3/4 cup monterey jack cheese, shredded
4 (8 inch) tortillas (flour, whole-wheat, spinach or tomato)
3 ounces deli ham, thinly sliced
2/3 cup tomatoes, chopped
2 tablespoons green onions (green tops-sliced)

Steps:

  • Sprinkle cheese onto one half of each tortilla. Top with ham, tomato and green onion tops. Fold each tortilla in half, pressing firmly together.
  • In a 10-inch skillet, cook quesadillas, two at a time, over medium heat for 4 minutes, or until lightly browned, turning once. Repeat with remaining quesadillas.
  • Cut each quesadilla into wedges and serve.

HAM, APPLE AND CHEESE QUESADILLA

Eight 6-inch whole wheat tortillas
Cooking spray or olive oil, for oiling tortillas
1 tablespoon spicy brown or Dijon mustard
1 cup shredded low-sodium Swiss (4 ounces)
4 ounces very thinly sliced low-sodium lean Black Forest or Virginia ham
1/2 small red onion, extra thinly sliced
Freshly ground black pepper
1 1/2 tablespoons no-sugar-added apple butter, plus more for topping, optional
2 small apples, cut into thin sticks (red and green)
Lemon juice and ground cinnamon for tossing

Steps:

  • Preheat the oven to 200 degrees F.
  • Spray 4 of the tortillas with cooking spray (or brush with olive oil). Lay the oiled tortillas on a large cutting board oiled-side down. Brush with the mustard and sprinkle with about half of the cheese. Top each evenly with a thin layer of ham, onions and some pepper, and then finish with the remaining cheese.
  • Brush the apple butter evenly on the remaining tortillas. Place one apple-butter tortilla on top of a ham-and-cheese tortilla (filling sides in), and firmly press the tortillas together to make a quesadilla.
  • Heat a large nonstick skillet over medium heat. Lay a quesadilla oiled-side down in the pan and cook until golden brown and the cheese starts to melt, about 2 minutes. Spray the top of the quesadilla with cooking spray, turn and cook until the other side browns and the cheese is melted, 2 to 3 minutes more. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining quesadillas.
  • Cut the quesadillas into 4 wedges and arrange on plates. Toss the apples with lemon and juice and cinnamon to taste. Serve with the apple slices.

8 eggs
1 tablespoon water
½ teaspoon salt
½ teaspoon pepper
2 tablespoons butter, softened, divided

2 cups shredded Cheddar cheese

Steps:

  • Scramble eggs with water, salt, and pepper in a medium bowl until well blended. Heat 1 tablespoon butter in a medium nonstick skillet over medium heat. Cook eggs, stirring frequently, until scrambled to desired consistency.
  • Spread 1 teaspoon of butter over 1 tortilla and place butter-side down in a medium nonstick skillet over medium heat. Sprinkle 1/3 cup cheese over entire tortilla. Add 1/2 cup scrambled egg and 1/3 cup Smithfield® cubed ham to one side. Cook 3 minutes or until the cheese is melted. Fold the plain cheese side over the filled side and flip the quesadilla. 3 green poblano chiles
Butter, for greasing the skillet
3 extra-large flour tortillas
1 1/2 cups finely grated Monterey Jack cheese
1 1/2 cups finely grated pepper jack cheese

Steps:

  • Roast the chiles by using metal tongs to hold them one-by-one over the flame of your stovetop until the skin is totally charred. (If you don't have a gas stove, you can use an outdoor grill OR place them on a baking sheet directly under your oven's broiler.) When totally blackened, place the chiles in a large resealable plastic bag and seal the bag to allow them to sweat for a good 20 minutes. Then use a knife to scrape off most of the blackened skin. Stem, seed and finely mince the chiles.
  • Butter a large cast-iron skillet generously and set over medium heat. Put 1 tortilla in the skillet and sprinkle on a third of the Monterey Jack and pepper jack cheese, evenly spreading it all the way to the edges so that the surface will be totally covered. Sprinkle on a third of the roasted chiles. Wait for the cheese to mostly melt, then fold half of the tortilla over itself. Cook for 20 more seconds, then flip the half-moon over and cook until the tortilla is buttery and golden, for 30 more seconds. Keep warm and repeat with the remaining tortillas, cheese and chiles. Cut into 4 or 5 wedges each and serve with bowls of chili.

  • Arrange 4 tortillas on work surface. Sprinkle 1/2 cup cheese over each tortilla. Top with ham, leaving 1/4-inch borders. Sprinkle 1 tablespoon raisins over each.   • lay 1 tortilla in frying pan. heat must still be off.
  • tear ham up, and grate cheddar cheese. other hams maybe used. after tearing ham and grating cheese mix together, with a drizzle of olive oil if using. olive oil just holds the filling together but works without.
  • then sprinkle filling evenly on the tortilla making sure ham and cheese are evenly shared all over the tortilla.
  • lay next tortilla on top and press down lightly.
  • turn hob onto low heat and allow cheese to melt so tortillas are glued together.
  • when golden brown, turn over and allow other side to cook to same colour.
  • then cut into 4 seperate pieces, serve with guacamole and salad to finish off this british/ american take on an authentic mexican dish.
