CHEESY BBQ MEATLOAF
My kids aren't a fan of regular meatloaf, it tasted bland they say. Soo I turned it up a notch and added BBQ sauce and cheddar cheese! No more complaints!

Steps:
- 1. Preheat the oven to 350°F
- 2. In a skillet, saute the onion until lightly browned, about 5 minutes.
- 3. In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, cheese, eggs, sauteed onion, 1/2 cup of the barbeque sauce, worcestershire sauce, salt, and pepper
- 4. Shape the mixture into a loaf and place in a large 2" deep baking pan. Spread the top of the loaf with the remaining 1/2 cup of barbeque sauce.
- 5. Bake until the loaf is firm, 60 to 75 minutes, or until done. Let the meatloaf stand in the baking dish for 10 minutes, then cut into slices to serve.
TURKEY BBQ MEATLOAF WITH CHEESY MASHED POTATOES
There's a lot going on here for just 30 minutes of prep-including a poblano chile-spiked turkey meatloaf, with BBQ sauce and cheesy mashed potatoes.

- Heat oven to 350ºF.
- Mix turkey, stuffing mix, water, onions, chiles, egg and 1/4 cup barbecue sauce just until blended; press into 12 muffin cups sprayed with cooking spray.
- Bake 25 to 30 min. or until done (165ºF), brushing with remaining barbecue sauce for the last 5 min.
- Meanwhile, cook potatoes in boiling water in large saucepan 15 min. or until tender; drain. Return potatoes to pan. Add cream cheese, butter and milk; mash until potatoes are smooth and ingredients are well blended. Stir in shredded cheese and chives.
- Serve meatloaves topped with potatoes.

CHEESY BBQ MEATLOAF CUPS
Steps:
- Preheat oven to 400°F and spray a 12-cup muffin pan with non-stick spray.
- In a large bowl, add turkey, onion, garlic, bell pepper, ¼ cup parsley, oats, and egg and stir until combined.
- Divide about ¼ cup meatloaf mix evenly among prepared muffin pan cups. Press 1 cube of VELVEETA into the center of each meatloaf muffin so it is completely covered.
- Divide ½ cup of barbecue sauce among all 12 meatloaf muffins to cover the tops of the muffins. Bake for 25 min. until golden and cooked through.
- Remove from oven. Let cool 5 min. before removing meatloaf cups from pan. Serve topped with remaining barbecue sauce and parsley.

- Mix together the meat, crushed crackers salsa and egg. Cut the mixture into two parts. I generally make one part a little bit bigger then the second.
- Take the larger section and form it into a loaf, flatten the top and create a ridge around edge. Fill the hole you created with the shredded cheese. Take the remaining meat mixture and cover the cheese, pinching together the edges of the meat to keep the cheese inside. press down the center of the loaf to flat it out a bit.
- Cook for 50 minutes at 350 degrees. Take the loaf out and poor the sauce on top and cook for another 10 minutes.
CHEESY HAM & BACON-STUFFED BBQ MEATLOAF

- Mix ground beef, cracker crumbs, eggs, onions, garlic, pepper and 1/4 cup barbecue sauce just until blended.
- Pat meat mixture into 11x8-1/2-inch rectangle on sheet of waxed pepper; top with cheese, ham and bacon, spreading ingredients to within 1-1/2 inches of edges. Roll up tightly, starting at one short side and pulling away waxed paper as meat is rolled. Place, seam side down, on foil-covered rimmed baking sheet.
- Bake 48 to 50 min. or until done (160ºF), brushing with remaining barbecue sauce after 40 min. Remove from oven. Let stand 5 min. before slicing to serve.
