CHEESEY POTATO & HOT SAUSAGE BREAKFEST #SP5
Official Contest Entry: Simply Potatoes 5Fix. I made this one morning camping, I usually make fried potatoes & eggs for everyone, but now I use Simply Potatoes, So much easier Plus you can use the different brands they sell. my favorite is southwest style. no chopping Onions, red, & green bell peppers up :-) I use hot sausage links cooked and browned ahead of time. usually the day before, I slice them like a 1/2 to 3/4 inch thick and save in fridge for the morning.

Steps:
- In a 12" skillet add sausage links, poke holes in the links with a fork or toothpick to release some grease, add 2 cups of water and cook on medium heat turning often until water is gone, about 20 minutes. continue cooking & turning until the links are browned on all sides, remove from pan & slice the links 3/4" inch and save for next step.
- In a 12" Skillet or dutch oven, heat 2 Tbls of oil on Medium heat.
- Add Potatoes and the Pre-cooked, & browned, Hot sausage slices.
- Mix well, flatten,add salt &pepper and cook on medium heat for about 8 minutes.
- add 1 tbls of oil drizzled around on top of potatoes and turn with spatula.
- cook for another 8 minutes or until potatoes are soft and browning.
- turn them again if you want to brown them more. for a few minutes.
- Reduce heat to medium-low. Add eggs. Cook for 3 to 4 minutes, stirring occasionally, until eggs are set.
- Top with Cheese, turn off heat and cover with a lid or foil for a minute or 2.
- so the cheese melts some.
- serve with a cup of OJ and Toast.
CHEESY SAUSAGE AND POTATO BREAKFAST CASSEROLE
A delicious crowd-pleaser for brunch. Can also be made the night before and refrigerated, then baked in the morning.

- Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C). Spray a casserole dish or 9x13-inch pan with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes. Transfer onion to the bowl with the cooked sausage.
- Mix eggs, half the Cheddar cheese, milk, salt, and pepper into the bowl with the sausage mixture.
- Grate potatoes and add to the bowl of sausage mixture. Pour mixture into the prepared dish; place remaining Cheddar cheese on top.
- Bake in the preheated oven until casserole is heated through and cheese is melted and bubbly, about 35 minutes.

Official Contest Entry: Simply Potatoes 5Fix. Roasted red skin potatoes topped with smoked chicken sausage, melted colby jack cheese and scallions. I was cooking potatoes and smoked sausage and thought, "I wonder how this would taste together with cheese on top." And then I added scallions and I have been eating this dish every since.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl combine potato wedges and 2 tbsp olive oil, toss to coat.
- Place potatoes on a large sheet pan.
- Bake for 20 minutes, turning each wedge over after 10 minutes.
- Heat a large skillet over medium high heat.
- Add 2 tbsp olive oil to coat bottom of skillet.
- Add sausage slices.
- Cook on each side for 5 minutes.
- Drain on paper towels.
- Remove potatoes from oven and place on serving dishes.
- Top with grated cheese and scallions.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce the heat; simmer, uncovered, until tender, 8-10 minutes. Meanwhile, crumble sausage into a large skillet; add onion. Cook over medium heat until meat is no longer pink; drain if necessary. , Drain potatoes; arrange in an ungreased 13x9-in. baking dish. Drizzle with butter. Add the sausage mixture and stir gently.
