2 (10 ounce) packages prepared pizza crust
1 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
1/2 cup ricotta cheese
1 cup spaghetti sauce or 1 cup pizza sauce

Steps:

  • Preheat oven to 400°.
  • Line a 12 inch pizza pan with foil and spray with nonstick spray coating.
  • Press dough onto foil in pan forming a 12-inch circle.
  • In a large mixing bowl stir together cheeses then spoon 1/2 of mixture onto dough.
  • Fold dough over filling to form a half-circle. Seal edges, then use the edge of a spoon to make decorative edge, if desired.
  • Cut slits for escape of steam.
  • Repeat for the other package of dough.
  • Bake for 18 to 20 minutes or till filling is heated through and cheese is melted.
  • Cover with foil after 10 minutes of baking to prevent over-browning.
  • Cool on wire rack for 5 minutes before serving. Heat sauce and serve with calzone for dipping.

CHEESY SPICY BUFFALO CHICKEN CALZONE

Nonstick cooking spray, for the baking sheet and football pan
2 slices provolone cheese
Two 11-ounce tubes refrigerated thin-crust pizza dough
1/2 cup Buffalo wing sauce
1/2 rotisserie chicken, skin and bones discarded, meat shredded
3 cups grated Swiss or mozzarella cheese
3 scallions, white and light green parts only, thinly sliced
1/2 cup crumbled blue cheese
Olive oil, for drizzling
Garlic salt, for sprinkling
Ranch dressing, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a baking sheet with nonstick cooking spray. Measure the imprinted stitching on an approximately 12-by-8-inch football-shaped baking pan and cut the provolone into 2 long strips and 7 shorter strips to imitate; set aside. Spray the football pan with the cooking spray.
  • Unroll 1 tube of dough and cut in half widthwise. Bake one of the halves on the prepared baking sheet until lightly done, about 8 minutes. (Reserve the other half of the dough.) Use a knife or kitchen shears to cut the baked dough into a football shape slightly smaller than the pan.
  • In a medium bowl, toss together the Buffalo sauce and shredded chicken.
  • Unroll the remaining tube of dough and drape into the prepared football pan, letting the extra dough hang over the sides. Fill with half of the chicken mixture, half of the grated Swiss or mozzarella and half of the scallions. Top with the football-shaped crust. Add the remaining chicken mixture, grated cheese and scallions. Add the blue cheese. Top with the reserved uncooked dough half. Use a knife to trim the excess edges of dough, leaving a little extra to pinch the 2 edges of dough together. Put the pan on a baking sheet.
  • Bake until the crust is just beginning to brown, about 15 minutes. Remove from the oven and invert the football pan onto the baking sheet to unmold the calzone. Drizzle the crust with olive oil and sprinkle with garlic salt. Continue to bake until golden brown, 5 to 10 minutes. Arrange the strips of provolone to mimic the football stitching; the heat of the calzone will slightly melt the cheese and adhere it to the football. Let stand 5 minutes.
  • Slice and serve with ranch dressing for dipping, and celery sticks on the side.

CHEESY POTATO CALZONE

Basically cheesy mashed potato in an edible, portable container. These are rather large, and very filling.

200 g strong bread flour
1 teaspoon easy-blend dried yeast
1/2 teaspoon salt
1 tablespoon olive oil
125 ml warm water
500 g old potatoes, diced
2 tablespoons milk
125 g mature cheddar cheese, grated
1 small onion, roughly chopped
3 leaves fresh basil, torn

Steps:

  • Place the flour, yeast and salt in a large bowl. Make a well in the centre and pour int he water. Using your hand to mix, bring the ingredients together to form a soft, pliable dough. Turn the dough out onto a lightly floured surface and knead vigorously for 5-10 minutes until the dough is smooth and stretchy.
  • Rub a little oil over the surface of the dough, cover with a clean tea towel and leave in a warm place for about an hour or until doubled in size.
  • Meanwhile, cook the potatoes in boiling water for 10-15 minutes until tender. Drainw well and mash with the milk. Stir in the cheese, onion, basil, salt and pepper.
  • Preheat the oven to 220C/450F/gas 7. Divide the dough in half and roll out each half into very thin 30cm rounds. Spoon the potato mix onto one half of each of the rounds. Dampen the edges and fold over the dough, pressing with your fingers to seal.
  • Place the calzone on a lightly oiled baking sheet. Bake for 15-20 minutes until crusty and golden.

2 pkg refrigerated crescent rolls (in sheet form called recipe creations from pillsbury)
1 lb bulk sausage
1/2 tsp garlic, minced
2 c shredded mozzarella or pizza cheese blend
8 oz cream cheese, room temperature (optional)
1/4 c freshly grated pecorino romano

Steps:

  • 1. Preheat oven to 350'F. Unroll dough onto parchment paper lined cookie sheets, gently stretching dough on each side.
  • 2. In a skillet brown sausage until no longer pink and in crumbles. Add in garlic and mix around for about a 2 minutes.
  • 3. Turn off heat and add to sausage, romano cheese, then mix around, then add 1 cup shredded mozzarella/pizza cheese blend and mix around. Add in cream cheese in about 1 ounce pats so that it will be easier to mix and coat the sausage.
  • 4. Split sausage and cheese mixture in half and place in middle of crescent dough leaving 1 inch untouched at ends, sprinkle on top of sausage mixture 1/2 cup of shredded mozzarella/pizza cheese blend
  • 5. Take one side of dough and stretch over meat mixture and do the same with other side of dough carefully not to rip dough. Fold open edges up and flip calzone over so that the double layer of dough is on bottom. (This will guarantee the dough to fully cook.) Scoot over calzone to lay 2nd. sheet of crescent dough and do the same steps. (This will allow you to bake both on the same sheet at the same time.)
  • 6. Bake for 15-20 minutes until golden brown. Let calzones set for about 10 minutes. Then cut with a sharp knife into strips and serve! You can serve with marinara sauce but these are so good by themselves and make a great party snack!
  • 7. Note: If you want to make 1 cream cheese calzone, add half of the sausage blend to first calzone before adding cream cheese, then mix in 4 ounces of cream cheese to sausage mixture in pan and mix then add to second sheet of crescent dough. (Still top both with shredded cheese before wrapping dough)

1/4 cup pizza sauce
1 cup mozzarella cheese, shredded
3 slices deli turkey, shaved
1 teaspoon water

  • Preheat oven to 400°F.
  • Cut dough roll in half crosswise.
  • Unroll one dough half onto large baking sheet which has been sprayed with cooking spray.
  • Spread pizza sauce down centre of dough leaving 1/2 inch around the edges.
  • Top sauce with mozarella cheese.
  • Top half with turkey slices, leaving the other half as cheese only.
  • Unfold remaining dough half over filling.

1cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
3slices OSCAR MAYER Deli Fresh Oven Roasted Turkey Breast
2 Tbsp. small broccoli pieces
2 Tbsp. corn
1Tbsp. water
1Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • HEAT oven to 400°F.
  • CUT dough roll in half crosswise. Unroll 1 half on large baking sheet sprayed with cooking spray.
