Cherry-Glazed Chocolate/Cream Cheese Torte image

One of my husband's co-workers brought this into work. He loved it so much he asked her for the recipe -- it's a quick and easy recipe and I've made it many times to bring to family get-togethers for those with a "sweet tooth". Cooking time does not include chilling time.

1/2 cup butter or 1/2 cup margarine, melted
1 cup sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
8 ounces cream cheese, softened
1 cup confectioners' sugar
1 cup Cool Whip, thawed
21 ounces cherry pie filling, divided

Steps:

  • Heat oven to 350 degrees. Grease bottom of 9-inch springform pan. In large bowl, stir together butter, sugar and vanilla. Add eggs; using spoon, beat well.
  • In a small bowl, stir together flour, cocoa, baking powder and salt; gradually add to egg mixture, beating until well-blended. Spread into prepared pan.
  • Bake 25-30 minutes or until cake is set. (Cake will be fudgey; wooden pick inserted in center will not come out clean.) Cool completely in pan on wire rack.
  • Prepare cream layer as follows: In small mixer bowl, beat cream cheese and confectioners' sugar until well-blended. Fold in whipped topping and spread mixture over top of torte. Spread 1 cup cherry pie filling over cream layer; refrigerate 3 hours. With knife, loosen cake from side of pan; remove side of pan. Serve with some remaining pie filling around each slice of the torte, if desired. Cover and refrigerate leftover torte.

This cake is a very easy to make, and a very refreshing desert. You can also use Blueberry pie filling for the topping.

1 box super moist cake mix - i prefer french vanilla
2 can(s) cherry pie filling
8 oz cream cheese
1 can(s) eagle brand condensed milk
1 pt heavy whipping cream

Steps:

  • 1. Mix cake according to directions on box and bake in 13 x 9 pan. When baked allow to cool.
  • 2. Whip heavy whipping cream until fluffy.
  • 3. Allow cream cheese to come to room temperature, then beat together with eagle brand milk.
  • 4. Add whipped cream to cream cheese mixture, blend
  • 5. Cut up 1/2 of cake into small pieces and place in bottom of Torte dish. Ice with 1/2 of Cream Cheese mixture, top this with one can of Cherry Pie filling. Do the same steps again to finish off another layer of the torte.
  • 6. Place Torte in refrigerator to chill a few hours. Best if made in the morning and eaten that evening.

3 oz cream cheese, softened
1/2 c butter, room temp
1 c sifted flour
1/2 t salt
1/2 c commercial cherry preserves, cut up
1/2 c chopped walnuts
1 t grated lemon peel

Steps:

  • Blend cream cheese and butter well, add flour and salt. For dough into a ball and chill for 4 hours. Mix preserves, nuts and lemon peel. Divide dough in half. Roll dough out on floured board into 12 z 10 in rectangle, 1/87" thick. Cut into 2-1/2" squares. Place 1/2 t preserves in center of square. Moisten edges and fold into triangles, using a fork to seal edges. Bake on ungreased cookie sheet at 350 deg for about 12 minutes. Dust with powdered sugar.
