TINY CHERRY AND ALMOND TEA CAKES

Each of these charming tea cakes is baked with a whole cherry inside -- stem, pit, and all. Be sure to warn guests about the pits, or remove the stems and pits before baking.

Number Of Ingredients 8

1 1/4 sticks (10 tablespoons) unsalted butter, plus more for muffin tin
1 cup all-purpose flour, plus more for tin
1 1/4 cups finely ground unblanched almonds
1 cup sugar
1 teaspoon coarse salt
5 large egg whites
4 teaspoons kirsch (cherry brandy)
30 sweet (Bing) cherries

Steps:

  • Preheat oven to 400 degrees. Brush 30 cups of 2 mini-muffin tins with butter, and dust lightly with flour.
  • Melt butter in a medium skillet over medium-high heat. When it begins to sputter, reduce heat to medium. Cook, swirling skillet occasionally, until butter has lightly browned. Skim foam from top, and remove skillet from heat.
  • Whisk together flour, ground almonds, sugar, and salt in a bowl. Add egg whites, and whisk until smooth. Stir in kirsch. Pour in butter, leaving any dark-brown sediment in skillet, and whisk to combine. Let stand for 20 minutes.
  • Ladle 1 tablespoon batter into each buttered muffin cup, filling about halfway. Push a cherry into each, keeping stem end up. With a small spoon, smooth batter over cherries to cover. Bake until a toothpick comes out clean and cakes are golden brown, 12 to 15 minutes. Let cool 10 minutes. Run a knife around edges to loosen, and unmold. Cakes can be stored in airtight containers at room temperature overnight.

1 cup sour cherry juice
3/4 cup sugar
1/2 cup water
1 teaspoon almond extract

Steps:

  • Combine 1 cup sour cherry juice, 3/4 cup sugar and 1/2 cup water in a medium skillet; cook over medium-high heat until syrupy, about 15 minutes. Stir in 1 teaspoon almond extract; let cool. Add seltzer.
  • For each drink, combine 2 to 4 tablespoons flavored syrup with 1 cup cold seltzer in an ice-filled glass.

1 cup powdered sugar
1 cup butter or margarine, softened
2 teaspoons maraschino cherry liquid
1/2 teaspoon almond extract
3 or 4 drops red food color
2 1/4 cups Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/2 cup drained maraschino cherries, chopped
1/2 cup white vanilla baking chips

Steps:

  • Heat oven to 350°F. In large bowl, beat powdered sugar, butter, cherry liquid, almond extract and food color with electric mixer on medium speed until blended. On low speed, beat in flour and salt. Stir in cherries.
  • Shape dough into 1-inch balls. On ungreased cookie sheets, place balls 2 inches apart.
  • Bake 8 to 10 minutes or until edges are light golden brown. Remove from cookie sheets to cooling racks. Cool 20 to 30 minutes.
  • In 1-quart resealable freezer plastic bag, place baking chips; seal bag. Microwave on High 35 to 50 seconds, squeezing chips in bag every 15 seconds, until chips are melted and smooth. Cut small tip from bottom corner of bag; drizzle melted chips over cookies.

CHERRY ALMOND SCONE RECIPE

A delicious cherry almond scone recipe that makes eight perfect triangle scones. Use the basic scone recipe and make it your own by adding your favorite fruit and nuts.

Number Of Ingredients 10

2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt ((reduce to 1/4 teaspoon if using salted butter))
8 tablespoons cold butter, diced
1 large egg
1/2 cup whipping cream
1/2 teaspoon almond extract
1/2 cup sliced almonds
1/2 cup dried cherries

Steps:

  • Dice a stick of butter and place back in the refrigerator.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a small mixing bowl, beat together the egg, whipping cream, and almond extract. Set aside.
  • Remove the butter from the refrigerato,r and using a pastry blender, cut it into the flour mixture. (You will have small chunks of butter. That's fine.)
  • Pour the whipping cream mixture into the flour/butter mixture.
  • Stir with a large spatula until the liquid is incorporated into the flour.
  • Add the dried cherries & almonds, and mix one more time.
  • Put the dough out onto a cutting board that's sprinkled with a little flour.
  • Using your hands, mold the dough together, and begin shaping into a disc.
  • Use a rolling pin to flatten the disc so it measures 8 to 9 inches in diameter.
  • With a large sharp knife, cut the disc into eight sections.
  • Place the sections on a cookie sheet lined with parchment paper, at least 2 inches apart.
  • Refrigerate the cookie sheet for 30 minutes.
  • When the refrigeration time is almost over, preheat your oven to 400 degrees F.
  • Remove the scones from the refrigerator. Brush with more whipping cream, and sprinkle with sanding sugar if desired.
  • Place the cold cookie sheet in the oven.
  • Bake for 20 to 25 minutes, watching closely at the end. Scones should be golden around the edges.
  • Remove to a cooling rack. Serve warm or at room temperature.

1 can (8 ounces) almond paste
1/4 cup butter, softened
1 cup sugar
3 large eggs, room temperature
1-1/2 cups fresh pitted cherries or blueberries
3 cups all-purpose flour, divided
4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup whole milk

Steps:

  • In a large bowl, combine almond paste and butter; beat until well blended. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. In a small bowl, gently toss cherries and 1 tablespoon flour. Set aside., Combine the baking powder, salt, remaining flour; add to the creamed mixture alternately with milk, beating well after each addition., Spoon a sixth of the batter into each of two greased and floured 8x4-in. loaf pans; sprinkle layers with half of the fruit. Cover with another layer of batter and sprinkle with remaining fruit. Top with remaining batter; smooth with spatula. , Bake at 350° until a toothpick inserted in the center comes out clean, about 1-1/4 hours. Cool for 10 minutes before removing from pans to wire racks to cool.

1 cup sugar
1/2 cup (1 stick) unsalted butter, room temperature
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1/2 21-ounce can cherry pie filling
1/2 cup thinly sliced almonds (about 2 ounces)

Steps:

  • Preheat oven to 350°F. Butter 10-inch-diameter springform pan. Beat sugar and butter in large bowl until light. Add eggs, vanilla extract and almond extract and beat well. Sift flour, baking powder, baking soda and salt into medium bowl. Mix half of dry ingredients into butter mixture. Mix in sour cream, then remaining dry ingredients.
  • Pour 2/3 of batter (about 2 cups) into prepared pan. Drop pie filling by tablespoons evenly over batter. Drop remaining batter by spoonfuls over pie filling. Using back of spoon, carefully spread batter over filling. Sprinkle with almonds. Bake until tester inserted into center of cake comes out clean, about 1 hour 5 minutes. Cool in pan on rack. (Can be prepared 1 day ahead. Cover with foil and store at room temperature.) Cut around sides of pan. Remove pan.
