1/2 cup virgin olive oil
2 cloves garlic, finely chopped
1/4 teaspoon red pepper flakes
1/4 teaspoon dried basil
Salt
1 loaf Italian bread, sliced into 1/4-inch slices
1 cup shredded mozzarella

Steps:

  • Preheat grill to low-medium heat.
  • In a small bowl, combine olive oil, garlic, red pepper flakes, basil and salt. Brush both sides of the bread with the olive oil and garlic mixture.
  • Place the bread on the grill and grill both sides, until golden and crisp; about 5 minutes. Sprinkle the top with cheese and place in the broiler until bubbly and golden, if inside. If outside, cover the grill and cook until the cheese is melted and bubbly. Serve immediately.

This takes only minutes to make and is perfect to throw on the grill just before serving dinner. I like to make this with different cheeses, such as Parmesan or Gruyere, or whatever I happen to have on hand. Keep an eye on it constantly, as it tends to burn easily!

2 tablespoons butter, softened
1 clove garlic, minced
2 naan breads
salt and ground black pepper to taste
⅔ cup shredded mozzarella cheese

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Combine butter and garlic in a bowl and mix thoroughly. Spread butter mixture over 1 side of each bread and place on a baking sheet. Sprinkle with salt and pepper.
  • Reduce grill heat to low and place bread, butter-side down, onto grill. Cook until grill marks appear, about 2 minutes, moving bread around every 15 to 20 seconds and watching for flare-ups.
  • Turn bread over and sprinkle evenly with mozzarella cheese. Close grill and cook until cheese is melted, 1 to 2 minutes more. Transfer to a baking sheet, cut each bread into quarters, and serve warm.

½ cup unsalted butter, softened
¼ cup sun-dried tomatoes packed in oil, drained
2 tablespoons pesto
1 clove garlic
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 ½ cups shredded provolone cheese, divided
1 loaf Italian bread, sliced in half lengthwise

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine butter, tomatoes, pesto, garlic, salt, and black pepper in a food processor. Pulse until thoroughly combined and tomatoes are chopped. Scrape into a bowl and stir in 1 cup shredded provolone cheese.
  • Grill bread on the preheated grill until toasted, about 1 1/2 minutes. Spread butter mixture equally onto cut sides of both halves of bread and sprinkle with remaining cheese. Grill bread, cut-side up, over indirect heat with grill covered, until toping melts, 8 to 10 minutes. Let cool slightly; cut into slices using a serrated knife. Serve warm.

GRILLED MUSSELS AND CHEESY GRILLED COUNTRY BREAD



Grilled Mussels and Cheesy Grilled Country Bread image

Number Of Ingredients 10

1 loaf crusty country bread, preferably seeded or herbed
1-1/2 ounce Gruyere cheese
2 pounds cleaned muscles
2 medium shallots, sliced
2 teaspoons unsalted butter
1/2 cup dry white wine
1/2 cup unsalted chicken broth (optional)
2 slices cooked bacon, crumbled (optional)
1/4 cup chopped flat leaf parsley
freshly ground black pepper

Steps:

  • Preheat grill to medium high. Cut country loaf into slices. Place on grill to toast one side.
  • Meanwhile, cover bottom of a large straight sided and heat proof skillet with foil to protect from soot. Place pan on the grill and add all ingredients, except butter, parsley, bacon and black pepper, stirring to mix. Remove bread slices to a cookie sheet, toasted side up and grate some gruyere cheese over the slices. Return bread slices to the grill to toast the other side and melt the cheese.
  • While bread slices are toasting, tint skillet loosely with foil and cover the grill, until bread slices are toasted (about 1 minute depending on grill heat. Be sure to check so bread doesn't burn).
  • Open grill and remove bread slices to cookie sheet and set aside. Close grill and allow muscles to continue cooking about another 3 minutes. Remove the foil and if some have not opened, give the pot a stir and cook another 1-2 minutes.
  • Remove skillet from grill and remove and discard any muscles that have not opened. Scoop remaining mussels into a large serving bowl. Return skillet with liquid to the grill, and let simmer 1-2 minutes to combine flavors. Remove from heat, swirl in butter, and pour liquid over muscles in bowl.
  • Sprinkle with black pepper, crumbled bacon (if using) and parsley. Serve with toasted country bread.

1/4 cup sun-dried tomato packed in oil, drained
2 tablespoons basil pesto
1 garlic clove, minced
1 dash salt

1 1/2 cups provolone cheese, shredded

Steps:

  • Slice bread lengthwise into 2 pieces. Heat grill.

2 cups shredded American and Cheddar cheese blend (8 ounces)
1 jar (5 ounces) olive-pimiento cheese spread
1 can (4.5 ounces) Old El Paso™ chopped green chiles
1/4 cup mayonnaise or salad dressing
1/2 teaspoon onion powder
1 loaf (1 pound) unsliced French bread, cut horizontally in half
Sliced pimiento-stuffed olives, if desired

Steps:

  • Heat coals or gas grill for indirect heat. If using charcoal grill, arrange coals around edge of firebox. Mix all ingredients except bread and olives in medium bowl.
  • Place bread, cut sides down, over center of charcoal grill or over unheated side of gas grill and over medium-low heat. Cover and grill 4 to 5 minutes or until toasted.
