BBQ Baked Beans Bruschetta with Cilantro Pesto on Cheesy Texas Cut Toast image

1 cup adzuki beans, soaked in water 24 hours
1 tablespoon vegetable oil
3 cloves garlic, chopped
1/2 large white onion, diced
1 1/2 cups crushed canned tomatoes
1/2 cup red wine vinegar
2 tablespoons chipotle adobo sauce
2 tablespoons honey
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
Juice of 1/2 lemon
Kosher salt and cracked black pepper
1 French baguette, cut into 1/2-inch-thick long diagonal slices (8 to 10 slices)
3/4 cup aged Cheddar, shredded
Sea salt, such as Maldon
Cilantro Pesto, for serving, recipe follows
2 cups loosely packed fresh cilantro
1 cup loosely packed fresh flat-leaf parsley
3/4 cup extra-virgin olive oil

Steps:

  • Pour the beans into a sauce pot and cover with 4 cups water. Bring to a boil over medium heat and then reduce the heat slightly and simmer until tender, about 45 minutes.
  • Preheat the oven or grill to 350 degrees F.
  • Preheat another sauce pot over medium heat and add the oil, garlic and onions. Cook the onions and garlic, without browning, until translucent. Stir in the tomatoes, vinegar, chipotle sauce, honey, coriander and cumin and simmer over low heat, about 30 minutes. Add the lemon juice and season with kosher salt and black pepper.
  • Once the beans are nearly fully tender, drain and add to the BBQ sauce. Bake or grill uncovered over direct heat until fully cooked, stirring frequently to prevent burning, about 45 minutes.
  • Preheat the grill to medium-high heat.
  • Place the cheese between baguette slices and season the top slices with sea salt. Brush the outsides with Cilantro Pesto and grill, covered, 1 minute per side. Plate the cheesy toast and top with the warm baked beans. Drizzle with a line of Cilantro Pesto and finish with more sea salt. Serve immediately.
  • Puree the cilantro, parsley and olive oil in a food processor until fairly smooth. Season with sea salt, cover and refrigerate.

2 cups shredded cooked chicken
8 KRAFT Singles
1 medium tomato, chopped
2 Tbsp. seasoned dry bread crumbs
1 Tbsp. butter or margarine, melted

Steps:

  • Preheat oven to 350°F. Mix beans and chicken. Spread half the bean mixture into 8-inch square baking dish; cover with 4 of the Singles. Repeat layers. Top with tomatoes.
  • Mix bread crumbs and butter; sprinkle over tomatoes.
  • Bake 20 min. or until heated through.

5 corn tortillas (6 inch)

Steps:

  • Heat oven to 425ºF.
  • Spread chili onto bottom of 8-inch square baking dish.
  • Place 1 wiener on each tortilla; roll up. Place, seam sides down, over chili. Sprinkle with cheese; cover.

Being a Kiwi my favourte baked beans are Watties! Cabanossi can be used instead of salami. For anyone that doesn't know Cabanossi is a type of dry sausage, similar to a very mild salami. It is made from pork and beef, lightly seasoned and then smoked. It is commonly cut into bite sized chunks and eaten cold as an appetiser or snack, often with cubes of cheese and crackers. Sliced cabanossi is also a popular pizza topping.

4 large potatoes, scrubbed
1/4 cup salami, finely chopped
1/4 cup tasty cheese, grated
2 teaspoons fresh chives
220 g baked beans

Steps:

  • Preheat oven to 180°C.
  • Line a baking tray with baking paper.
  • Pierce potatoes in several places with a skewer.
  • Arrange on turntable of microwave oven and cook on high for 12-14 minutes or until tender.
  • Meanwhile in a small bowl combine salami, cheese and chives.
  • Cut a small slice off base of each potato to allow them to sit flat.
  • Using a teaspoon, scoop out about 1cm of potato centre.
  • Chop excess potato and mix with salami mixture.
  • Place potatoes on prepared tray and spoon an even amount of baked beans into each potato.
  • Divide salami mixture between potatoes.
  • Bake for 10-15 minutes until topping is crispy.
