CHEESY CHICKEN SUBS
I've been part of the Food Services staff at Appalachian State University for 33 years. One summer we created this flavorful sandwich that combines seasoned grilled chicken, Swiss cheese and sauteed mushrooms and onions. - Place chicken in a large bowl; sprinkle with salad dressing mix. In a large skillet, saute mushrooms and onion in oil for 3 minutes. Add chicken; saute for 6 minutes or until chicken is no longer pink., Spoon mixture onto bun bottoms; top with cheese. Broil 4 in. from the heat for 4 minutes or until cheese is melted. Replace tops.

CHEESY CHICKEN SANDWICHES
So easy to make and ready in only 30 minutes, our toasted chicken sandwiches are seasoned with Italian dressing mix and topped with melted provolone cheese.

Steps:
- In medium bowl, toss chicken strips and dressing mix; set aside.
- In large skillet, heat oil over medium-high heat. Add mushrooms and onion; cook and stir until mushrooms start to brown and onion starts to soften. Add chicken; cook about 5 minutes, stirring frequently, until chicken is no longer pink in center.
- Set oven control to broil. Split buns, but don't cut all the way through. Open buns and place cut sides up on ungreased cookie sheet. Spoon chicken mixture evenly onto bun bottoms; top with cheese (cut slices in half to fit, if necessary).
- Broil with tops 4 to 6 inches from heat about 2 minutes or until bread is toasted and cheese is melted.

- In a small bowl, combine the chicken, 1/2 cup cheese, onion, green pepper, mayonnaise, Cajun seasoning and garlic. Spread over bread slices. Top each with a tomato slice; sprinkle with remaining cheese. , Place on an ungreased baking sheet. Bake at 375° for 10-12 minutes or until bread is toasted and golden brown.
