After making little bacon-wrapped sausages for years, I needed a change! I had an extra sweet potato and half a package of bacon on hand, so I put on my thinking cap and came up with this treat. -Kelly Williams, Forked River, New Jersey

2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
2 large sweet potatoes (about 1-3/4 pounds), peeled and cut into 1-inch cubes
1 pound bacon strips, halved
1/4 cup packed brown sugar
Maple syrup, warmed

Steps:

  • Preheat oven to 350°. In a large bowl, mix butter and seasonings. Add sweet potatoes and toss to coat., Wrap 1 piece bacon around each sweet potato cube; secure with a toothpick. Sprinkle with brown sugar. Place on a parchment-lined 15x10x1-in. baking pan., Bake until bacon is crisp and sweet potato is tender, 40-45 minutes. Serve with maple syrup.

This is a quick and easy recipe for your holiday appetizer tray. This recipe idea is from Monty's Restaurant. You can use any bacon and any cheese of choice.

1 pkg alexa's waffle sweet potato fries
2 c finely shredded cheddar cheese or your favorite
5 slice or more of bacon, fried and diced, or use real bacon bits
dipping: your favorite bbq sauce or sour cream for dipping

Steps:

  • 1. Heat oven to 400^. Place frozen fries on a foil lined baking pan in a single layer and bake for 15 minutes. Remove from oven and sprinkle 1/2 the cheese on each one the sprinkle on the bacon and then remaining cheese.
  • 2. Return to oven and bake for an additional 10 to 15 minutes. Watching so they do not over bake- just melt cheese well. Remove from oven and serve immediately.(I like these reheated too-except there's usually none left). Use your favorite sauce for dipping.

I've been making this for years, but just decided to share it now. I do the same with pumpkin or mashed potato or a mix of any of the 3. Leftovers of these work well too, though you would need to allow a little extra cooking time to allow them to reheat through. Cooking time includes the approximate time needed to boil the sweet potato.

1 kg sweet potato, peeled,cut into chunks
1/4 cup sour cream
salt and pepper
1/8 teaspoon nutmeg
2 eggs
1/2 cup cream
salt and pepper
1 cup grated cheddar cheese
2 slices bacon, diced

Steps:

  • Boil the sweet potato until tender.
  • Drain, mash with the sour cream, season with the salt, pepper and nutmeg.
  • Place in a casserole dish (about 9 inches by 9inches), smooth out.
  • Mix together the eggs, cream and salt and pepper to taste.
  • Pour this gently over the mash, tilting the dish to get a good even coverage.
  • Sprinkle over the grated cheese, then the diced bacon.
  • Place in a 190c (350f) oven and bake until the top is golden and the egg mixture is set-about 30 minutes.
