30 chocolate wafer cookies (about 7 ounces), broken into pieces
5 tablespoons unsalted butter, cut into 1/2-inch cubes
3/4 pound fresh Bing cherries, pitted, coarsely chopped
1/4 cup sugar
1 tablespoon brandy (optional)
1/8 teaspoon almond extract
1 quart purchased vanilla ice cream, slightly softened
1/2 cup (about 3 ounces) miniature semisweet chocolate chips

Steps:

  • For sauce:
  • Bring whipping cream to simmer in heavy medium saucepan; remove from heat. Add chopped chocolate; whisk until smooth.
  • For crust and filling:
  • Preheat oven to 350°F. Grind cookies in processor until coarse crumbs form. Add butter and blend until crumbs cling together and are evenly moistened. Press crumb mixture over bottom and up sides of 9-inch-diameter glass pie dish. Bake crust until slightly puffed and darker, about 10 minutes. Cool crust on rack. Combine cherries, sugar and brandy, if desired, in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture comes to boil. Reduce heat; simmer until thick syrup forms, stirring often, about 10 minutes. Remove from heat. Mix in almond extract. Cool to room temperature.
  • Place ice cream in large bowl. Fold in cherry mixture and chocolate chips. Pack ice cream mixture into prepared crust. Cover pie and freeze. (Sauce and pie can be prepared 3 days ahead. Cover and refrigerate sauce. Keep pie frozen.)
  • Rewarm sauce over low heat. Cut pie into wedges; serve with sauce.

We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs. Important: be sure to use only fresh eggs for this recipe.

¼ cup butter, softened
1 (1 ounce) square unsweetened chocolate, chopped

2 1/2 pounds fresh Bing cherries, pitted and halved, or 2 pounds frozen cherries
1 cup granulated sugar
4 ounces semisweet chocolate, coarsely chopped
3 tablespoons cornstarch
Juice of 1 lemon
2 teaspoons pure vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon kosher salt
2 tablespoons unsalted butter, chilled and cut into small pieces, plus more for greasing the baking sheet
Four store-bought refrigerated 9-inch pie crusts (two 14.1-ounce packages)
2 tablespoons heavy cream
Granulated sugar, for sprinkling
1/2 cup heavy cream
1/2 cup sour cream
2 tablespoons light brown sugar

Steps:

  • For the filling: Put the cherries, granulated sugar, chocolate, cornstarch, lemon juice, vanilla and almond extracts and salt in a large bowl. Toss until the cornstarch dissolves. Let stand at room temperature until juicy, about 30 minutes. (If using frozen cherries, leave them frozen and toss them with the above ingredients).
  • Adjust an oven rack to the lower third of the oven and preheat the oven to 375 degrees F. Grease the bottom and sides of a 10-by-15-inch baking sheet with butter.
  • For the crust: To form the bottom crust, place 1 pie crust between two large pieces of floured parchment paper and roll into a 14-inch round. Lay the round over half of the prepared baking sheet; there will be overhang on the edges. Repeat the rolling process with a second pie crust. Lay it over the remaining exposed side of the baking sheet so that the two crusts overlap in the center of the pan; there will be overhang on the edges. Press together the overlapping crusts to make a tight seal. Transfer the filling to the crust and spread in an even layer. Dot the top with the butter.
  • For the lattice crust: Repeat rolling the remaining 2 pie crusts into two 14-inch rounds. With a chef's knife or a pizza cutter, cut each crust into 1-inch-wide strips. Lay half the strips diagonally across the entire pie, about 1-inch apart. Weave the remaining strips diagonally across the first strips to make a lattice pattern. Trim the the lattice ends leaving an overhang, Press together the ends and the bottom edge of the crust to seal, then fold and crimp the edge as desired.
  • Brush the lattice and edge of the crust with the cream and sprinkle generously with some granulated sugar. Bake until the crust is golden brown and the filling is bubbly, 45 to 55 minutes. (If the crust browns too quickly during baking, cover the pie loosely with foil.) Let cool.
  • For the topping: Meanwhile, whip the cream, sour cream and brown sugar in a large bowl to medium peaks. Cover and refrigerate until ready to use.
  • Serve the pie warm or at room temperature with dollops of the whipped topping.

2 batches Our Favorite Pie Dough, divided into 4 discs, 2 slightly larger and 2 slightly smaller, chilled
For the cherry-raspberry pie filling:
1 cup walnuts
1 1/2 pounds dark sweet cherries (about 4 cups)
1 1/2 pounds raspberries (about 4 cups)
1 cup granulated sugar
1/2 cup cornstarch
1 tablespoon vanilla extract
1/4 teaspoon kosher salt
For the chocolate pie filling:
3 cups granulated sugar
3/4 cup high-quality cocoa powder
6 large eggs
3/4 cup (1 1/2 sticks) unsalted butter, melted
16 ounces evaporated milk
1/4 teaspoon kosher salt
For the egg wash:
1 large egg
1 tablespoon whole milk
For the Royal Icing:
2 large egg whites
3 1/2 cups powdered sugar
1/2 cup heavy cream
Special equipment:
2 (8") springform pans; a pastry bag; a small circle tip

Steps:

  • Make the crust:
  • Coat springform pans with nonstick spray and line bottoms with parchment paper.
  • On a lightly floured surface, roll one large disc of dough to a 15" round; keep remaining dough chilled. Roll dough loosely around rolling pin, then unfurl it into one of the prepared pans. Gently lift and settle dough into bottom and up sides of pan. Trim any excess dough with scissors, leaving a 1/4" overhang, and transfer to refrigerator. Repeat with second large disc of dough and remaining pan. Chill at least 30 minutes.
  • On a lightly floured piece of parchment, roll out smaller discs of dough to 12" rounds. Transfer on parchment to a rimmed baking sheet. Chill at least 30 minutes.
  • Make the cherry-raspberry pie filling:
  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing once, until fragrant and slightly darkened, about 8 minutes. Let cool slightly, then coarsely chop.
  • Mix walnuts, cherries, raspberries, granulated sugar, cornstarch, vanilla, and salt in a large bowl until well combined.
  • Make the chocolate pie filling:
  • Blend granulated sugar and cocoa powder in a food processor until smooth, about 1 minute. Add eggs, butter, evaporated milk, and salt; process until well combined, another 1-2 minutes.
  • Assemble the pies:
  • Whisk egg and milk in a small bowl; set aside. Remove springform pans from refrigerator. Fill one crust with cherry-raspberry filling and the other with chocolate filling. Let thaw 5 minutes.
  • Brush edges of pie with egg wash, reserving any excess. Carefully top one pie with one smaller dough round, pulling it taught across the top and pressing the top and bottom crusts together to seal. Trim top crust to leave a 1/8" overhang, pinching excess dough together to seal. Repeat with second pie.
  • Brush top of cherry-raspberry pie with remaining egg wash. Using a sharp knife, cut several thin vents on surface of both pies. Chill 30 minutes.
  • Preheat oven to 400°F. Cover 2 rimmed baking sheets with foil. Transfer pies to sheets and bake until crusts are light golden, about 25 minutes. Rotate trays in oven, reduce temperature to 350°F, and bake until crusts are deep golden brown, 25 minutes more; cover crusts with foil or a pie shield if they begin to darken too much. Carefully transfer pies to a wire rack and let cool 30 minutes. Transfer pies to refrigerator and chill at least 4 hours or up to overnight.
  • Make the Royal Icing:
  • Beat egg whites and powdered sugar on medium-high speed in the bowl of a stand mixer fitted with the whisk attachment until white, thickened, and tripled in volume, about 5 minutes.
  • Transfer one-third of the icing to a medium bowl. Whip with a spatula, adding water by the teaspoonful, until icing no longer holds a peak but folds back on itself. Fit pastry bag with circle tip, then transfer Royal Icing to bag.
  • Add cream to remaining icing and continue whipping on medium-high speed until thick, about 5 minutes. Chill both icings at least 5 minutes.
  • Assemble the Birthday Pie:
  • Carefully remove pies from springform pans, trimming top edges of chocolate pie crust with a serrated knife to flatten if needed. Place chocolate pie on a cake stand or pie plate and pipe a thick ring of Royal Icing along top edge of pie. Pour cream-icing mixture into the center and evenly spread with the back of a spoon. Place cherry-raspberry pie on top and decorate with remaining Royal Icing. Chill at least 2 hours.
  • To serve, bring pie to room temperature for 15 minutes, then slice with serrated knife.

This is a never-fail pie that I have made on many occasions, it's absolutely fantastic! --- plan ahead the pie needs to chill for a minimum of 8 hours before serving --- it's also wonderful even without the chocolate-dipped cherries, the first time I made it I did use the cherries, the second time I made this I just drizzled the melted chocolate on the cold pie, then dolluped whipped cream around the edge of the pie :)

1 (12 ounce) package semi-sweet chocolate chips

  • Microwave the semi-sweet baking chips with 1/2 cup whipping cream until the chocolate begins to melt (about 1 minute) remove and whisk in 1/4 cup butter until smooth; let cool, whisking occasionally for about 10 minutes, or until the mixture reaches a spreading consistency.
  • Spoon half of the mixture over the ready-made pie crust.

  • Set oven to 350 degrees.
  • Bake for 25-30 minutes or until the center is set; remove from oven and cool to about room temperature.
  • Refrigerate for a minimum of 8 hours.
  • This next step with the cherries is optional, you can just drizzle the top of the cooled pie with melted chocolate and then dollop with whipped cream.
  • Place 16 maraschino cherries with the stems on paper towels; pat them dry.
  • Microwave the reserved chocolate mixture at MEDIUM for about 1 minute or until spreading consistency, stir until smooth.
  • Dip the cherries into the warmed chocolate mixture, then place on a baking sheet.
  • Chill the cherries for about 20 minutes (or longer).
  • Spread any remaining chocolate over the pie, then spoon 8 dollops of whipped cream (or Cool Whip topping) around the outer edges of the pie.
  • Place 2 chocolate-covered cherries on top of each dollop.

3 ounces bittersweet chocolate (do not exceed 61% cacao), chopped
Cherry compote:
1 pound fresh cherries, pitted, halved
1/2 cup cherry preserves
1/4 teaspoon almond extract
Crust:
Nonstick vegetable oil spray
6 ounces chocolate wafer cookies (about 25 wafers), coarsely broken
2 tablespoons sugar
Pinch of salt
5 tablespoons unsalted butter, melted
Mousse:
2 tablespoons water
1 1/2 teaspoons unflavored gelatin
1 1/2 cups heavy whipping cream, divided
6 ounces high-quality white chocolate (such as Lindt or Perugina), chopped
1 1/2 cups coarsely chopped pitted fresh cherries (about 9 ounces)
1/3 cup egg whites, room temperature
1/2 teaspoon almond extract
Pinch of salt
3 tablespoons sugar
Even easier: Use a purchased chocolate cookie crust.

Steps:

  • For dark chocolate shards:
  • Stir chocolate in medium metal bowl set over saucepan of simmering water until melted and smooth. Remove bowl. Place sheet of waxed paper on work surface. Pour chocolate onto paper. Working quickly and using offset spatula, spread chocolate in thin layer over paper into 10x10-inch square. Place second sheet of waxed paper over, pressing to release most air bubbles. Roll paper up tightly into 3/4-inch-wide roll and chill until set, about 2 hours. DO AHEAD: Can be made 5 days ahead. Wrap in plastic and keep chilled.
  • For cherry compote:
  • Stir cherries and preserves in medium saucepan over medium-high heat until preserves melt and mixture begins to simmer. Reduce heat to medium and continue to simmer until cherries begin to soften, stirring often, about 5 minutes. Stir in almond extract. DO AHEAD: Can be made 2 days ahead. Cover and chill. Rewarm slightly before serving.
  • For pie crust:
  • Preheat oven to 350°F. Lightly coat 9-inch-diameter glass pie dish with nonstick spray. Process broken cookies, sugar, and pinch of salt in processor until cookies are finely ground. Add melted butter; using on/off turns, process until incorporated. Press firmly and evenly onto bottom and up sides of prepared dish.
  • Bake crust until firm, about 12 minutes. Transfer pie dish to rack; cool completely.
  • For mousse:
  • Place 2 tablespoons water in small bowl. Sprinkle gelatin over; let stand until softened, about 10 minutes.
  • Meanwhile, stir 3/4 cup cream and white chocolate in small saucepan over medium-low heat until chocolate is smooth. Remove from heat. Add gelatin mixture; stir until dissolved. Transfer to large bowl. Stir in 3/4 cup cream. Refrigerate just until chilled but not set, stirring occasionally, about 1 hour.
  • Using electric mixer, beat chilled white chocolate mixture until firm peaks form. Fold in chopped cherries. Using clean dry beaters, beat egg whites in medium bowl until foamy. Add almond extract and pinch of salt and continue beating until soft peaks form. Gradually beat in sugar. Continue beating until stiff peaks form. Add egg white mixture to white chocolate mixture; fold just to incorporate.
  • Spoon white chocolate mousse into cooled crust, mounding in center. Unroll dark chocolate shards from waxed-paper roll (chocolate will break into long, curved pieces when paper is opened). Arrange shards decoratively atop mousse. Chill until mousse is set, at least 4 hours. DO AHEAD: Can be made 2 days ahead. Cover with cake dome and keep chilled.
  • Cut pie into wedges and serve with warm cherry compote.

2 cups glazed or maraschino cherries, drained and sliced in half
1/2 cup bourbon
1 rolled pie crust, store-bought or homemade
16 ounces cream cheese, at room temperature
2 cups powdered sugar
2/3 cup unsweetened Dutch-process cocoa powder
2 cups heavy whipping cream
1 teaspoon vanilla bean paste, vanilla extract or vanilla powder
Pinch of fine salt
1 cup heavy whipping cream
1/2 cup powdered sugar
1/2 teaspoon vanilla bean paste, vanilla extract or vanilla powder

Steps:

  • For the pie: The day before making the pie, put the cherries and bourbon in an airtight container and let set overnight.
  • Preheat the oven to 350 degrees F.
  • Line an 8-inch pie dish with the pie crust. Trim the excess off, crimp the edges and poke the bottom and sides with a fork. Place a piece of parchment or wax paper on the crust in the pie dish and fill three-quarters full with dried beans.
  • Bake for 15 to 20 minutes. Remove the beans and paper, return to the oven and finish baking until medium brown, another 15 to 20 minutes. Let cool completely.
  • In a medium mixing bowl, add the cream cheese, sugar and cocoa powder and whip until light and fluffy. Add the cream, vanilla and salt and whip on low to combine. Turn to high and whip until light and fluffy and stiff peaks form.
  • Drain the bourbon off the cherries (save the bourbon and make a nice cocktail for later). Reserve 5 to 6 cherries for decorating the top of the pie.
  • Spoon half of the chocolate mousse into the cooled pie shell and spread evenly. Sprinkle half of the remaining cherries over the filling. Spoon the rest of the mousse over the cherries and smooth out. Top with the remaining cherries.
  • For the topping: In the same mixing bowl, add the cream, sugar and vanilla and whip until stiff peaks form. Pipe or spoon on the topping and decorate with the saved cherries. Put in the fridge for at least an hour and up to overnight.

1 pkg private selection cherry cordial hot coco mix
1 2/3 c water divided
1/2 c sugar
3 Tbsp corn starch

  • 1. SEPARATE OUT 2 CUPS OF THE WORSE LOOKING STRAWBERRIES AND 1/3 OF THE RASPBERRIES. Crush the berries in a small sauce pan, add 1 cup of the water and the sugar.
  • 2. bring the berries to a slow boil for about 10 minutes, crush more with a masher.
  • 3. mix the corn starch in with the remaining 2/3C. water. When the berries have boiled for 10 minutes add the corn starch/water mixture while stirring.
  • 4. continue to stir constantly until the mixture thickens and turns clear (not cloudy white from the corn starch) Add the package of coco mix or any other coco mix that you like i.e.Quick.
  • 5. pour a portion of the mixture into the pie shell, spread around all the remaining cleaned strawberries and raspberries into the pie shell; pour the remainder of the strawberry mix over the strawberries. Spread around.
  • 6. refrigerate the pie until cool. sprinkle with chocolate pieces or whipped cream if you like before serving.

24 Oreo Cookies
¼ cup butter, melted
8 oz cream cheese, softened
1 cup powdered sugar
1 can cherry pie filling (21 oz)
1 cup Cool Whip, thawed
½ cup whipping cream
11½ oz milk chocolate morsels

Steps:

  • Place Oreo cookies into a food processor and pulse until broken into small crumbs.
  • Add the butter and pulse to combine.
  • Pour into a deep dish pie pan and push to bottom and sides.
  • Refrigerate for 30 minutes or until set.
  • Combine the cream cheese and powdered sugar and mix until creamed together.
  • Fold in the cherry pie filling and then the Cool Whip.
  • Pour into the Oreo pie crust then place back into the refrigerator while you prepare the ganache.
  • In a small saucepan, bring the whipping cream just to boiling over medium-high heat.
  • Remove from heat and add chocolate morsels, but do not stir.
  • Let stand for 5 minutes then stir until smooth.
  • Pour over pie and refrigerate at least 2 hours until set.

1 tub duncan hines frosting creations packets in cherry vanilla flavor
1 tub duncan hines frosting starter
1 pkg white baking chips
1/2 c maraschino cherries
1 1/4 c oreo cookie crumbs
2 Tbsp butter,melted
1/4 c sugar
1/4 c chocolate chips-white,dark,milk
1 Tbsp shortening

Steps:

  • 1. Line bottom of an 8x8"inch pan with foil, spray with non-stick spray, set aside.
  • 2. In a medium bowl mix the starter frosting and flavor packet, mixing well. set aside.
  • 3. Chop cherries into small pieces, leaving some halves for the tops of fudge. In a food processor blend cookies, with butter and sugar on pulse setting until crumbly and pasty. Pour into pan and press firmly.
  • 4. Melt white chocolate chips in a double-boiler or in microwave, stirring every 15-20 seconds. stop when almost melted and just continue stirring until all is melted.
  • 5. Mix white mix, with other frosting mix, and cherries quickly, pour over the crumb crust. Cover and refrigerate at least 30 min. Take out of pan.. should be a solid block. move to cutting board to cut into pieces. Top each piece with a cherry half, and then melt the remaining 1/4 cup chips with 1 tablespoon of shortening to drizzle over the tops... Enjoy!!!

1/2 cup brandy or cherry juice blend
CRUST:

3 tablespoons 2% milk
FILLING:
1/3 cup butter, softened
1-1/2 cups sugar
1/8 teaspoon salt
3 large eggs
3/4 cup all-purpose flour
1 cup chopped pecans
2 ounces semisweet chocolate, chopped
Sweetened whipped cream, optional

Steps:

  • Preheat oven to 325°. Toss cherries with brandy; let stand, covered, 1 hour., For crust, mix flour, sugar and salt. Whisk together oil and milk; add to flour mixture, tossing with a fork just until blended. Press onto bottom and up sides of a greased 9-in. pie plate., For filling, drain cherries, reserving 1 tablespoon brandy. Beat butter, sugar and salt until blended; gradually beat in eggs and reserved brandy. Stir in flour. Fold in pecans, chocolate and cherries; pour into crust., Bake until top is golden brown, 40-45 minutes. Cool on a wire rack. If desired, serve with whipped cream. Refrigerate leftovers.

4 (3 ounce) packages cream cheese, softened
1 cup sour cream
1/3 cup sugar
1/2 teaspoon vanilla extract

Steps:

  • Heat oven to 375. Break chocolate bars into small pieces and place in small microwave safe bowl. Microwave 1 to 1 1/2 minutes or until chocolate is melted and smooth when stirred. Cool. In small mixer bowl on medium speed, beat cream cheese and sugar until smooth. Add eggs; beat well. Stir in vanilla and melted chocolate until completely blended. Pour into crust. Bake 20 minutes or until almost set in center. Remove from oven. Prepare sour cream topping, spread over pie. Continue baking 10 minutes or just until set.
