800 g mixed fruit
2 cups orange juice
2 cups self-rising flour

Steps:

  • Mix fruit and orange juice and soak overnight.
  • Next day add 2 cups self raising flour.
  • Put in tin and bake for 1 or 2 hrs at 140-150°C.
  • (Scrumptious) (Use skewer to test finish time. When skewer comes out clean cake is done).

An excellent chocolate cake that is less crumbly than some egg free recipes and very moist. It also rises well and doesn't stick to the pan. Cocoa can be adjusted to taste if you like more/less chocolate flavor.

3 cups flour
2 teaspoons baking soda
2 cups sugar
6 tablespoons cocoa powder
1 teaspoon salt
2 tablespoons vinegar
2 teaspoons vanilla
3/4 cup oil (not olive oil)
2 1/2 cups water

Steps:

  • Preheat oven to 350 and grease or spray a 13 x 9 pan with cooking spray.
  • Sift together dry ingredients. Add remaining ingredients and mix until combined and smooth.
  • Pour into prepared pan and bake for 35-40 minutes or until toothpick inserted in center comes out clean. Allow to cool in pan before removing. Frost if desired.

1 cup whole wheat pastry flour
1 tablespoon baking powder
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/8 teaspoon clove
1/8 teaspoon allspice
2/3 cup soymilk
1/3 cup oil
1/3 cup molasses
1/3 cup maple syrup
1 1/2 tablespoons ginger (fresh minced)
2 teaspoons vanilla extract

Steps:

  • Lightly oil a 9-inch square baking pan.
  • In a large bowl, sift together both types of flour, baking powder, ground ginger, cinnamon, nutmeg, salt, cloves, and allspice, and set aside.
  • In a medium bowl, whisk together the remaining ingredients until well combined.
  • Add the wet ingredients to the dry ingredients and whisk until blended.
  • Pour the mixture into baking pan.

This recipe was given to my mother by a family friend. I remember tasting this for the first time as a young child and going nuts over it! It is the best peach pound cake I have ever had and the only one I ever want to have again!

1 cup butter, softened
3 cups sugar
6 eggs, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon almond extract
3 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
2 cups peeled chopped peaches

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 10 inch tube pan.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add eggs one a a time, beating well after each addition.
  • Stir in vanilla and almond extracts.
