Easy corn casserole without Jiffy is so simple, using everyday, all-natural ingredients. This corn pudding recipe, simply put -- is the best corn side dish. Plus easily adapt this recipe to be gluten-free.

1/4 cup sugar | I use all natural cane sugar (may omit if desired)
3 tablespoons flour | replace with GF all purpose flour for gluten free
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
8 cups whole kernel corn | I used organic frozen corn (fresh or drained canned corn may be used too)
6 eggs (large)
2 cups whipping cream (or heavy cream | not fat free, real cream)
1/2 cup butter | real butter for this dish pretty please (unsalted or salted)

Steps:

  • Combine dry ingredients (sugar, flour, baking powder and salt) with a fork or whisk in a small bowl, set aside.
  • In a large mixing bowl, whisk eggs, whipping cream and melted butter. Gradually add the sugar mixture, whisking until thick and smooth.
  • Stir in corn and pour into 9x13 greased casserole dish the casserole dish.
  • Bake at 350F degrees for about 45-70 minutes until pudding is set and deep golden brown around the edges and very slightly jiggly in the center. (see notes for tips on baking)
  • If baking in individual ramekins, place ramekins on baking sheet and bake at 350F degrees for about 30 minutes. The pudding is done when the edges are golden brown and inserting a knife into the center of the pudding comes out clean.
  • Allow pudding to rest for about 5 minutes before serving.

2 (15.25 ounce) cans shoepeg corn, drained
1 (10.75 ounce) can condensed cream of celery soup
1 (8 ounce) container sour cream
1 cup grated Cheddar cheese
½ cup butter
1 sleeve crushed buttery round crackers (such as Ritz®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour corn in a flat casserole dish. Combine condensed soup, sour cream, and Cheddar cheese in a bowl. Mix well and spread over corn.
  • Melt butter in a saucepan over medium-low heat, add crackers, and mix to combine. Spread over corn.
  • Bake in the preheated oven until bubbly, about 25 to 30 minutes.

1 (15.25 ounce) can whole kernel corn (such as Del Monte®, drained
1 (15 ounce) can cream-style corn (such as Del Monte®)
1 (7.5 ounce) package corn bread mix (such as Jiffy®)
¼ cup margarine, melted
1 (8 ounce) container sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir whole kernel corn, cream-style corn, and corn bread mix together in a large bowl. Pour melted margarine into the bowl; mix. Fold sour cream into the corn mixture until smooth. Pour into an 8-inch square baking dish.
  • Bake in the preheated oven until the edges have browned and a toothpick inserted into the center comes out clean, 45 minutes to 1 hour. Cool in the pans for 5 minutes before serving.

4 slices bacon, finely chopped
6 tablespoons unsalted butter, cubed
4 garlic cloves, finely chopped
1/2 cup flour
3 cups milk
4 ounces cream cheese, cubed
2 ounces Velveeta cheese, cubed
2 cups sharp cheddar cheese, grated
1 teaspoon paprika
3 lbs fresh corn kernels (may sub frozen)
kosher salt & freshly ground black pepper, to taste

Steps:

  • Heat oven to 375°.
  • Heat bacon in a 6-qt. saucepan over medium heat, and cook, stirring, until browned, about 8 minutes.
  • Add butter and garlic, and cook until fragrant, about 1 minute.
  • Add flour, and cook, stirring, for 1 minute.
  • Whisk in milk, and bring to a boil; cook, stirring constantly, until thickened, about 2 minutes.
  • Add cream cheese, Velveeta, cheddar, and paprika, and cook until smooth.
  • Remove from heat and stir in corn; season with salt and pepper.
  • Transfer mixture to a greased 9″ × 13″ baking dish and bake until top is golden brown and bubbling, about 40 minutes.

1 (8 ounce) box Jiffy corn muffin mix
2 eggs, slightly beaten
1/4 cup dried onion flakes
1 cup sour cream
1 cup cheddar cheese, grated

Steps:

  • Melt butter or oleo in a 9" by 13" baking dish.
  • Stir in both cans of corn.
  • Mix eggs, onion flakes, sour cream and 1/2 of the cheese and add to baking dish.
  • Stir in Corn Muffin Mix.
  • Sprinkle remaining cheese on top.
