CHEESY BACON STRAWS

1/4 cup maple syrup
2 teaspoons red pepper flakes
1/2 orange, juiced
1 pound regular uncured bacon (not thick cut)
1/4 cup finely shredded Cheddar

Steps:

  • Preheat the oven to 375 degrees F and fit a baking sheet with a wire rack.
  • In a small saucepot, mix the maple syrup, red pepper flakes, orange juice and 1/4 cup water. Bring to a boil, then remove from the heat.
  • Line up the bacon slices on the wire rack and brush with the hot maple syrup mixture. Sprinkle some cheese on each piece of bacon. With a skewer in hand, fold the end of a piece of bacon in half lengthwise and press the skewer through the end. Do this to 4 pieces of bacon, spreading them out evenly across the skewer, and place the skewer on the baking sheet. Twist the bacon pieces into long spirals so as to create straws. Take another skewer and skewer the bottom of each piece of bacon to keep the bacon twisted. Do this to all the bacon.
  • Bake until the bacon browns, about 35 minutes. Let cool slightly on the rack; the bacon will get crunchy as it sits. Serve immediately.

1 ½ cups shredded Cheddar cheese
1 cup all-purpose flour
¾ cup cold butter, cut into small pieces
¼ cup grated Parmesan cheese
¼ teaspoon cayenne pepper
¼ teaspoon salt
1 ½ tablespoons milk
2 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Process Cheddar cheese, flour, butter, 1/4 cup Parmesan cheese, cayenne pepper, and salt in a food processor until large crumbs form; transfer to a bowl. Stir milk into the cheese mixture until it forms a ball of dough.
  • Roll dough out onto a lightly floured work surface to about 1/8-inch thick. Use a pizza cutter or thin knife to trim the edges of the dough to leave a large square with sides measuring 7 to 8 inches. Cut dough into 1/3-inch strips and arrange onto a baking sheet.
  • Bake in preheated oven until puffy, about 15 minutes. Sprinkle 2 tablespoons Parmesan cheese over the warm cheese straws.

2 cups all-purpose flour
1/2 cup butter, softened
4 cups shredded cheddar cheese
Salt and pepper to taste
Paprika or garlic salt, optional

Steps:

  • Preheat oven to 425°. In a food processor, combine flour, butter and cheese. Cover and process until well blended. Divide into four portions; shape each into a ball. Roll between pieces of waxed paper or plastic wrap into 7x5-in. rectangles. , Cut into 5x1/2-in. strips. Place on ungreased baking sheets. Sprinkle with salt, pepper and, if desired, paprika or garlic salt. , Bake 10-12 minutes or until lightly browned. Remove to wire racks to cool. Freeze option: Freeze cooled cheese straws in resealable plastic freezer bags. To use, reheat on an ungreased baking sheet in a preheated 350° oven until crisp and heated through.

Lovely cheesy pastry straws with a little spice and Dijon mustard. Ideal as an appetizer or snack, and great with soup.

2 cups all-purpose flour
1 teaspoon salt
½ cup butter
1 ¼ cups shredded sharp Cheddar cheese
2 egg yolk
1 ½ teaspoons Cajun seasoning
1 ½ teaspoons Dijon mustard

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). lightly grease two baking sheets.
  • In a medium bowl, stir together the flour and salt. Rub in the butter using your hands until the mixture resembles coarse crumbs. Add the cheese, egg yolks, Cajun seasoning and mustard, and mix until it comes together. Knead for a few turns to be sure the cheese is evenly distributed.
  • On a lightly floured surface, roll the dough out into a rectangle about 1/4 inch thick, and about 7x10 inches. Cut into thin straws using a chef's knife or pizza cutter. Place straws onto the prepared baking sheets, and straighten them out as best you can.
  • Bake for 8 to 10 minutes in the preheated oven, until lightly toasted. Cool on wire racks.

My cheese straws have been a big hit every time I've made them. From Saturday's lunch to new years eve party- they always go down well.

Number Of Ingredients 7

75g / 3oz wholemeal flour
60g / 2 and a half oz plain flour
125g / 4oz butter, cubed
1 egg (seperated)
60g / 2 and a half oz chedder/parmasan mixed and finely grated
half tsp mustard powder
1 tsp poppy seeds and seseme seeds

Steps:

  • Preheat the oven to 200 degrees centigrade / 400 degrees fahrenheit / Gas mark 6.
  • Rub the wholemeal flour, plain flour and butter untill you have crumbs. Add the egg yolk, cheese and musterd powder. Mix, then kneed into a ball.
  • put some flour on your work surface and roll out the dough to approximately 5mm thick.
  • Cut the pastry into straw sizes about 1 and a half cm wide and 15 cm long. Brush them with the beat egg white and sprinkle each straw with either the poppy seeds or the seseme seeds.
  • Using a fish slice, put each straw onto a lightly greased oven tray. Bake for about 10 minutes, until lightly golden.
  • Once cooked put them immeidietly on a wire rack to cool.
