PHILLY CHEESE STEAK PASTA
This pasta is a very delicious take on my favorite sandwich, the Philly cheese steak.

Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Meanwhile, heat 2 tablespoons olive oil in a skillet over medium-high heat. Saute pepper, onion, and garlic for 3 minutes. Add steak and Italian seasoning. Saute until steak begins to firm and is hot and slightly pink in the center, 7 to 10 minutes more. Add remaining olive oil. Drain penne and mix into the skillet.
- Melt butter in a saucepan over low heat. Whisk in flour; continue cooking and stirring until a paste forms, about 2 minutes. Add evaporated milk and garlic, stirring constantly until sauce is homogenous. Add Cheddar cheese and Gouda cheese by handfuls; continue stirring until completely melted, about 5 minutes. Remove sauce from heat and drizzle over the pasta.

AMBER'S PHILLY CHEESE STEAK PASTA
What happens when you have no bread in your house but really want a cheese steak? You improvise, of course!

Steps:
- 1. In a large skillet, saute the onions and peppers in the olive oil over med-high heat, until the onion starts to soften.
- 2. Break up the whole box of sandwich steaks into the onions and peppers.
- 3. Add the garlic, salt and pepper and red pepper to the mix.
- 4. cook the meat mixture until it is no longer pink. a little browning on the meat is fine.
- 5. Set meat mixture aside.
- 6. Begin to cook pasta according to package directions.
- 7. while pasta is cooking, start on the cheese sauce.
- 8. Combine the milk and cheese into a microwave safe bowl.
- 9. microwave on high in 1 minute intervals, stirring after each minute, until cheese is melted.
- 10. Once pasta is done cooking, drain and toss meat mixture and cheese with pasta.
- Feel free to use variations of cheese, onions and peppers! it's really just an idea to play with!

CHICKEN CHEESE STEAK PASTA
Steps:
- Place pasta in boiling water and cook til done. (partially drain & keep warm if needed) Coat a non-stick frying pan with olive oil and heat to medium high. Add chicken breast slices, peppers & onions and cook until not quite done, stirring often. Add mozzerella cheese, Italian seasoning, 1/2 the chopped garlic, salt & pepper to taste. Reduce heat to low, cover and cook til chicken is done & cheese melted. Drain pasta & return to pot on low heat and coat well with olive oil, add garlic & parmesan cheese. Salt & pepper to taste. Mix thoroughly. Place 1/4 of pasta on 4 dinner plates and top with Chicken Cheese Steak mixture.

I got the inspiration for this recipe from another recipe here, but I ended up changing so many things, it turned into a different dish. My kids loved this.

Steps:
- Start with putting the water on for cooking the pasta and pre-heat the oven to 350 degrees.
- Chop the peppers and onion.
- Saute the green pepper in the olive oil for 3 minutes, add the onion and saute for another 3 minutes (add the optional mushrooms here and cook additional 1-2 minutes) or until soft.
- Put the pasta on to cook if water is boiling.
- Add the ground beef to the peppers and onions and continue cooking until it's not pink. Add some salt and pepper to this mixture to taste. (I added 1/2 tsp ea.).
- Drain the pasta and put in a greased casserole.
- Add the soup and sour cream to the pasta and combine.
- Add the hamburger mix and the cheddar cheese, reserving 1/2 c for the top, and combine thoroughly. Sprinkle the reserved cheese on the top.
- Bake for 20 minutes.

- Put a large pot of water on the stove to bring to a boil for pasta.
- Preheat broiler to high with rack on top shelf.
- Preheat medium skillet over medium-high heat.
- Add chopped bacon and cook until crisp.
- Salt water for pasta and add spaghetti to the pot.
- Cook to al dente, with a bite to it.
- Season the steaks with salt and pepper on both sides and arrange on slotted broiler pan.
- Remove bacon to paper towel lined plate with a slotted spoon and drain off most of the fat, return pan to heat and reduce heat to medium.
- Add extra-virgin olive oil, 2 turns of the pan and 1 tablespoon butter.
- When butter melts into extra-virgin olive oil, add in 2 cloves garlic and the shallots, sauté for 3 minutes.
- Arrange steaks on the broiler pan.
- Place under broiler - leave door to oven cracked ajar to limit flare ups and smoke.
- Cook 4 minutes on each side for medium rare, up to 5 to 6 minutes on each side for medium well doneness.
- To the garlic and shallots, add in flour and cook a minute more.
- Whisk in stock, bring to a bubble, about 30 seconds then stir in the cream.
- When cream comes to a bubble, add in blue cheese and sage and a few grinds of black pepper.
- Stir until cheese melts.
- Reduce heat to lowest setting.
- Soften 4 tablespoons butter in microwave on high for 15 seconds.
- Mix in chives and 2 cloves minced garlic and reserve.
- Remove steaks from oven and let rest 5 minutes.
- Place 1/4 of the chive and garlic butter mixture on each steak to melt down over the meat as they rest.
- Drain pasta and toss with sauce to coat and combine evenly.
- Taste to adjust seasoning.
- Serve steaks with pasta alongside.
- Scatter the arugula and bacon bits across the top of the pasta.
