- 1. Using a pressure cooker....Cook 1 hour...if cooking in Dutch Oven cook 5 hours same if cooking in Crock Pot.

- Wash and soak a pound of beans according to the directions on the package. Drain them and put them in a pot.
- Cover them with water and cook them until they are tender, adding more water if necessary.
- While the beans are cooking, saute chopped onions, minced garlic cloves, and jalapenos in olive oil. Add the vegetable mixture to the beans while they are cooking. Season with cumin, salt, and pepper.

This recipe originates from the booklet that came with my Futura pressure cooker. I love substituted low sodium ingredients because I am watching my sodium intake. I hope you like this.

Steps:
- Divide meat into 2 batches. Heat 2 tablespoons oil in cooker for about 2 minutes. Brown and remove first batch. Add another 2 tablespoons oil to cooker. Brown and remover second batch.
- Add remaining oil (4 tablespoons) to cooker. Add onions and garlic. Stir fry til onions are light brown. Add meat and remaining ingredients. Stir.
- Close cooker. Bring to full pressure on high heat. Reduce heat and chook for 18 minutes.
- Remove cooker from heat. Allow to cool naturally.
- Open cooker. Discard bay leaves. Serve hot.

Anasazi Beans are offered by the Adobe Milling Co and can be ordered online from Colorado. Great beans! Named after the ancient Native Americans in that area. Great as a tortilla filling or side dish.

- Cook beans at a gentle boil in 3 cups water, covered, until tender, about 1 1/2 hours.
- Drain beans and save liquid.
- Saute onion, green pepper, garlic and bacon; mash beans together with sauteed mixture, adding a little liquid at a time, until bean mixture is smooth.
- Can be frozen.
