CHEDDAR HAM CUPS

When a college classmate and I threw a party for our professor, a friend contributed these savory appetizers. Everyone in the class requested the recipe before the party was done. Try the cups with chicken instead of ham if you'd like. -Brandi Ladner Gulfport, Mississippi

Yield 2-1/2 dozen.

Number Of Ingredients 6

2 cups (8 ounces) finely shredded cheddar cheese
2 packages (2-1/2 ounces each) thinly sliced deli ham, chopped
3/4 cup mayonnaise
1/3 cup real bacon bits
2 to 3 teaspoons Dijon mustard
2 tubes (10.20 ounces each ) large refrigerated flaky biscuits

Steps:

  • In a large bowl, combine the cheese, ham, mayonnaise, bacon and mustard. Split biscuits into thirds. Press onto the bottom and up the sides of ungreased miniature muffin cups. Fill each with about 1 tablespoon of cheese mixture., Bake at 450° until cups are golden brown and cheese is melted, 9-11 minutes. Let stand for 2 minutes before removing from the pans. Serve warm.

I came up with this recipe one night after I had made a huge ham and needed to find a way to use up the leftovers. I had everything in my pantry and it was a big hit. Now it always goes on the menu the week following a big ham dinner.

Number Of Ingredients 6

4 cup(s) ham, cubed
1 jar(s) ragu cheese sauce
1 can(s) condensed cream of mushroom soup
1 package(s) tater tots
- salt to taste
- adobo seasoning to taste

Steps:

  • Place cubed ham in bottom of 11x14 in pan. Mix cheese sauce and mushroom soup and pour over ham.
  • Season to taste with salt and adobo seasoning. Cover with tots.
  • Bake at 350 degrees for 45 minutes. Remove from oven and let stand 5 minutes before eating.
  • NOTE: You can add a can of green beans over ham if you want a one dish meal.
