1 pound ground beef
2 (16 ounce) cans refried beans
4 cups shredded Colby-Monterey Jack cheese, divided
1 cup sour cream
1 (4 ounce) package cream cheese, softened
1 (1.25 ounce) package taco seasoning mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir ground beef, refried beans, 3 cups Colby-Monterey Jack cheese, sour cream, cream cheese, and taco seasoning mix together in a bowl until well mixed. Spread mixture into the prepared baking dish.
  • Bake in the preheated oven for 20 minutes; sprinkle with remaining 1 cup Colby-Monterey Jack cheese. Continue baking until cheese is melted, about 5 more minutes.

Our daughter-in-law started a breakfast tradition when we visited, and it has transformed into this breakfast burrito that has crushed nacho chips in it along with eggs, potatoes, and cheese. This is just as good without the tortilla, just serve it in a bowl.

1 cup frozen southwest-style O'Brien potatoes with onions and peppers
12 eggs, beaten
1 cup shredded Cheddar cheese
1 cup shredded pepperjack cheese
1 cup picante sauce
1 cup crushed nacho cheese tortilla chips (such as Doritos®)
12 (10 inch) flour tortillas

Steps:

  • Combine butter and potatoes in a large nonstick skillet over medium-high heat. Cook until potatoes are slightly browned on the edges, 5 to 7 minutes.
  • Add eggs to the skillet with the potatoes and cook until set, 5 to 7 minutes more. Add Cheddar cheese, pepper jack cheese, and picante sauce. Mix with potatoes and eggs until thoroughly incorporated. Add crushed chips to the skillet and stir until well mixed.
  • Divide egg mixture evenly among tortillas and roll up burrito-style.

Steps:

  • Cook turkey, onions, garlic and chili powder in large nonstick skillet on medium heat 5 min. or until turkey is no longer pink, stirring occasionally.

1 (16 ounce) can chili with beans
3 cups o'brien frozen potatoes
1/2 cup onion, diced
1 cup shredded cheddar cheese
2 cups water
1 (1 1/4 ounce) package taco seasoning
1 tablespoon Lawrys seasoned garlic salt
1 tablespoon fresh cilantro, minced
1 fresh jalapeno, diced
8 flour tortillas, 10-inch

Steps:

  • Preheat oven to 350°F.
  • Place frozen potatoes in a microwave safe bowl, add about 1/4 cup of water. Cover and cook on high for about 7 minutes or until potatoes are soft. Remove and set aside for a few minutes to cool.
  • Place chopped onion in microwave safe bowl, but do not add additional water. Cover and cook on high for about 2 minutes or until onions are soft.
  • Add onions, jalapenos, 1/2 tablespoon garlic salt, cilantro, 1/2 package of taco seasoning and 1/2 of the can of chili to the potatoes, and stir until evenly mixed.
  • In another bowl, mix remaining chili, rest of taco seasoning, rest of garlic salt, cheddar cheese, and enough water to make about 2 cups of sauce.
  • Warm tortillas in the microwave between two plates, approximate 1-2 minutes on high.
  • Place about 1/3 of a cup of the potato mixture onto each tortilla, roll up them up tightly, and arrange in a greased 9"x9" baking dish in two layers.
  • Pour chili-cheese mixture over burritos and put in oven. Bake 15-30 minutes, until burritos are warmed through and cheese is melted.

1 whole chicken, cut up
1 tsp vegetable oil
1 onion, chopped
2 cloves garlic, chopped
1 large bottle salsa
1 pkg small flour tortillas
1 pkg shredded cheddar cheese
1 pkg shredded pepper jack cheese
1 can light kidney beans, rinsed & drained
1 can black olives, sliced
1 container (8 oz.) sour cream

Steps:

  • Boil chicken in water until it's thoroughly cooked. Remove from water. Let cool and then shred or cut into bite size pieces. Set chicken aside. Put onion and garlic in a skillet with the vegetable oil and sauté until softened. Add the chicken and the salsa & stir to heat through. Set aside.
  • Line a large casserole dish with tortillas to cover the bottom. Top with cheese, beans, chicken mixture and more cheese. Repeat again with more tortillas, cheese, beans and chicken mixture. Top with black olive slices & additional cheese.
  • Bake at 350°F for 35 to 45 minutes or until bubbly & browned on top. Let cool for 30 minutes & serve with sour cream.

1/2 medium bell pepper, diced (I used red. It really brightens up the dish.)
1/4 cup red onion, chopped
1 tablespoon butter
1 (6 ounce) can pink salmon, drained, flaked
6 eggs
2 -3 tablespoons prepared horseradish (This will depend on your taste buds.)
3 tablespoons evaporated milk
salt
pepper
8 flour tortillas
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon cayenne
1 1/4 cups chicken stock, divided
1/4 cup evaporated milk
1/4 cup heavy whipping cream
4 teaspoons prepared mustard
1/2 teaspoon dried tarragon
1/2 cup shredded monterey jack cheese
spanish paprika

Steps:

  • Preheat oven to 375 degrees.
  • Melt 1 tablespoon butter in a heavy bottom pan. When melted add in the onions and peppers. Cook until vegetables are crisp tender; stir in salmon and cook until warm.
  • Beat together the eggs, horseradish and evaporated milk. Add to pan and as eggs began to set, gently pull cooked portion to the center and repeat process until eggs are set; season to taste with salt and pepper.
  • Warm the flour tortillas either wrapped in foil in the oven until warm or a few at a time in the microwave. Once soft and pliable, spoon a couple of spoons egg mixture slightly off center, tuck in ends and roll up burrito style. Place the filled tortillas in an oven proof dish that has been sprayed with non-stick cooking spray.
  • In a medium saucepan melt the butter and stir in flour, salt and cayenne. Cook over medium until flour begins to brown. Whisk in the 1 cup stock, cream, mustard and tarragon. Cook over medium heat until slightly thickened, 2 to 3 minutes; remove from heat and stir in shredded cheese. If sauce becomes to thick, thin with remaining 1/4 cup stock.
  • Pour the sauce over the burritos, sprinkle with Spanish paprika and place in preheated oven for 15 minutes or until heated through. Serve immediately.

Breakfast burritos are a staple for us, here's one of our favorites. To make healthier, use whole wheat flour tort. & reduced fat cheese, & turkey sausage.

2 dzn eggs
10 oz pkg. eckrich smok-y breaskfast sausage, heat & serve, diced
15 med. flour tortillas
8 oz american cheese slices, or your preference
1/2 red bell, finely chopped
1/2 sweet onion, finely diced
1 jalapeno, seeded & finely chopped
pinch coarse sea salt
1/2 tsp blk pepper

Steps:

  • 1. Add chopped veggies & sausage links to a non-stick skillet with a small amount of olive oil. Simmer till veggies are tender
  • 2. Break eggs into large bowl, mix well with a whisk. Add to veggie sausage mix. Cook over low heat stirring constantly. When eggs are just about cooked, add cheese, continuing to stir till completely done (no juice left).
  • 3. Warm tortillas in micro, place mixture in center leaving one end free of eggs. Fold up end & roll burrito up. Enjoy!

1 ounce taco seasoning
16 ounces sour cream
10 1/2 ounces condensed cream of mushroom soup (do not dilute)

  • Preheat oven to 350.
  • brown ground beef & drain excess fat.
  • mix taco seasoning into meat according to package directions.
  • in a separate pan, combine & warm soup, sour cream, & rotels.
  • Stir 2/3 of soup mixture into meat (consistency should be creamy without being runny).
