Dough for single-crust pie
3 tablespoons butter
4 cups thinly sliced zucchini (about 3 medium)
1 large onion, thinly sliced
2 large eggs, room temperature
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cups shredded part-skim mozzarella cheese
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large skillet, heat butter over medium heat. Add zucchini and onion; cook and stir until tender. Drain and cool slightly., Whisk eggs and seasonings until blended. Stir in cheese and zucchini mixture. Spread mustard over pastry shell; add filling., Bake on a lower oven rack until a knife inserted in center comes out clean and crust is golden brown, 35-40 minutes. If needed, cover edge loosely with foil during last 15 minutes to prevent overbrowning. Let stand 10 minutes before cutting.

1 pie crust, unbaked
4 large eggs, beaten
3/4 cup cheddar cheese, shredded
1 cup half-and-half cream
1/2 teaspoon chesapeake Old Bay Seasoning
8 ounces lump crab or 8 ounces imitation crabmeat
1 dash salt
1 dash black pepper

Steps:

  • Prepare the crust, if using frozen, thaw completely on counter before filling.
  • Preheat oven to 350°.
  • Beat the eggs, stir in the shredded cheese, half-n-half, Old Bay seasoning, and shredded crab meat.
  • Old Bay Seasoning contains both salt and pepper so you may not need to add additional salt or pepper. I don't.
  • Pour into unbaked pie shell.
  • Place on center oven rack for 35 minutes. Cover just the edges of crust with foil if they are browning too quickly.
  • Check center of quiche, if jiggly, bake 10 more minutes or until center is done to your preference.
  • Let stand for 5 minutes, serve hot with tomato slices or salad.

Steps:

  • Mix hash browns with butter and salt, and press into a 9-inch (20cm) pie plate.
  • Bake at 450°F (230°C) for 20 minutes until golden brown.
  • Meanwhile, cook sausage and onions in a skillet until onions are clear and sausage is cooked and crumbled.
  • Transfer to a bowl and cool.
  • Add the eggs, cheese, milk, salt, and pepper. Mix.
  • Pour into the hash brown crust.
  • Bake at 350°F (175°C) for an additional 30 minutes, until a knife inserted in the center comes out clean.
  • Cut and serve with your favorite toppings.

¼ cup shredded Cheddar cheese
5 teaspoons cold water

  • Place flour in a large bowl. Sprinkle in the chopped butter; rub butter into the flour until it resembles bread crumbs. Stir in the grated cheese. Sprinkle water over the flour mixture, a teaspoon at a time, stirring lightly with a fork. Add just enough water to allow the dough form a ball and cleanly leave the sides of the bowl. 8 slices bacon
1 small onion, minced
1 sweet green pepper, minced
1 frozen deep dish pie shell
1 1/4 cups milk

  • In skillet cook the sausage links 4 or 5 minutes, until cooked through.

¼ cup zucchini, shredded

1 ½ cups whip cream, un-whipped (or half and half for a lighter quiche)
8 ounces artichokes hearts, coarse chop

Steps:

  • For the crust: Preheat oven to 450 degrees F.
  • Mix veggies and hash browns together. Gently press between paper towels to remove as much moisture as possible. In a large nine inch pie plate, toss the veggie mixture with the melted butter. Sprinkle 4 tablespoons of the cheese packet from the box of Steakhouse Hash Browns over hash brown mixture and blend. Using the bottom of a measuring cup, press mixture into the bottom and up the sides to firmly form a crust. Place rack on the lower third of the oven. Bake for 20-25 minutes until golden brown and the edges begin to crisp. While crust bakes, make the filling.
  • For the filling: Blend the eggs and cream until smooth. Stir in the artichokes, leeks, ham, cheese and seasonings.
  • When the hash brown crust is ready, lower the oven temperature to 350 degrees F and pour the filling into the crust. Bake for 30 minutes then sprinkle the crunchy onion topping on the quiche. Continue to bake for another 15 minutes or until the quiche is light golden brown and firm in the middle. Quiche will settle as it cools.

1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)
5 eggs
1 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1/3 cup MIRACLE WHIP Dressing
1/3 cup milk
2 cups shredded cabbage
4 slices cooked OSCAR MAYER Bacon, crumbled

Steps:

  • Heat oven to 375°F.
  • Press pie crust into bottom and up side of 9-inch tart pan with removable bottom or springform pan.
  • Whisk eggs, cream cheese spread, dressing and milk in large bowl until blended. Stir in cabbage and bacon; pour into crust.
  • Bake 40 to 45 min. or until knife inserted in center comes out clean. Let stand 10 min. Run knife around tart to loosen from rim of pan; remove rim.

An easy to make, delicious dish that will please everyone. It has great flavor and texture. Reheats well. It is easily adaptable for any type of meat and vegetables.

1 can(s) (10 ounces) sliced mushrooms or 1 cup fresh sliced mushrooms
1 c onion, chopped
1 pkg (10 ounces) frozen spinach, thawed and excess water squeezed out.
1/3 c mayonnaise
1/3 c milk
4 eggs
1 c cheddar cheese, grated
3 oz finely chopped ham
1 deep dish pie shell
1/4 c parmesan cheese, grated

Steps:

  • 1. Spray pan with PAM and cook mushrooms, onions, and ham until onions are tender. Add thawed spinach to pan.
  • 2. In a large bowl, mix mayonnaise, milk, eggs, and Cheddar cheese.
  • 3. Cool hot mixture slightly and add to bowl with liquids. Pour into pie shell and top with Parmesan cheese. Bake at 375 degrees for 45 minutes until set and golden brown.

Nonstick cooking spray, for the muffin pan
3 strips thick-cut bacon, chopped
5 cups cornflakes, lightly crushed
1 1/2 cups grated white sharp Cheddar
1 tablespoon unsalted butter
1/2 Vidalia onion, diced
1 teaspoon ground mustard powder
1 teaspoon kosher salt
1/2 teaspoon paprika
1/2 teaspoon freshly cracked black pepper
1 bunch collard greens, stemmed and finely chopped (about 3 cups)
1 cup half-and-half
4 large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Heavily spray a 12-cup nonstick muffin pan with nonstick cooking spray.
  • Heat a large skillet over medium heat. Add the bacon and cook until crispy, about 6 minutes. Remove the bacon to a plate with a slotted spoon and pour 2 to 3 tablespoons of the bacon fat (see Cook's Note) into a large, heatproof bowl. To the bacon fat, add the crushed corn flakes and Cheddar. Stir the mixture together until it starts to clump. Press the mixture into the cups of the prepared muffin pan. Bake until lightly browned, about 5 minutes. Remove and cool slightly on a baking rack in the pan.
  • Return the skillet to medium-high heat and add the butter. Once the butter is melted, add the onions and cook until softened and starting to brown, 3 to 4 minutes. Sprinkle on the mustard, salt, paprika and pepper. Stir the collard greens into the onion mixture. Continue cooking the greens, stirring occasionally, until wilted, 5 to 6 minutes. Set aside to cool slightly.
  • Whisk together the half-and-half and eggs, then stir in the greens. Pour some of the egg mixture into each crust in the pan to come about three-quarters of the way up and sprinkle on the bacon. Bake until the egg has set and doesn't jiggle, 15 to 20 minutes. Set the mini quiches on a baking rack for 10 minutes to cool. Serve warm or at room temperature.
