Yield Serves 4-6

Number Of Ingredients 11

1 zucchini, chopped
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup baby carrots, chopped
1 large egg
1 garlic clove
1 tablespoon worcestershire sauce
1 teaspoon italian herbs
1/2 cup bread crumbs
1/2 cup shredded cheddar cheese
1 pound lean ground turkey

Steps:

  • Spray a nonstick mini muffin tin with vegetable oil cooking spray or grease with oil.
  • Place the zucchini, onions, bell peppers, carrots, and garlic clove into the food processor and pulse until everything is in tiny pieces.
  • Add the egg, worchestershire sauce, herbs, bread crumbs, cheese, and turkey. Pulse until everything is combined.
  • Place about a tablespoon of the meatloaf mixture in the muffin pans and pack down with a spoon.
  • Bake until the mini turkey loaves are cooked through or an instant-read thermometer inserted in the center registers 165 degrees F, about 20 minutes.
  • This recipe can also be baked in a 9 x 5 inch loaf pan and baked for 50 minutes. To Freeze: After baking, let bites come to room temperature, place in a ziploc bag, label and freeze up to 3 months. When ready, defrost over night in the fridge and place in a 300 degree oven for 5 minutes to reheat.

These meatloaf bites will be the hit of your next dinner; kids love these and they go great with mashed potatoes and and green beans. Any ground meat can be used for these little guys; including turkey,sausage, chicken or beef.

1 c panko breadcrumbs, divided
1 c finely grated parmesan cheese, divided
1 Tbsp olive oil
1 large eggs
1 c diced onion
1 1/2 tsp italian seasoning
1/2 c evaporated milk
1/ tsp pepper
1 tsp ground mustard
1 Tbsp brown sugar
2 lb ground turkey
6 oz mozzarella cheese, low-fat -cut into 12 bite-size pieces
16 oz jar pasta sauce, or your own, heated

Steps:

  • 1. Heat oven to 375^. Spray well a 12 count muffin tin.Set aside. --- Combine 1/2 c. of the panko crumbs and 1/2 c. of thParmesanan cheese with the olive oil in a small bowl, set aside.
  • 2. In a large bowl beat egg until light in color. Add remaining 1/2 c. panko crumbs and 1/2 c. cheese; and remaining ingredients, except the mozzarella cheese and the tomato sauce.Combine well , but do not over mix, so it doesn't get mushy.
  • 3. Divide the mixture in the muffin pan. Place one hunk of cheese in the center of the mixture and enclose it with the meat. Smooth the top over.
  • 4. Sprinkle the reserved breadcrumbs and cheese/olive oil mixture over tops of each cup, press lightly down to adhere. Place muffin tin on foil covered baking sheet to catch any overflow- to keep oven clean.
  • 5. Bake until cooked through about 25-30 minutes. Remove to wire rack for a few minutes. Loosen meatloaf bites with a small kitchen knife. Serve with mashed potatoes or cooked pasta with hot pasta sauce.
