CHERRY CRANBERRY SAUCE
My mother-in-law makes this super-easy sauce every Thanksgiving. Cherries give tart cranberries a slightly sweet flavor. I serve it alongside turkey, pork and ham.

Steps:
- In a large saucepan, cook sugar and water over medium heat until sugar is dissolved. Add cranberries and cherries. Bring to a boil. Cook uncovered, until cranberries begin to pop, about 6 minutes. Reduce heat; cook 20 minutes longer or until thickened. Pour into a serving dish. Cover and chill for at least 2 hours.

- Stir the cranberry juice cocktail, water, brown sugar, cinnamon stick, and allspice together in a saucepan; bring to a boil. Add the cherries to the cranberry juice mixture; cook another 2 minutes. Add the cranberries; continue cooking, stirring occasionally, until the cranberries pop, about 10 minutes. Remove from heat and chill in refrigerator 8 hours to overnight. Remove and discard cinnamon stick before serving.

- Combine the cranberries, sugar, 1 1/2 cups water, the cherry juice, dried cherries, rosemary and a pinch of salt in a medium saucepan. Bring to a simmer over medium heat and cook, stirring occasionally, until the cranberries burst and the sauce thickens, 15 to 20 minutes. Let cool slightly. Discard the rosemary sprig.
- Puree the sauce in a blender until smooth. Strain through a fine-mesh sieve into a serving dish, pressing the sauce through with a rubber spatula. Refrigerate until set, at least 3 hours or overnight.

INSTANT POT® CHERRY-ORANGE CRANBERRY SAUCE
This cranberry sauce practically makes itself! It's quick, and you won't have to keep a constant eye on it. Substitute the water for apple or orange juice, or do half water and half rum! - Combine cranberries, cherries, water, cinnamon, and salt in the inner pot of a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 2 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Switch to the quick-release method according to manufacturer's instructions to release remaining pressure, about 5 minutes. Unlock and remove the lid.
- Select Saute function and low heat. Add orange marmalade and brown sugar to the cranberry mixture. Cook and stir to combine, breaking up cranberries, 2 to 3 minutes. Turn off Instant Pot® and let cranberry sauce cool. Sauce will thicken upon cooling. Store in the refrigerator. For best flavor, bring to room temperature before serving.

- Put everything except the agar into a large sauce pan and heat until the cranberries burst and the liquid is reduced by half.
- Add the agar and stir. Bring back to a boil and then simmer for 5 minutes. Place in the fridge and let it set up.

VENISON CHOPS W/ CRANBERRY CHERRY MARSALA SAUCE

- Sauce: Combine Marsala and dried cherries in a deep saucepan. Boil to reduce mixture by 2/3 cup about 8 min. Mix n the remaining ingred. Bring to a boil stirring occasionally about 8 min. Cool slightly before serving with the venison. Venison Season the venison chops with rosemary, salt and cracked pepper. Heat oil in a large heavy saute pan for medium rare, brown the chops on med high heat for 2-3 min per side, basting with the oil in the pan. To serve, drizle or pool sauce on the plate and top with the chop, garnish with a sprig of rosemary if desired.
PORK TENDERLOIN WITH GINGERED CRANBERRY (OR CHERRY) SAUCE (5 PT
A quick scan of my recipe collection reveals my fondness for fruit sauces with poultry or pork. So when I found this one in a Weight Watchers cookbook, I was instantly taken with it. Though I will not try this until later this week, the presentation here includes my modifications. I have made this with dried cherries and it was superb, almost better than the original. If using cherries, reduce the amount of ginger a small amount. (5 points)

- Preheat oven to 425 degrees.
- Drizzle tenderloin with Worcestershire sauce sprinkle with mustard, pepper and salt.
- Heat a large cast iron skillet or other oven-proof pan over medium high heat. Apply a light shot of cooking spray. Sear the pork on all sides, cooking for about 3 minutes total.
- Place skillet into the oven and cook for Bake at 450 degrees for 15 to 20 minutes or until a meat thermometer inserted into thickest portion of pork registers 160°F Remove from oven and let stand 5 minutes before cutting.
- To prepare glaze, combine red wine, juice dried cranberries in a small saucepan. Bring to a boil and cook, uncovered, for 5 minutes, stirring frequently. Remove from heat and stir in ginger.
- To serve, slice pork into 8 or 12 slices, depending on desired thickness. Divide slices onto 4 serving places and spoon a quarter of the sauce over each portion (3 ounces pork and about 2 tablespoons sauce per serving).

HAZELNUT CHICKEN BREASTS WITH CRANBERRY CHERRY SAUCE

- Put the chicken breats in a shallow dish and spread them evenly on both sides with the mustard. Sprinkle both sides w/ the fresh herbs and salt & pepper. Cover dish w/ plastic wrap & refrigerate at least 2 hours or overnight. Preheat oven to 450. Spray a baking dish with Pam. Put the flour, salt & pepper in a shallow dish & stir to blend.In another dish,lightly beat egg and milk. Put hazelnuts or other coating in a 3rd dish. Dip chicken in flour to coat, remove excess. Then dip in egg mixture, allowing excess to drip off, then coat evenly with crust. Set each coated breast in baking dish--don't crowd. Bake until juices run clear, 12 to 15 minutes. Serve topped with cranberry-cherry sauce.

CHERRY-CRANBERRY SAUCE (FOR BEGINNERS)
I know that all of you great cooks will scoff at this recipe, lol, but my little granddaughter wanted to make something for Thanksgiving and everything seemed to be already taken care of except the cranberry sauce. Since it was late and we did not have any fresh or frozen cranberries, we decided to use what I had in my pantry. Of course, its nothing like the fresh, cooked sauce, but it will do, in a pinch. She was so proud that she got to stir it up all by herself. I have made it this way before (at the last minute) and everyone seemed to like it.

- Put the cranberry sauce into a medium sized bowl. Stir it with a fork until it is broken up very well.
- Pour in the cherry pie filling. Remember, you only need 1/2 of the can of pie filling. Stir the pie filling into the cranberry sauce until it is combined very well.
- Pour it into your favorite serving dish and place in the refrigerator for @ 4 hours or until set.
