4 -6 bratwursts, cooked and cut in slices
4 cups cheddar cheese, shredded divided
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
2 cups sour cream
1 cup milk
1 cup onion, chopped
1/4 cup green pepper, chopped
1/4 cup sweet red pepper, chopped
1/4 teaspoon pepper
1/4 teaspoon salt (optional)
1 (30 ounce) package frozen hash brown potatoes, slightly thawed

Steps:

  • In a large bowl, combine brats, 2 cups cheese and the rest of the ingredients.
  • Spread into a greased shallow 9x13 baking dish. Sprinkle with remaining cheese.
  • Cover with foil and bake at 350 for 45 minutes. Uncover; bake 10-15 minutes more.

I'll admit that the combination of ingredients in this recipe is unusual, but I guarantee the flavor is fabulous!

4 medium potatoes, peeled and cut into 1/2-inch cubes
2 cups water, divided
6 fully cooked bratwurst links (1 pound), cut into 1/2-inch slices
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 cups frozen cut green beans
1 small onion, chopped
1 cup shredded cheddar cheese

Steps:

  • Place potatoes and 1 cup water in a deep skillet or large saucepan; cook for 15 minutes or until almost tender. Drain and set aside. , In the same pan, brown bratwurst; add soup, beans, onion, potatoes and remaining water. Cover and simmer for 15 minutes or until the vegetables are tender. Stir in cheese; heat until melted.

You can use bratwurst, Italian sausage, polska kielbasa, weisswurst, or even breakfast sausage for this recipe. It's a delicious way to use up those extra brats in your freezer, and tastes wonderful in the winter when grilling season seems far, far away.

1/2 cup chopped celery
1/2 cup chopped onion
2 tablespoons olive oil or 2 tablespoons vegetable oil
4 medium potatoes, peeled and sliced
3 large bratwursts, uncooked and cut up into half inch pieces
1 (16 ounce) can green beans, drained
1 (10 ounce) can cream of chicken soup
3/4 cup milk

Steps:

  • Sauté celery and onion in small amount of olive oil or vegetable oil until partially done, about 5-8 minutes. Set aside.
  • Using the same pan you used for the celery, cook the brat pieces over medium high heat until no pink remains and they are cooked through. Drain off any grease.
  • In a well buttered 2-quart casserole dish, layer potatoes, then brats, then celery and onions, then green beans.
  • Mix the milk with the soup, stir well to combine, and pour over layered ingredients in the casserole dish.
  • Bake at 375° for 1 hour 30 minutes, uncovered.
  • If desired, increase the amount of brats for a meatier meal.

It combines the flavors of classic cheesy hash brown casserole with bratwursts and sauerkraut, pretzels and beer cheese. It takes less than 10 minutes to mix and takes only one bowl. 2 cans (10-1/2 ounces each) condensed cheddar cheese soup, undiluted
1 cup beer or chicken broth
1 cup sour cream
1 package (32 ounces) frozen cubed hash brown potatoes, thawed
1 package (14 ounces) fully cooked bratwurst links, chopped
1 can (14 ounces) sauerkraut, rinsed and well drained
2 cups shredded cheddar cheese
2 cups pretzel pieces

Steps:

  • Preheat oven to 350°. In a large bowl, whisk soup, beer and sour cream until combined. Stir in potatoes, sauerkraut, cheese and chopped bratwurst. Transfer to a greased 13x9-in. baking dish. Cover and bake for 45 minutes., Uncover; bake 30 minutes. Top with pretzel pieces. Bake until bubbly and heated through, 12-15 minutes longer. Let stand 10 minutes before serving., Freeze option: Freeze cooled potato mixture in freezer containers. To use, partially thaw in refrigerator overnight.
