Full of veggies, cheddar cheese, and creamy soup, this Cheesy Vegetable Casserole is sure to be a family favorite!

½ pound Great Value Green Beans ((frozen))
½ pound frozen broccoli and cauliflower mixture
1 can Campbell's Cream of Mushroom Soup
½ teaspoon garlic powder
¼ cup milk (or water)
2 cups cheddar cheese (shredded, divided)
4 ounces French's Crispy Onions (divided)

Steps:

  • Preheat oven to 350°F.
  • Cook green beans and broccoli and cauliflower until tender crisp, per package directions.
  • In a medium sized bowl, mix green beans, broccoli and cauliflower, soup, garlic powder, milk, 1 ½ cups cheese, and half of the crispy onions. Pour into a casserole dish. Sprinkle remaining cheese on top.
  • Bake for 30 minutes. Top with remaining crispy onions and bake an additional 10 minutes.

I made this recently for a potluck supper at our church. I started with an old recipe a friend had given me and added a few things here and there.

Number Of Ingredients 16

2 cups fresh broccoli florets
1-1/2 cups sliced carrots
1 cup mayonnaise
1 cup shredded cheddar cheese
3 to 4 drops hot pepper sauce
1/4 teaspoon pepper
1/4 cup sherry or dry white wine, optional
1-1/2 cups sliced zucchini
1 cup sliced celery
1/2 cup diced green pepper
1/2 cup diced onion
1 tablespoon minced fresh parsley
1 tablespoon minced fresh basil
3 tablespoons butter
12 saltines, crushed
1/3 cup grated Parmesan cheese

Steps:

  • Steam broccoli and carrots until crisp-tender; drain and set aside., In a large bowl, combine the mayonnaise, cheddar cheese, pepper sauce, pepper and sherry if desired. Add the broccoli, carrots, remaining vegetables, parsley and basil; stir gently to combined. , Spoon into a greased 2-qt. baking dish. Melt butter in a small saucepan. Add crushed saltines; stir until browned. Remove from the heat and stir in cheese; sprinkle over vegetables. , Bake, uncovered, at 350° for 30-40 minutes or until heated through.

A baked cheesy casserole with a crumb topping over colorful vegetables. Great as a side dish with any meal. You can vary the veggies if you like. From Taste of Home magazine.

2 (16 ounce) packages california-blend frozen vegetables
8 ounces processed cheese (velveeta)
6 tablespoons butter, divided
1/2 cup crushed butter flavored cracker (about 13)

Steps:

  • Prepare vegetables according to package directions and drain.
  • Place half in an ungreased 11 x 7 baking dish.
  • In small saucepan, combine cheese and 4 T butter.
  • Cook and stir over low heat until melted.
  • Pour half over vegetables.
  • Repeat layers.
  • Melt remaining butter and toss with cracker crumbs.
  • Sprinkle over top of casserole.
  • Bake uncovered at 325 degrees for 20 to 25 minutes or until golden brown.

This is a side dish that is cheesy and full of flavor from the freshly cut vegetables & Fresh cilantro!

8 small new potatoes, scrubbed
8 small baby carrots
1 small cauliflower, broken into florets
4 stalks of asparagus, cut into 1-inch pieces
3 Tbsp margarine or butter
3 Tbsp all purpose flour
2 c milk ( i use 2%)
salt and pepper (to taste)
3/4 c shredded chedder cheese
chopped fresh cilantro ( amount is your preference)

Steps:

  • 1. Preheat oven to 350 degrees. Cook vegetables until crisp-tender. Arrange vegetables in greased 2-quart casserole.
  • 2. To make the sauce, melt margarine in medium saucepan over medium heat. Stir in flour until smooth; cook 2 Minutes. Gradually stir in milk. Cook until thickened, stirring constantly. Season to taste with salt and pepper. Add cheese, stirring constantly until cheese is melted.
  • 3. Pour sauce over vegetables and sprinkle with cilantro. Bake 15 Minutes or until heated through.

2 (1 lb) bags california-blend frozen vegetables, thawed, the broccoli cauliflower and carrot blend
1/2 cup chopped onion
1/4 cup butter, melted
3/4 cup reduced-fat sour cream
1/2 cup mayonnaise
1 1/2-2 cups shredded sharp cheddar cheese
1/2 cup crushed buttery cracker, Ritz
1/4-1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 350°F
  • Grease a 1 1/2 - 2 quart casserole; set aside.
  • Drain off all water from thawed veggies.
  • Place drained, thawed veggies in a large bowl. Add ALL remaining ingredients.
  • Mix everything well.
  • Pour mixture into the casserole dish.
  • Bake at 350°F for 30 minutes.

  • Combine vegetables, soup, 1/2 cup swiss cheese, sour cream, pepper & 1/2 can of french fried onions into 1 quart casserole.
  • Bake covered at 350 for 30 minutes.
  • Top with remaining cheese and onions.
  • Bake uncovered 5 minutes longer.
