1 (12 ounce) package wide egg noodles
3 -4 tablespoons butter
1 medium onion, chopped
1 tablespoon fresh minced garlic (or to taste)
1 large celery rib, diced
1 jalapeno pepper, seeded and finely chopped
1 small bell pepper, seeded and chopped (use red or green)
1 (10 ounce) can cheddar cheese soup, undiluted
1/3 cup half-and-half cream (or use milk)
1 1/2 cups chopped cooked chicken
1 teaspoon seasoning salt (or use 1/2 teaspoon white salt or to taste)
black pepper
3/4 cup dry breadcrumbs
2 tablespoons grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter a 3-quart casserole dish (or use a 13 x 9-inch baking dish).
  • Cook the egg noodles in boiling water with 1 tablespoon salt until al dente; drain then place in a large bowl and toss with 1 tablespoon butter or oil, set aside.
  • In a large skillet melt butter over medium heat; add in onion, garlic, bell pepper, celery and jalapeno pepper; saute for 4-5 minutes or until tender.
  • Add in soup, half and half or milk, cooked chicken and seaoned salt; bring to a simmer over medium heat stirring with a wooden spoon until heated through and well combined.
  • Add the chicken mixture to the cooked noodles in the bowl; toss to combine then season with black pepper to taste and more salt if desired.
  • Transfer to a buttered casserole dish.
  • In a bowl mix together breadcrumbs with Parmesan cheese then sprinkle evenly over casserole (if you are using grated cheddar cheese omit this step and sprinkle the grated cheese ontop of casserole the last few minutes of baking).
  • Bake for about 20-25 minutes or until heated through and the topping is golden brown.

Kosher salt and freshly ground black pepper
8 ounces egg noodles
1 1/4 cups small-curd cottage cheese
1/2 cup sour cream
1 cup grated sharp Cheddar
1/2 cup sliced green onions, plus more for garnish
2 cups crushed potato chips

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
  • Cook the egg noodles until al dente as per the package directions. Drain and set aside.
  • In a medium bowl, combine the cottage cheese and sour cream. Add plenty of freshly ground black pepper. Add to the noodles and stir. Add the Cheddar and green onions, then stir.
  • Add the contents of the bowl to a 9-by-13-inch baking dish and bake for 15 minutes. Remove and top with the potato chips. Return to the oven and bake until golden, another 5 minutes.
  • Garnish with green onions, then serve.

2 packages (1 pound each) wide egg noodles
1/2 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
5 to 6 cups 2% milk
2 pounds process cheese (Velveeta), cubed
TOPPING:
1/2 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, garlic salt and onion salt until smooth; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the cheese; stir until melted. Stir in noodles. , Transfer to two greased shallow 2-qt. baking dishes. Combine the bread crumbs and butter until crumbly; sprinkle over casseroles. Bake, uncovered, at 350° for 25-30 minutes or until golden brown.

6 ounces medium noodles, cooked
1 (10 ounce) can cream of mushroom soup, undiluted
2 cups cooked chicken, diced
1 1/2 tablespoons butter
1/3 cup sour cream
1 dash pepper
1 cup mozzarella cheese, shredded, divided

Steps:

  • Combine cooked noodles, chicken, soup, butter, sour cream, pepper and 3/4 cup of mozzarella cheese.
  • Mix well and put into a 2 quart casserole dish.
  • Bake covered at 350 degrees for 30 minutes.
  • Uncover and add remaining mozzarella cheese and bake 10 minutes more.
