Recipe number 2 for Vidalia onions. This recipe calls for Jumbo Vidalias but the zaar computer wants to call them large. Bad computer, lol.

8 large vidalia sweet onions, thinly sliced
1/3 cup butter or 1/3 cup margarine
1/4 cup all-purpose flour
2 cups milk
2 cups cheddar cheese, shredded
1/2 teaspoon salt

Steps:

  • Place Vidalia slices in lightly greased 2 quart casserole dish and set aside.
  • Melt butter in a heavy saucepan over low heat. Add flour, stirring well until smooth. Cook for 1 minute while stirring.
  • Gradually add milk.
  • Cook over medium heat while stirring until it thickens and becomes bubbly.
  • Add cheese and salt, stirring until the cheese melts and sauce is smooth.
  • Pour over Vidalias and bake uncovered at 350° for 1 hour.

This dish takes no more than 5 minutes to throw together and when you taste this rice you will eat the whole dish, it is *that* good! you could throw in 2 cups cooked chicken or turkey for a main meal, my family loves spice so I add in some cayenne pepper --- because of the high sodium content in the dry soup mix do *not* to add in any extra salt to this, you could add in the complete package of dry soup mix but for my family's taste we found it to be a little too salty --- all ingredients may be doubled --- this is *delicious*

1 (10 ounce) can cream of chicken soup, undiluted
1 (10 ounce) can cream of mushroom soup, undiluted
2 cups water
1 1/2 cus milk
1/2 cup melted butter or 1/2 cup margarine
1 (1 ounce) package dry onion soup mix
2 cups uncooked instant Minute Rice
1 (10 ounce) can sliced mushrooms, well drained (can use 2 cans)
1 medium onion, finely chopped
1 small stalk celery, finely diced (optional)
1 1/2 teaspoons garlic powder
1 teaspoon fresh ground black pepper (or to taste)
2 1/2 cups shredded mozzarella cheese, divided

Steps:

  • Set oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Butter a 13 x 9-inch baking dish.
  • In a bowl whisk together the soups with water, milk and melted butter until well combined.
  • Add in all remaining ingredients including 1-1/2 cups shredded cheese, save the remaining cup to sprinkle on the top; mix to combine.
  • Pour into greased baking dish.
  • Bake uncovered for 40-45 minutes or until the rice is tender.
  • Sprinkle 1 cup shredded cheese on top and return to oven for 2-3 minutes to melt the cheese.
  • Delicious!

4 medium yellow onions, cut in half and then into thin slices (can use 5 onions)
1/4 cup butter
1/4 cup flour
2 cups half-and-half
1 teaspoon seasoning salt (or to taste, or use white salt)
1/8 teaspoon cayenne pepper or 1/8 teaspoon black pepper
1/4 cup grated parmesan cheese
2 cups Velveeta cheese, cut into small cubes

Steps:

  • Set oven to 325 degrees.
  • Butter a 1-1/2-quart baking dish.
  • Place the sliced onions in the casserole dish.
  • To make the cheese sauce, melt butter in a heavy saucepan over medium heat.
  • Add in flour and whisk for 2 minutes.
  • Gradually add in half and half cream; whisking constantly until thickened.
  • Remove from heat and add in the Parmesan cheese and Velveeta cheese, stirring until melted.
  • Season with cayenne pepper and seasoning salt.
  • Pour the sauce over the onions in the baking dish.
  • Bake uncovered for about 45 minutes.
