2 teaspoons salt
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
¾ cup shredded Swiss cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a casserole dish.
  • Arrange sliced potatoes in the casserole dish; season with salt.
  • Melt butter in a saucepan over medium heat. Stir in flour until a paste forms. Pour in milk gradually, stirring constantly, until a thick white sauce forms, about 5 minutes. Stir in cheese and remove from heat. Pour sauce over the potatoes.
  • Bake in the preheated oven until potatoes are cooked through and tops are lightly browned, about 1 hour.

2 cups diced ham
½ onion, chopped
2 cups milk
1 cup frozen peas

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer half the potatoes, half the ham, and half the onion in an 2-quart baking dish; repeat the layers.
  • Heat milk, peas, flour, butter, salt, black pepper, garlic powder, and onion powder in a saucepan over medium heat, stirring constantly, until thickened, 7 to 10 minutes.
  • Stir Cheddar cheese into sauce until cheese is melted.

1/2 cup chopped onion
1 teaspoon ground mustard
1 teaspoon salt

3 blocks (4 ounces each) sharp cheddar cheese, shredded and divided
1 block (4 ounces) Monterey Jack cheese, shredded

Steps:

  • Preheat oven to 350°. In a Dutch oven, melt butter over medium heat. Add onion, mustard, salt and pepper; cook until onion is tender, 6-8 minutes. Add garlic; cook until fragrant. Whisk in flour; continue whisking 3-5 minutes., Whisk in milk; bring to a boil. Reduce heat; simmer, uncovered, until thickened slightly, 8-10 minutes. We made the Kicked Up creamy version of this recipe and that is just exactly what it was. We like that this is cooked in the Crock Pot... makes for a very easy meal. Great if you have leftover holiday ham. The cheese sauce is just enough... it's so good!

10 medium Idaho potatoes; peeled
8 oz pkg diced ham, or cut your own
1/2 c chopped onion (I use frozen-no more tears!!)
1 can(s) Campbell's cheddar cheese soup
1 can(s) cream of mushroom soup, light
1 /2 c cheddar cheese, shredded
1 tsp dry mustard and white pepper
KICKED UP CREAMY VERSION
2 Tbsp butter or margarine
4 Tbsp flour
1 can(s) fat free evaporated milk
1-1 1/2 c shredded swiss cheese
paprika, just a sprinkle

Steps:

  • 1. Regular version: In a large bowl mix the two soups and feel free to add a tiny splash of milk, then add the onion, hams and seasonings. Slice the potatoes in half and then into slices; add to soup and mix well. Put into the crock pot, and add a sprinkle of paprika. Cook on high 4 hours or low 7-8 hours. Sprinkle the cheddar on top during last 10 min.
  • 2. Kicked Up version: Place peeled potatoes in a bowl of water. Melt the butter over med-high heat, cook and stir a few mins. Then whisk in the flour and stir. Add 1 cup of the evaporated milk and stir over med-high heat until bubbly and thickened; you may need the whole can.
  • 3. Stir in the cheddar soup, Swiss and cheddar cheese and seasonings, stir till melted and creamy. (You will not use the mushroom soup in this version :)
  • 4. Slice potatoes in half and then into slices. Place in a large bowl, along with onions and ham; mix well. Place in crock pot and cook the same as regular version. Let stand 10 min prior to serving.
  • 5. Some people like to layer the ingredients, instead of mixing in a bowl. I like it all mixed so the flavors marry. Use your preference!

5 large potatoes
1 teaspoon salt
1 large onion, sliced
1/2 cup green onion, chopped
3 tablespoons butter
1/3 cup flour
3 1/2 cups milk
1 1/2 cups shredded cheddar cheese
3/4 teaspoon salt
1/8 teaspoon black pepper
6 slices bacon
garlic salt

Steps:

  • Cook bacon until done, but not crispy. Set aside on paper towels to absorb grease and pat dry. Cut into bite sized pieces when cool.
  • Wash potatoes. Bring a large saucepan of water to a boil. Add salt to the boiling water, then add the potatoes. Cook for 10-15 minutes in boiling water (the potatoes will finish cooking in the oven). Set aside and allow to cool. Once you're able to work with the half-cooked potatoes, slice them into 1/2" pieces.
  • In saucepan, melt butter. Saute the onion slices until just tender; remove from pan and set aside. Making sure you still have enough butter in your pan, stir in flour and milk, whisking until smooth. Cook over low heat, stirring/whisking constantly for 1 minute. Add cheese and continue to stir until cheese melts. Stir in 3/4 teaspoon salt and 1/8 teaspoon pepper. Mix in bacon.
  • In a buttered 9x13 quart casserole, layer potatoes, onion, and cheese mixture. Continue to add layers until about one inch from the top, finishing off the top layer with the cheese mixture.
  • Bake in a preheated 350°F oven, covered, for 45 minutes. Take the cover off of the casserole dish, sprinkle with green onions, and bake for another 5 minutes uncovered. Sprinkle lightly with garlic salt before serving, if desired.

5 cups thinly sliced potatoes
2 cups thinly sliced cooked ham, cut into 3/4 to 1-inch pcs
1/2 cup diced onion, divided
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can Campbell's cheddar cheese soup
1 cup shredded sharp cheddar cheese, divided
1/2 cup milk (I used 2%)
1/4 teaspoon garlic powder
1/4 teaspoon white pepper

Steps:

  • In a bowl, add the canned soups, milk, garlic powder and pepper; stir to mix well.
  • In a greased 13x9-inch baking pan, add half the sliced potatoes.
  • Toss in half the onions, over the potatoes.
  • Pour half the soup mixture over the potatoes.
  • Sprinkle half of the cheese over the potatoes.
  • Place the sliced ham pieces evenly over the potatoes.
  • Add the remaining sliced potatoes, onions, soup mixture, and cheese.

  • After 1 hour, uncover the pan, and continue baking for 30 minutes more.
  • Note: Sometimes I'll use ham steaks that come in a 16-oz pkg., which I cut them into 3/4 to 1-inch pieces. (I used John Morrell Ham Steaks, and I used the entire pkg.). Also, I think one could add a bit more garlic powder & white pepper (possibly an 1/8 teaspoon more of each).

Every time I had an issue of what was wrong with the dish I figured out a way to correct it. I love to hear people's honest opinions as it helps me to become a better cook. 6 baking potatoes, peeled & sliced thin
2 (10 1/2 ounce) cans cream of mushroom soup (or cream of celery)
1/2 cup sour cream
1 1/2 cups of grated medium cheddar
6 ounces Velveeta cheese, cut into thin squares (approx 1 1/2 Inch Piece off a Large Block)
1 small yellow onion
1/4 cup chives (Freshly Chopped)
1 teaspoon Lipton Onion Soup Mix (Dry)

Steps:

  • In a large covered casserole dish spray entire dish with a cooking spray and then spread 1 entire can of Cream of Mushroom soup evenly on the bottom (best way I've found to prevent the potatoes from sticking & adds flavor).
  • Chop the onion into very small pieces & set aside.
  • In a separate bowl mix 1 can of Cream of Mushroom soup, the Sour Cream and 1 TSP of Dry Lipton Onion Soup Mix (added for the flavor of the seasonings which makes it extra tasty).
  • Peel & Slice the Potatoes Thin.
  • LAYER #1: Start layering in the casserole dish with the Cream of Mushroom soup on the bottom: Layer of POTATOES then spread approx 6 spoonfulls of the SOUP & SOUR CREAM mixture on top, then ONIONS then ½ cup of CHEDDAR CHEESE.
  • LAYER #2: POTATOES then approx 6 spoonfulls of the SOUP & SOUR CREAM mixture, then VELVETA CHEESE squares distributed evenly across.
  • LAYER #3: POTATOES then all the remaining SOUP & SOUR CREAM mixture then the remaining 1 cup of CHEDDAR CHEESE.
  • Sprinkle the chives evenly across the top.
  • BAKE COVERED in the oven at 300 degrees for about 1½ hour.
  • BAKE UNCOVERED for approx another 1 hour or as needed until done and top is slightly browned (test with a fork and make sure the potatoes are done). Note: Baking uncovered at the end helps reduce the excess moisture.

5 -8 large baking potatoes (I use Idaho Potatoes)
1 tablespoon butter
1/2 medium sweet onion (diced)
1 teaspoon minced garlic
2 tablespoons butter
3 tablespoons flour
2 1/2 cups milk
1/4-1/2 cup colby cheese (crumbled not shredded)
1/8-1/4 cup crumbled bacon (I use the "Real Bacon Crumbles" you use for salad toppings to save time)
salt and pepper (to taste)
parmesan cheese (sprinkled on top)
1/4 cup breadcrumbs
2 tablespoons melted butter

Steps:

  • Peel and slice potatoes and set aside in a bowl of cold water.
  • Saute onion with 1 tablespoons butter until golden. Add garlic and continue to saute until garlic is lightly colored. Remove from heat and set aside.
  • In small sauce pan melt 2 tablespoons butter add 3 tablespoons flour. Stir constantly until mixture begins to bubble. Slowly add milk and stir constantly bringing sauce to a boil. Reduce heat and simmer for 2-4 minutes until sauce is thickened.
  • Drain potatoes. Spray or grease 2 qt casserole dish and add potatoes, sauteed onions/garlic, and pour sauce over potatoes. Salt and pepper to taste (you can tell by tasting the sauce). Mix well. Sprinkle bacon pieces and cheese crumbles then lightly hand mix throughout dish.
  • Optional: you can sprinkle parmesan cheese on top and/or 1/4 cup bread crumbs mixed with 2 tbsp melted butter for a crispier topping.
  • Bake at 400°F for 1 - 1 1/2 hours uncovered or until top is golden brown and potatoes are tender. Cover with foil for the first 45 - 60 minutes of the cooking time if you add the bread crumb mixture or else it will burn with this high temp/long cook time.

When ever I make them everyone goes crazy over them, especially my husband. This is how much of everything that I put in but you can come up with your own variation if you have a different size casserole dish. REALLY GARLICY (that is how I like it, ifyou don't use less).

1 tablespoon butter
2 baking potatoes
1 medium onion
3 -4 garlic cloves
4 -6 teaspoons butter
8 -10 tablespoons cheese spread (I use Kraft Cheese Whiz)
salt
pepper

Steps:

  • Slice potatoes thin (the thicker they are the longer it will be till they are done.
  • Cut up the garlic how you like, I slice it (keep in mind the more cut up it is the more flavor it will have). Chop up onion (I leave it in partial slices).
  • Take out a casserole dish (I use 1.9L). First put in 1T. butter (so it doesn't stick too bad to the bottom). Add 1/3 of the potatoes (pressing down to spread the butter on the bottom), 1/3 of the onion, about 1 clove of garlic, 1-2 teaspoons butter, about 2-3 tablespoons cheese whiz (sometimes I melt it first), and sprinkle with salt and pepper.
  • Repeat 2 more times to create layers, ending up with cheese layer on the top so it will coat all the potatoes.
  • Heat oven to 350 degrees. Bake till potatoes are tender about an hour, check often to make sure it is not burning and mix only twice to evenly coat but not to break up potatoes too much.

5 medium baking potatoes, peeled and cut into 1/4 inch slices
12 slices bacon, cooked and crumbled
1/2 cup green onion, sliced
3 tablespoons butter
2 tablespoons all-purpose flour
2 cups half-and-half cream
2 garlic cloves, minced (large cloves)
1 bay leaf
1/4 teaspoon salt
1/4 teaspoon celery seed
1/4 teaspoon black pepper
1 1/2 cups cheddar cheese, shredded (6 oz)

Steps:

  • Cook potato slices, covered, in boiling water to cover for 5 minutes; drain well.
  • Place the potato slices in a greased 13 x 9 x 2 inch baking dish.
  • Sprinkle with the bacon and green onion; set aside.
  • Melt the butter in a heavy saucepan over low heat; add flour, stirring until smooth.
  • Cook 1 minute, stirring constantly.
  • Gradually add half-and-half; cook over medium heat, stirring constantly, until the mixture is slightly thickened and bubbly.
  • Add the minced garlic, bag leaf, salt, celery seed, black pepper, and cheddar cheese, stirring until the cheese melts.
  • Remove the bay leaf and discard.
  • Pour the cheese sauce over the reserved potato slices.
  • Cover and bake at 350 degrees Fahrenheit for 30 minutes.
  • Remove cover, and bake an additional 15 minutes or until the potatoes are tender and the top is lightly browned.

4 medium yukon gold potatoes, peeled
2 tablespoons vegan butter
2 garlics, minced
2 tablespoons all-purpose flour
2 cups non-dairy milk
1 ½ cups low sodium vegetable broth
1 teaspoon salt
½ teaspoon pepper
⅓ cup nutritional yeast
½ medium yellow onion, sliced into rings
fresh parsley, chopped, to garnish

Steps:

  • Preheat the oven to 400°F (200°C).
  • Thinly slice the potatoes into rounds about ⅛-inch (3 mm) thick. Submerge in a large bowl of water to keep from browning and set aside.
  • In a medium pot over low heat, melt the butter. Once the butter begins to foam, add the garlic and cook for 2-3 minutes, until fragrant. Add the flour and stir until flour and butter resemble the consistency of wet sand, creating a roux.
  • While stirring continuously, add the non-dairy milk, vegetable broth, salt, and pepper and bring to a boil. Stir in the nutritional yeast and continue to cook for 2-3 minutes, or until the sauce thickens. Remove from the heat.
  • In a medium baking dish, add 2 layers of the sliced potatoes, followed by a layer of the sliced onions. Pour on half of the cheese sauce and spread with a spatula to coat all of the potatoes and onions. Add another 2 layers of potatoes and pour on the remaining cheese sauce.
  • Cover with a lid or foil and bake for 1 hour. Then, uncover and bake for 10-15 minutes more, until the top is golden and bubbling and the potatoes are tender.
  • Garnish with parsley and serve warm.

1 bag (24-ounce) frozen cut russet potatoes, Ore-Ida Steam n' Mash
1 can (10-ounce) condensed cheddar cheese soup, Campbell's
1 can (5-ounce) evaporated milk, Carnation
1 jar (2-ounce) diced pimientos, Dromedary
1 medium onion, finely chopped
1 1/4 cups shredded cheddar cheese, Sargento

Steps:

  • Preheat oven to 350 degrees F. Lightly spray medium casserole with cooking spray; set aside.
  • Microwave potatoes according to package directions for 5 minutes. In a medium bowl, stir together cheddar cheese soup with evaporated milk until smooth. Place half of the potatoes in the bottom of prepared casserole. Layer with half each of pimientos, onion, cheese soup mixture, and shredded cheese. Repeat layers. 1 cup low-fat milk
4 ounces sharp cheddar cheese (mature)
3 tablespoons light sour cream
2 teaspoons Dijon mustard
1/4 teaspoon black pepper, ground
1 lb raw potatoes, peeled and thinly sliced
1 cup red onion, thinly sliced

Steps:

  • Preheat oven to 375. Spray baking dish with cooking spray.
  • In a bowl, whisk together milk, 3/4 cup of the cheese, sour cream, Dijon mustard, and pepper. Set aside.
  • Layer half of the potato and onion slices in the bottom of the dish.
  • Pour over half of the milk-mixture. Top with remaining potatoes and onions, then pour over remaining milk mixture.
  • Scatter over the remaining 1/4 cup of cheese.
  • Cover with foil (sprayed with cooking spray, so that the cheese doesn't stick to it later)and bake 45 minutes.

4 slice thick pepper bacon, chopped into small pieces
1 1/2 oz yellow onion, finely chopped
2 clove garlic, minced
4 Tbsp flour, all-purpose variety
4 Tbsp sweet butter, unsalted
2 c milk, whole fat
1 lb potatoes, yukon gold
4 oz cheddar, extra sharp and freshly grated
4 oz gruyere, freshly grated
freshly ground black pepper, to taste
kosher salt, to taste

Steps:

  • 1. Preheat the smoker to 250f (121c).
  • 2. Gather your ingredients.
  • 3. Finely chop the onion, and mince the garlic.
  • 4. Place a skillet over medium heat, and add the bacon.
  • 5. Cook the bacon until lightly browned.
  • 6. Remove bacon from pan, drain on paper towels, and reserve.
  • 7. Chef's Note: Reserve about 2 tablespoons of the bacon grease.
  • 8. Slice the potatoes about 1/8 inch thick.
  • 9. Add the butter to a saucepan, over medium heat.
  • 10. When the foaming subsides, add the onion and garlic.
  • 11. Stir until the onions are softened, about 5 minutes.
  • 12. Add the flour, and continue to cook over medium-low heat for about 5 minutes.
  • 13. Chef's Tip: This additional cooking will help to cook the "flour" taste out of the roux.
  • 14. When your spoon can trace a path in the pan, the roux is ready.
  • 15. Add the milk, and continue to stir over medium low heat.
  • 16. As the mixture begins to thicken, add a bit of salt and pepper, to taste.
  • 17. Chef's Tip: Remember good cooks season as they work.
  • 18. When the sauce has thickened, remove the saucepan from the heat and reserve.
  • 19. Chef's Note: Congratulations, you've just made a basic white sauce.
  • 20. Mix the two cheeses together
  • 21. Use a bit of bacon grease to coat the cast iron skillets, or similar containers.
  • 22. Chefs Note: My cast-iron skillet's are 6 inches across. You don't have to use cast-iron, of course. And, you could even do a larger container and make one instead of two. It's totally up to you.
  • 23. Add a generous layer of sliced potatoes.
  • 24. Cover with about two tablespoons of the white sauce.
  • 25. Add on some salt and pepper.
  • 26. Add on some bacon.
  • 27. Add on some cheese.
  • 28. Repeat the layering process: Potatoes White sauce Salt/Pepper Bacon Cheese By the time you reach the top of the skillet, you should have about four layers.
  • 29. Place in the smoker.
  • 30. Add your favorite wood chips (mine were apple wood). And let the smoke do it's magic.
  • 31. Cook until the top is brown and bubbly, about 1.5 - 2 hours.
  • 32. Go rustic and serve to your guests directly out of the skillet... along with your favorite protein. Enjoy.
