This can also be baked in a 10-inch pie plate or an 11 x 7-inch baking dish, also use as much shredded cheese as deired. Use the frozen potato patties for this, not hash browns.

1 (15 ounce) package frozen potato patties (slightly thawed)
1 tablespoon melted butter
2 cups shredded swiss cheese (can use more cheese)
2 cups finely chopped cooked ham
1 (10 ounce) can sliced mushrooms, well drained
4 large eggs
2 tablespoons whipping cream or 2 tablespoons 18% table cream
1 teaspoon seasoning salt (or to taste)
black pepper
1/4 teaspoon paprika

Steps:

  • Grease a 9-inch baking dish.
  • Cut and fit the potato patties into the bottom of the pie plate; press firmly, then brush with melted butter.
  • Bake at 425 degrees for about 20 minutes; remove from oven.
  • Reduce oven temperature to 350 degrees.
  • Sprinkle with grated cheese, ham and mushrooms.
  • In a small bowl whisk together eggs with whipping cream, seasoned salt and black pepper, then pour over the pie.
  • Bake for 30-40 minutes or until center is set.
  • Let stand for 10 minutes.

A hearty Alpine-style bake with rich cheese and smoky bacon - ideal after a day on the slopes...or just a walk round the park

1kg floury potato , cut into bite-sized chunks
knob of butter
1 onion , chopped
200g smoked bacon , cut into small pieces
125ml dry white wine
142ml pot double cream
350g raclette cheese , grated
½ tsp smoked paprika

Steps:

  • Heat oven to 200C/fan 180C/gas 6. In a large pan, boil the potatoes for 5 mins, then drain and tip into a large mixing bowl.
  • Melt the butter in a saucepan and gently fry the onion until soft. Add the bacon and cook for a further 5 mins. Mix the bacon and onion with the potatoes in the bowl.
  • Stir in the wine, cream, most of the cheese and a little paprika. Season and mix together, then spread over a large (30cm long x 4cm deep) buttered baking dish. Sprinkle with the remaining cheese, cover with foil and cook for 25 mins. Remove the foil, sprinkle a little more paprika over the top and cook for a further 20 mins until the cheese is golden brown.

1 cup shredded Swiss cheese
4-1/2 teaspoons butter, cubed
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon dried marjoram
3 medium potatoes, peeled and thinly sliced

Steps:

  • In a bowl, combine the first five ingredients. In a greased 1-qt. baking dish, layer a fourth of the potatoes and a fourth of the cheese mixture. Repeat layers three times. Cover and bake at 400° for 60-75 minutes or until potatoes are tender.

2 1/4 lbs starchy potatoes, cut into bite-sized chunks
2 tablespoons of butter
1 small onion, chopped
7 oz. smoked bacon, cut into small pieces

12 oz. raclette cheese, grated
½ tsp smoked paprika

  • 1. Heat oven to 400F/200C/fan 180C/gas 6. In a large pan, bring water and potatoes to a boil, and boil the potatoes for 5 mins, then drain and tip into a large mixing bowl.
  • 2. Melt the butter in a saucepan and gently fry the onion until soft. Add the bacon and cook for a further 5 mins. Mix the bacon and onion with the potatoes in the bowl.
  • 3. Stir in the wine, cream, most of the cheese and a little paprika. Season (with salt and pepper to taste) and mix together, then spread over a large (30cm long x 4cm deep) buttered baking dish.
