn salad holds up well for summer picnics. Simply cut the raw corn from the cob -- no need to even cook it. Raisins are a surprise sweet addition.

2 pints cherry tomatoes, halved
salt, to taste
¼ cup mayonnaise
¼ cup sour cream
2 tablespoons rice wine vinegar
1 garlic clove, minced
3 cups fresh corn kernels
¼ cup torn basil leaves
1 small red onion, quartered and thinly sliced
½ cup raisins
salt and pepper to taste

Steps:

  • Salt tomatoes in a bowl and set aside. Whisk together mayonnaise, sour cream, vinegar and garlic; set aside. Add corn, basil, onion and raisins to tomatoes. Season with salt and pepper, and toss with dressing.

4 Vidalia onions (about 2 pounds, available seasonally at specialty produce markets and some supermarkets), peeled
2 cups cherry tomatoes, quartered
6 slices of lean bacon, cooked until crisp and crumbled
1/3 cup minced fresh basil or parsley leaves
1 large garlic clove, minced and mashed to a paste with 1/4 teaspoon salt
1 tablespoon balsamic vinegar
1 tablespoon red-wine vinegar
1/4 cup olive oil

Steps:

  • Season the onions with salt and pepper, wrap them individually in foil, and bake them in the middle of a preheated 350°F. oven for 45 minutes to 1 hour, or until they are tender. Let the onions cool in the foil and discard the foil. Chop the onions coarse, discarding the root ends, and in a bowl toss them with the tomatoes, the bacon, and the basil. In a small bowl whisk together the garlic paste, the vinegars, and salt and pepper to taste, add the oil in a stream, whisking, and whisk dressing until it is emulsified. Pour the dressing over the salad, toss the salad well, and serve it, chilled or room temperature, with grilled chicken or beef.

1/3 cup red onion, minced
1 cup cucumber, peeled, seeded and diced
3 tablespoons freshly squeezed lime juice, more to taste

Steps:

  • Combine watermelon, tomatoes, onion, cucumber, lime juice and oil in a large bowl. Season with salt and pepper. Cover and refrigerate for at least 1 hour.

2 pints cherry tomatoes, halved (quarterd if large)
salt
3 tablespoons extra virgin olive oil
1/2 medium red onion, chopped fine
2 tablespoons white wine vinegar
2 tablespoons fresh parsley leaves, minced
1 pinch cayenne pepper

Steps:

  • Toss tomatoes with 1/2 teaspoons salt in colander set inside bowl. Let drain for 30 minutes.
  • Meanwhile, heat oil and onion in small skillet over medium-low heat until onions are just tender, 5-7 minutes. Transfer to large bowl, and cool completely, about 20 minute. Whisk in vinegar, parsley, and cayenne.
  • Toss drained tomatoes, with onion mixture and let stand at rooom temperature for 30 minutes. Season with salt. Serve.
