1 lemon jelly, for diabetics
1 (8 ounce) can evaporated low-fat milk
1 (15 ounce) can crushed pineapple in juice
2 kiwi fruits
chocolate, grated

Steps:

  • Dissolve jelly in HALF required boiling water, leave to cool.
  • Add the can of pineapple and all the juice.
  • Whip up the milk, as much as you can (best if it has been in the fridge first).
  • Fold into the jelly until the milk changes colour.
  • Put into the fridge to set.
  • It's almost like a soufflĂ©, light and tangy. Decorate with fresh fruit or grate some diabetic chocolate over the top.

1 cup powdered sugar
1/2 cup nuts (optional)
1 (8 ounce) Cool Whip
1 (8 ounce) cream cheese

Steps:

  • Add powdered sugar to cream cheese and beat well.
  • Fold in cool whip.
  • Add drained pineapple and nuts.
  • Stir and chill.

My hairdresser gave me this recipe, and now I make it at work! Quick, easy and a crowd pleaser! As long as the pineapple and cherry are about equal in amounts, it will work.

1 (15 ounce) can pineapple chunks
1 (15 ounce) can cherry pie filling
1 (18 ounce) box yellow cake mix
1/2 cup butter

Steps:

  • Pour pineapple chunks and cherry pie filling into the bottom of a 9x11 pan. you can mix them, or leave as they are.
  • sprinkle dry cake mix evenly over the top.
  • cut butter into pats and place on top of the cake mix, spacing them kinda evenly.
  • bake at 350 degrees for about 25 minutes. it may take a little longer. (our oven is very old and varies from day to day!).
  • serve with ice cream or whipped cream!

CHERRY-PINEAPPLE BAVARIAN

This recipe dates back to the 1950's. It is refreshing on a hot summer day.

2 package(s) knox gelatine
1/2 cup(s) cold water
1 can(s) crushed pineapple in syrup (20 oz.)
3/4 cup(s) sugar
1/4 teaspoon(s) salt
1 tablespoon(s) lemon juice
1 teaspoon(s) vanilla
1/2 cup(s) maraschino cherries, sliced
1/4 cup(s) maraschino cherry juice
1 cup(s) whipping cream, whipped

Steps:

  • Soften gelatine in cold water. Drain pineapple and save the crushed pineapple for step 3. Measure pineapple juice; add maraschino cherry juice and enough water to make a total of 1 and 1/2 cups.
  • Heat juice over low heat; add gelatine and stir until gelatine is dissolved. Stir in sugar, salt, lemon juice and vanilla. Pour into mixing bowl and chill until slightly thickened.
  • Beat juice mixture with electric mixer until light and fluffy. Fold in crushed pineapple, cherries and whipped cream.
  • Pour into cold water-rinsed 1 and 1/2 quart mold and chill until firm. Unmold on serving platter.
